1 pound lean ground beef (90% lean)
1 can (14-1/2 ounces) diced tomatoes and green chiles, undrained
1 envelope (5.4 ounces) Mexican-style rice and pasta mix
1-1/2 cups water
8 medium sweet peppers
2 cups shredded Mexican cheese blend, divided

Steps:

  • Preheat oven to 375°. In a large skillet, cook and crumble beef over medium heat until no longer pink, 5-7 minutes; drain. Stir in tomatoes, rice mix and water; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed, 6-8 minutes., Cut and discard tops from peppers; remove seeds. Place peppers in a greased 13x9-in. baking dish. Place 1/3 cup beef mixture in each pepper; sprinkle each with 2 tablespoons cheese. Top with remaining rice mixture. Bake, covered, 25 minutes., Sprinkle with remaining cheese. Bake, uncovered, until cheese is melted and peppers are crisp-tender, 5-10 minutes.

Mexican Stuffed Peppers image

With ground beef, melty cheese, rice, and jarred salsa cooked in one pot, this Mexican stuffed peppers recipe is like a healthy taco in a bell pepper shell.

6 bell peppers (, stems and tops removed, then seeded and)
1 pound 90% lean ground beef
1 medium onion (chopped, about 1 1/2 cups)
24 ounce jar restaurant style salsa
1 teaspoon chile powder
1 teaspoon cumin
1 cup long grain white rice
2 cups water
1/2 tsp kosher salt
1 cup shredded cheese (, Mexican blend or cheddar)
2 tablespoons chopped cilantro
1/4 cup sour cream (, optional)

Steps:

  • Preheat the oven to 350 degrees F.
  • Brown the ground beef in a large fry pan over medium high heat for 5 minutes or until cooked almost through. Add the onion cook until softened, about 5 more minutes. Stir in the jarred salsa, chile powder, and cumin. Add the white rice and water, season with kosher salt and bring to a boil, then reduce to medium low. Cover and cook for 20 minutes, stirring occasionally, until the rice is tender, adding more water if necessary. When the rice is tender, fold in 3/4 of the chopped cilantro, reserving some for garnish.
  • While the meat and rice are cooking, cut off the tops of the peppers, spoon out the ribs and seeds, then rinse. Lightly sprinkle the inside of the peppers with kosher salt and place in a microwave safe dish with 1/4 cup water. Cover with plastic wrap and microwave for 5 minutes or until they soften but still hold their shape.
  • Transfer the peppers to a 3 quart baking dish. Fill the peppers with the hot meat and rice mixture.
  • Bake for 18-20 minutes or until peppers are tender. Sprinkle with cheese and heat for an additional minute or two until the cheese has melted. Garnish with the chopped cilantro and sour cream if you'd like, and serve.

Stir in seasonings, green chiles, 1 cup salsa and rice., Cut off and discard tops from peppers; remove seeds. Fill peppers with beef mixture. Place in a 13x9-in. baking dish coated with cooking spray. Add water to dish., Bake, covered, until peppers are tender and filling is heated through, 45-50 minutes. Top peppers with remaining salsa and cheese. Bake, uncovered, until cheese is melted, 2-3 minutes.

3 large mixed peppers , halved
oil , for drizzling
2 x 250g pouches lime & coriander rice , cooked
400g can black beans , drained and rinsed
6 Mexican-style chilli cheese slices (use regular cheddar or monterey jack, if you like)
150g fresh guacamole

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Remove the seeds and any white pith from the peppers and arrange, cut-side up, in a roasting tin. Drizzle with oil and season, then bake for 20 mins.
  • Combine the rice and beans. Remove the peppers from the oven and fill with the rice mixture. Top each with a slice of cheese and bake for 10-15 mins more, until the rice has melted and the filling is hot. Top with spoonfuls of guacamole.

LOL As easy as it is, it's absolutely wonderful. Made these tonight and will have them again tomorrow. YUMBO!

6 whole green bell peppers, sliced in half and cleaned out.
2 lb ground beef
3 c cooked rice
1 large yellow onion, diced
1 large 28oz can green enchilada sauce (i use mild)
1 1/2 c shredded mexican style graded cheese (more or less, however much you want)
re-fried beans (optional side)

Steps:

  • 1. In a large sauce pan cook your ground beef. After cooked drain off grease.
  • 2. Add your diced onion and saute in the ground beef until onion is translucent (tender).
  • 3. Add your rice to the beef.
  • 4. Pour in your enchilada sauce. heat together then place on simmer.
  • 5. Fill another saucepan 2/3 with water, take your cleaned and sliced bell peppers and boil them for 5 minutes. do not overload your sauce pan.
  • 6. as you cook your peppers, turn them upside down on a paper towel to drain.
  • 7. spray a large casserole dish (9x13) with olive oil spray. (an spray will work, this is what we use) Place your peppers inside the dish.
  • 8. Start filling your peppers.
  • 9. Place in your oven at 300 degrees for about 20 to 30 minutes. Take your dish out and top each pepper with the graded cheese. Place back in the oven until cheese melts.
  • 10. You will have plenty extra filling made up to make more. I put the leftover filling in the frig for another night or prepare more and freeze them up for another dinner!

