MEXICAN TORTILLA PIZZAS WITH CHORIZO
Steps:
- Preheat the oven to 400 degrees F. Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add the chorizo and cook, stirring occasionally, until browned, about 4 minutes. Remove the chorizo to a plate with a slotted spoon. Transfer all but 1 tablespoon of the drippings to a small bowl; stir the remaining 1 tablespoon olive oil into the bowl (reserve the skillet). Divide the tortillas between 2 baking sheets and brush the tops with the drippings mixture. Bake until the tortillas are crisp and lightly golden, about 5 minutes.
- Heat the skillet with the reserved 1 tablespoon drippings over medium-high heat. Add the refried beans and cook, stirring, until warm and spreadable, about 2 minutes. Spread the beans over the tortillas and sprinkle with the chorizo and cheese. Bake until the cheese melts, about 5 minutes.
- Meanwhile, combine the lettuce, cilantro, radishes, jalapeño and lime juice in a large bowl; season with salt and toss. Top each tortilla with the salad, avocado and crema.

Steps:
- Prepare taco meat per package directions.
- Warm refried beans.
- Prepare a small amount of oil in pan to 375°F (do not put so much that it will cover the flour tortillas).
- Cook flour tortilla's at 375°F for 30-45 seconds or until just golden brown.
- Drain on paper towels.
- Top on tortilla with a thin layer of refried beans.
- Then top beans with a layer of taco meat.
- Put another tortilla on top of the taco meat.
- Put red sauce on top of the tortilla.
- Put a few diced tomatoes and green chiles on top of red sauce.
- Top with the Mexican blend cheese.
- Finally top with a few chopped green onions.
- Put finished Mexican pizzas on cookie sheet and broil in oven until cheese is melted.
- Cut into fourths and serve.

- Heat the refried beans.
- In a large skillet, brown the ground beef. Stir in the seasoning packet.
- Preheat oven to 350 degrees F (175 degrees C).
- Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.
- Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
- Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.

- turn the oven to 350 F, Get the flour tortilla and place it on a cookie sheet than get the 1/2 jar of pizza sauce and spread it over the tortilla evenly, when that is done get the shredded cheese of your choice and sprinkle that all over the tortilla, get the pieces of pepperoni and spread on to the tortilla, place the pan into the oven and cook for 5-7 minutes or until the cheese is melted and the edges of the pizza is crusty but you don't want it to crusty. remove from oven and get a large place and place the tortilla on the plate -- and serve.

I make this often when entertaining guests and it always goes fast. You can make any sort of topping variations. The one below is the classic way I usually prepare it. - Preheat oven to 350F.
- Heat a medium non stick skillet over medium heat. Add the ground beef and use a wooden spoon to crumble while it cooks. When almost done, add the taco seasoning and water, stirring to combine. Cook for 8-10 minutes or until beef reaches an internal temperature of 160F. Transfer beef to a paper towel lined plate and set aside. Wipe out skillet to clean.
- Return skillet to medium high heat and add the oil. Cook the tortillas in batches, flipping frequently to avoid burning (I used tongs to flip). Once browned to your liking and crisp, set aside. We like ours extra crispy, but feel free to make them as light or dark as your family likes.
- Heat the refried beans until just soft and spreadable in a microwave safe bowl.
- Place four tortillas on a baking sheet sprayed with nonstick spray.
- Spread a thin layer of refried beans onto each tortilla. Top each with 1-2 tablespoons beef.
- Top each with another tortilla, making layers.
- On each top layer, add 1 tablespoon enchilada sauce, tomatoes, and sprinkle generously with cheese, Finally, top with green onions to taste.
- Bake for 6-7 minutes or until cheese is fully melted and bubbly. Cut and serve. Enjoy!
