1 lb lean (at least 80%) ground beef
1 cup diced red bell pepper (1 large)
1 cup diced onion
1 package (1 oz) Old El Paso™ taco seasoning mix
1/4 cup water
1/4 cup milk
1 egg
2 cups shredded 4-cheese Mexican cheese blend (8 oz)
4 cups frozen Tater Tots™ potatoes (from 32-oz bag)
Fresh toppings: diced tomatoes, guacamole, sour cream, cilantro

Steps:

  • Heat oven to 400°F. Spray 9-inch pie plate with cooking spray.
  • In 12-inch nonstick skillet, cook beef, bell pepper and onion over medium-high heat 8 to 10 minutes or until beef is browned and vegetables are softened; drain. Wipe out skillet. Return beef mixture to pan; add taco seasoning mix and water. Cook and stir over medium-high heat 1 to 2 minutes or until well mixed. Remove from heat. Cool 2 minutes.
  • Meanwhile, in large bowl, mix milk and egg. Stir in cheese. Stir beef mixture into egg mixture, then pour into pie plate. Spread evenly.
  • Top beef mixture with Tater Tots™. Bake 37 to 39 minutes or until mixture is set and Tater Tots™ are browned. Cool 10 minutes. Top with fresh toppings, as desired.

Just what the grandkids ordered. Tater tots, Mexican food, and cheese! This is one of those meals that you can throw together with ingredients you would normally have on hand. Great for pot luck or a quick meal for unexpected company. Some kids don't like onion or garlic; these can be omitted.

1 pound ground beef
1 small onion, diced
1 clove garlic, minced
1 (1 ounce) packet taco seasoning mix
1 (16 ounce) bag frozen Mexican-style corn
1 (12 ounce) can black beans, rinsed and drained
1 (12 ounce) bag shredded Mexican cheese blend
1 (16 ounce) package frozen tater tots
1 (12 fluid ounce) can enchilada sauce

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Prepare a 9x13-inch baking dish with cooking spray.
  • Cook the ground beef in a skillet over medium heat until completely browned, 5 to 7 minutes. Add the onion, garlic, taco seasoning mix, frozen Mexican-style corn, and black beans to the ground beef; cook and stir another 10 minutes. Set aside to cool slightly.
  • Combine the ground beef mixture in a large bowl with about 3/4 of the Mexican cheese blend and the tater tots; stir to combine.
  • Pour about 1/3 of the enchilada sauce into the bottom of the prepared baking dish. Add the tater tot mixture to the baking dish; lightly pat the mixture down into a solid, even layer. Pour the remaining enchilada sauce over the tater tot layer.
  • Bake in the preheated oven for 40 minutes. Sprinkle the remaining Mexican cheese over the casserole and return to oven until the cheese is melted and bubbly, about 5 minutes more.

1 lb. 85/15 ground beef
1 onion, diced ( about ¼ cup)
1 packet taco seasoning mix (1 oz.)
1 can green chiles (4 oz.)
1 can black beans ( 15.5 oz.) rinsed and drained
1 bag frozen corn (14.4 oz.)
1 can red enchilada sauce (10 oz.)
3 cups shredded cheddar & Monterey jack cheese (off the block), divided
4 cups frozen tater tots
Cilantro, optional garnish
Sour cream, optional

Steps:

  • Preheat oven to 375 degrees. Spray a 9 by 13 inch baking dish (I used this one) with non-stick cooking spray.
  • Add the ground beef and the onion to a 12-inch skillet, brown meat until thoroughly cooked. Drain off excess fat and return to skillet. Add the seasoning packet, green chiles, black beans, frozen corn and the enchilada sauce to the meat and onion, stir until combined. Over medium heat cook another 8 to 10 minutes. Add 2 cups of shredded cheese to the meat mixture and stir until blended. Pour into the baking dish and spread evenly. Place the tater tots evenly over top. Bake for 35 to 40 minutes.
  • Remove from oven, add the remaining cup of cheese over the top. Bake another 5 minutes or until cheese is melted. Garnish with cilantro and top with sour cream!

2 teaspoons vegetable oil, or as needed
1 (15.25 ounce) can whole kernel corn, drained
1 (4.5 ounce) can sliced mushrooms, drained
1 cup diced green bell pepper
½ cup mild salsa
½ large tomato, diced
3 tablespoons mild nacho cheese sauce
1 pound ground beef
¼ cup mild taco sauce
1 (16 ounce) package frozen bite-sized potato nuggets (such as Tater Tots®)
1 cup shredded Mexican cheese blend

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a 9x13-inch casserole dish.
  • Mix corn, mushrooms, green bell pepper, salsa, tomato, and nacho cheese sauce together in a bowl. Layer mixture over the bottom of the prepared dish. Mix ground beef and taco sauce together in a separate bowl; add to the corn mixture in the dish and stir together. Layer potato puffs on top of casserole. Top with shredded Mexican cheese blend.
  • Bake in the preheated oven until beef is no longer pink, about 25 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Broil casserole until top is golden brown, about 5 minutes.

This Mexican Tater Tot Casserole is a quick and simple dinner that is filling as well. A taco flavored casserole is packed with ground beef, corn, and beans with enchilada sauce. The whole thing is topped with crispy tater tots and melted cheese. This is a family favorite casserole that your family will love.

