MEXICAN-INSPIRED TURKEY BURGERS
We love burgers on the grill, but turkey burgers can be bland and beef burgers can be fatty. To create these burgers, I used a spice combination from a taco recipe and then tinkered with cheeses and different toppings. -Heather Byers, Pittsburgh, Pennsylvania

- In a large bowl, combine 1/4 cup salsa, cheese, paprika, oregano, cumin, sugar, garlic powder, thyme, salt and cayenne. Crumble turkey over mixture and mix well. Shape into four burgers., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 165° and juices run clear., In a small bowl, combine sour cream and remaining salsa. Place burgers on buns; top with endive, tomato and sour cream mixture.

A very tasty burger sure to please any red meat fan. If you're looking for a healthier yet still yummy burger give it a try. I find using the 85/15 ground turkey makes the best burger.

Steps:
- Mix together (by hand is the best way) ground turkey, cumin, onion, garlic, cilantro, hot sauce, salt & pepper.
- Form into 4 patties.
- Heat olive oil in skillet on medium heat.
- Add patties to skillet & cook 10-15 minutes on each side or until done.
- Place cheese slices on patties, keep on skillet until melted.
- Then place on bun & add whatever condiments desired.

- Mix ground turkey and refried beans until combined.
- Add remaining ingredients and mix together. Shape into four equal sized burgers. Cover and let chill 1 hour.
- Grill, broil or fry for 5-6 minutes per side until thoroughly cooked.
- Serve on corn tortilla with guacamole, cheddar cheese, and salsa.

Steps:
- Preheat oven to 450 degrees F (230 degrees C). Coat a medium baking dish with cooking spray.
- Heat the olive oil in a skillet over medium heat, and saute the onion, green pepper, and garlic 5 minutes. Remove from heat, and cool slightly.
- In a small bowl, mix the salsa and 1/2 the corn. In a large bowl, mix the onion mixture with the turkey, taco seasoning, and 2 tablespoons of the salsa mixture. Divide into 6 patties, and press into the breadcrumbs to lightly coat on all sides. Arrange coated patties in the prepared baking dish.
- Bake the patties 10 minutes in the preheated oven. Drain any liquid from the dish, turn patties, and spread with the remaining salsa mixture. Continue baking 10 minutes, to an internal temperature of 165 degrees F (75 degrees C).
- Warm the tortillas in the microwave, about 30 seconds on High. Wrap the cooked turkey patties in the warmed tortillas with sour cream and lettuce. Sprinkle with remaining corn to serve.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