Steps:

  • Clean the Florida bell peppers with running water. Remove the core and the seeds.
  • Prepare the rice stuffing mixing the rice with the beans and the sweet corn. Season with the spices.
  • Stuff the peppers and add cheese. Bake for 20-30 minutes at 375 degrees Fahrenheit until cheese is melted.
  • Serve hot and you can pair with fresh pico de gallo and greens (optional)

This is a recipe I came up with 20 years ago that has recently won me the grand prize in our paper's holiday recipe contest. It is my family's favorite meal. Serve with tortilla chips on the side.

1 pound ground beef
1 (1 ounce) package taco seasoning mix
¾ cup water
2 teaspoons chili powder
½ cup cooked rice
¼ teaspoon salt
¼ teaspoon garlic salt
⅛ teaspoon ground black pepper
2 (8 ounce) cans tomato sauce, divided
3 large red bell peppers
6 (1 inch) cubes Colby-Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Place the ground beef into a skillet over medium heat, and brown the meat, breaking it apart into crumbles as it cooks, about 8 minutes. Drain excess fat. Stir in the taco seasoning, water, chili powder, cooked rice, salt, garlic salt, black pepper, and 1 can of tomato sauce; mix until thoroughly combined. Bring to a boil, reduce heat to low, and simmer 20 minutes.
  • Meanwhile, cut the bell peppers in half lengthwise, and remove stems, membranes, cores, and seeds. Place a steamer insert into a large saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Place the peppers into the steamer insert, cover the pan, and steam until just tender, 3 to 5 minutes.
  • Place the steamed peppers into the prepared baking dish, and fill lightly with the meat filling. Press 1 cube of Colby-Jack cheese into the center of the filling in each pepper, and spoon the remaining can of tomato sauce over the peppers. Cover the dish with aluminum foil.
  • Bake in the preheated oven until the peppers are tender and the filling is hot, 25 to 30 minutes.

Cook and prep time do Not include time need to make the corn bread as I quite often make it either the night before. If in a time crunch you could always buy a pre-made 9x9 corn bread.

cornbread, a 9x9 pan
6 green bell peppers, medium large
1 onion, chopped
1 teaspoon olive oil
16 ounces diced fire-roasted tomatoes, no-salt added
10 ounces frozen corn, thawed and drained
2 1/4 ounces sliced ripe olives
1/3 cup raisins
1 tablespoon chili powder
1 teaspoon ground sage
4 ounces fat-free cheddar cheese or 4 ounces fat-free monterey jack cheese

Steps:

  • Pre-heat oven to 350°F Set large pot of water to boil.
  • Slice tops off peppers. Discard stems and seeds. Finely chop the tops.
  • Blanch peppers in boiling water for 1 to 2 minutes per side. Then rinse in cold water and set to drain.
  • Place onion and oil in non stick dutch oven. Cook over medium high heat, stirring occasionally till onion is tender and browned. Add chopped pepper; stir for about 1 minute more.
  • Remove from heat.
  • Add tomatoes, corn, olives, raisins, chili powder and sage; stir.
  • Stir in corn bread (it will crumble) and 3/4 cup cheese.
  • Spoon filling into peppers.
  • Top with remaining 1/4 cup cheese.
  • Place peppers in baking dish; bake 20 to 30 minutes (I always go the full 30) until heated through.

¾ cup water
1 (1 ounce) packet taco seasoning
2 tablespoons vegetable oil
1 cup white rice
1 cup water
1 ½ cups chunky salsa
1 small onion, chopped
1 clove garlic, minced
3 large green bell peppers, tops and seeds removed
1 (8 ounce) package shredded Mexican cheese blend
1 (14.5 ounce) package nacho cheese-flavored tortilla chips (such as Doritos®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir 3/4 cup water and taco seasoning into ground beef; simmer until water has evaporated, about 5 minutes.
  • Heat vegetable oil in a separate skillet over medium heat; cook and stir rice in the hot oil until fragrant and golden brown, about 5 minutes.