32- ounce bag frozen tater tots
1 tablespoon olive oil
1 small onion (peeled and diced)
2 cloves garlic (peeled and minced)
1- pound lean ground beef
1- ounce package taco seasoning
¼ cup water
15 ounce can black beans (drained and rinsed)
12 ounces frozen corn (no need to thaw)
4 ounce can diced green chiles
10 ounce can red enchilada sauce
3 cups shredded cheddar or Mexican blend cheese (divided)
Toppings: sour cream (sliced avocado, chopped tomato, cilantro, salsa, peppers, chopped black olives, etc.)

Steps:

  • Preheat oven to 400F.
  • Spread the tater tots out in a single layer on a large baking sheet. Bake at 400F for 15 minutes.
  • While the tater tots are baking, heat the olive oil in a large skillet over medium heat. Add the onions and sauté until softened, about 3-4 minutes. Add the garlic and sauté for 1 minute. Do not allow the garlic to brown.
  • Crumble the ground beef into the skillet and sauté, stirring often, until completely browned. Drain off excess fat. Add the taco seasoning and water to the meat and stir well. Simmer over medium heat for 1-2 minutes, then remove from the heat.
  • In a large mixing bowl, combine the ground beef mixture, black beans, corn, green chiles, and enchilada sauce. Add 2 cups of the shredded cheese and stir well.
  • Grease a 9x13 inch glass baking dish with non-stick cooking spray. Pour the enchilada filling mixture into the dish. Arrange the tater tots over the top in a single layer. Top the casserole with the remaining 1 cup of shredded cheese.
  • Reduce the oven heat to 375F. Bake the casserole uncovered for 30 minutes or until the cheese is melted and the casserole is bubbling around the edges.
  • Cool the casserole slightly, then serve with the toppings of your choice.

1 tsp garlic salt
1 tsp pepper
15 oz can green enchilada sauce
15 oz can black beans, (drained, rinsed)
10 oz can Rotel®
4 oz can diced green chiles
8 oz sour cream
2 cups Monterey Jack cheese, (shredded)
2 cups Sharp Cheddar, (shredded)
32 oz bag tater tots

Steps:

  • Preheat oven to 425° and lightly spray a 13 x 9 baking pan with cooking spray. Set aside.
  • Using a large cast iron pan or large skillet, add ground beef, onions, garlic, seasonings and pepper.
  • Cook over medium heat until ground beef is no longer pink and onions are translucent. Drain and return to pan.
  • Pour enchilada sauce, black beans, Rotel, green chiles and sour cream into ground beef mixture, stir.
  • Add mixture to baking dish, sprinkle both types of shredded cheese over mixture and neatly layer tater tots on top of cheese.
  • Bake uncovered for approximately 45 minutes or until tater tots are golden brown and mixture is heated thoroughly.
  • Carefully remove from oven and enjoy.

Steps:

  • Heat a large skillet over medium heat. Add onions, peppers and ground beef. Cook until beef is no longer pink and onions and peppers are softened, about 7 to 8 minutes. Stir in taco seasoning.
  • Preheat oven to 400F. Grease a large casserole dish with cooking spray. Spread the beef mixture on the bottom evenly. Pour queso on top and spread to cover beef mixture. Cover with Tater Tots. Bake for 40 minutes. Remove from oven and sprinkle with cheddar cheese. Bake an additional 5 minutes, or until cheese is melted. Serve hot.

¾ teaspoon garlic powder
½ teaspoon salt
½ teaspoon onion powder
1 teaspoon ground cumin
½ teaspoon smoked paprika
¾ teaspoon dried oregano
⅛-1/4 teaspoon cayenne pepper (optional)
1 ½ tablespoon olive oil
½ large white or yellow onion, diced
1 large sweet pepper (red, orange, or yellow), seeded and diced
1 pound ground turkey, preferably 90-93% lean
1 cup salsa
1, 15 oz. can of black beans or pinto beans, drained and rinsed
2 cups reduced-fat shredded Mexican cheese blend
2 ½ cups frozen tater tots
Toppings: sour cream, extra cheese, cilantro, black olives, shredded lettuce, tomatoes, etc.

Steps:

  • Start by preheating your oven to 425 degrees Fahrenheit.
  • Combine chili powder, garlic powder, salt, onion powder, cumin, paprika, oregano, and cayenne pepper in a small bowl.
  • Use a 12" cast iron or other non-stick skillets to heat the olive oil over medium or medium-high heat, or until the oil sputters when flicked with water.
  • Saute the onion and sweet pepper in the skillet for 4 minutes, stirring every 30 seconds or so, or until the onions are translucent and the peppers are softening.
  • Add the ground turkey and seasonings to the onions and peppers and cook for 4-5 minutes, stirring and breaking up the turkey as it cooks, until it is crisp and cooked through, and the mixture is fragrant.
  • Stir in the salsa and drained beans to the turkey mixture. Bring the ingredients to a boil and cook for 5-7 minutes, stirring every 1-2 minutes, or until the liquid has evaporated and the mixture has thickened.
  • Then, remove the pan from heat. If you're using a cast-iron skillet, sprinkle the cheese evenly over the turkey, followed by the tater tots evenly spaced (about 1" between each). If using a non-stick or non-oven safe skillet, pour the turkey into a greased 8 x 13" baking dish and top with cheese. Pipe the tater tots on top and sprinkle with cheese.
  • Bake the Pioneer Woman Tater Tot Casserole for 22-25 minutes, or until the cheese has melted and the tater tots are crispy.
  • Remove from the oven and serve hot with taco toppings of your choice!

Place the cauliflower tater tots on top and push them about half way down into the beef and cheese. Bake in the oven for 30 minutes, add the remaining ½ cup of cheese, and bake for 7-10 minutes more. Allow to cool for 20 minutes so the casserole does not fall apart, top with toppings and enjoy!
