TATER TOT TACO CASSEROLE

Tater Tot Taco Casserole image

Just what the grandkids ordered. Tater tots, Mexican food, and cheese! This is one of those meals that you can throw together with ingredients you would normally have on hand. Great for pot luck or a quick meal for unexpected company. Some kids don't like onion or garlic; these can be omitted.

Provided by Mama Smith

Categories     World Cuisine Recipes     Latin American     Mexican

Time 1h15m

Yield 8

Number Of Ingredients 9

1 pound ground beef
1 small onion, diced
1 clove garlic, minced
1 (1 ounce) packet taco seasoning mix
1 (16 ounce) bag frozen Mexican-style corn
1 (12 ounce) can black beans, rinsed and drained
1 (12 ounce) bag shredded Mexican cheese blend
1 (16 ounce) package frozen tater tots
1 (12 fluid ounce) can enchilada sauce

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Prepare a 9x13-inch baking dish with cooking spray.
  • Cook the ground beef in a skillet over medium heat until completely browned, 5 to 7 minutes. Add the onion, garlic, taco seasoning mix, frozen Mexican-style corn, and black beans to the ground beef; cook and stir another 10 minutes. Set aside to cool slightly.
  • Combine the ground beef mixture in a large bowl with about 3/4 of the Mexican cheese blend and the tater tots; stir to combine.
  • Pour about 1/3 of the enchilada sauce into the bottom of the prepared baking dish. Add the tater tot mixture to the baking dish; lightly pat the mixture down into a solid, even layer. Pour the remaining enchilada sauce over the tater tot layer.
  • Bake in the preheated oven for 40 minutes. Sprinkle the remaining Mexican cheese over the casserole and return to oven until the cheese is melted and bubbly, about 5 minutes more.

PIONEER WOMAN TATER TOT CASSEROLE

Pioneer Woman Tater Tot Casserole image

Tot Casserole Recipe is low on fuss and clean-up. Add it to your menu this week!

Provided by Mohamed Shili

Categories     American Cuisine     Dinner     Pioneer Woman     World Cuisine

Time 50m

Number Of Ingredients 17

1 ½ teaspoon chili powder
¾ teaspoon garlic powder
½ teaspoon salt
½ teaspoon onion powder
1 teaspoon ground cumin
½ teaspoon smoked paprika
¾ teaspoon dried oregano
⅛-1/4 teaspoon cayenne pepper (optional)
1 ½ tablespoon olive oil
½ large white or yellow onion, diced
1 large sweet pepper (red, orange, or yellow), seeded and diced
1 pound ground turkey, preferably 90-93% lean
1 cup salsa
1, 15 oz. can of black beans or pinto beans, drained and rinsed
2 cups reduced-fat shredded Mexican cheese blend
2 ½ cups frozen tater tots
Toppings: sour cream, extra cheese, cilantro, black olives, shredded lettuce, tomatoes, etc.

Steps:

  • Start by preheating your oven to 425 degrees Fahrenheit.
  • Combine chili powder, garlic powder, salt, onion powder, cumin, paprika, oregano, and cayenne pepper in a small bowl.
  • Use a 12" cast iron or other non-stick skillets to heat the olive oil over medium or medium-high heat, or until the oil sputters when flicked with water.
  • Saute the onion and sweet pepper in the skillet for 4 minutes, stirring every 30 seconds or so, or until the onions are translucent and the peppers are softening.
  • Add the ground turkey and seasonings to the onions and peppers and cook for 4-5 minutes, stirring and breaking up the turkey as it cooks, until it is crisp and cooked through, and the mixture is fragrant.
  • Stir in the salsa and drained beans to the turkey mixture. Bring the ingredients to a boil and cook for 5-7 minutes, stirring every 1-2 minutes, or until the liquid has evaporated and the mixture has thickened.
  • Then, remove the pan from heat. If you're using a cast-iron skillet, sprinkle the cheese evenly over the turkey, followed by the tater tots evenly spaced (about 1" between each). If using a non-stick or non-oven safe skillet, pour the turkey into a greased 8 x 13" baking dish and top with cheese. Pipe the tater tots on top and sprinkle with cheese.
  • Bake the Pioneer Woman Tater Tot Casserole for 22-25 minutes, or until the cheese has melted and the tater tots are crispy.
  • Remove from the oven and serve hot with taco toppings of your choice!

  • Preheat oven to 350 F and pre-heat a large non-stick pan just below medium-high heat. Add 1 tablespoon of oil along with the onions, poblano peppers, ¼ teaspoon salt, and a few cracks of pepper. Cook for 7 minutes. Meanwhile, make the taco seasoning mix by adding all the ingredients to a small bowl and mix well, and set aside. After 7 minutes, add the garlic and cook for 3 minutes. Add the ground beef along with ½ teaspoon of salt and raise the heat to medium-high. Break up the ground beef into small pieces and cook until the beef is halfway cooked. Add 2 tablespoons of taco seasoning mix, stir well, and cook just until the beef is cooked thorough. Add the beef stock and enchilada sauce, bring to a simmer, and cook for 10 minutes or until the mixture has thickened up and is not runny. Check for seasoning, you may need more salt.
  • Pour the beef mixture into an 8x10 baking dish, or something close to that and top with 1.5 cups of the shredded cheese. Place the cauliflower tater tots on top and push them about half way down into the beef and cheese. Bake in the oven for 30 minutes, add the remaining ½ cup of cheese, and bake for 7-10 minutes more. Allow to cool for 20 minutes so the casserole does not fall apart, top with toppings and enjoy!
