Easy to make with chicken or leftover turkey. Can also be made ahead and frozen, but increase baking time (cook covered for 1 hour, remove foil and then bake until bubbly and slightly browned on top).

1 cup chopped onion
1 garlic clove, minced
cooking spray
1 1/2 cups chicken broth
1 (7 ounce) can diced green chilies
1 cup sour cream
3/4 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon fresh ground black pepper
2 (11 ounce) cans cream of chicken soup (or one can cream of chicken and one can cream of celery)
12 (6 inch) corn tortillas
4 cups shredded cooked chicken breasts (about 1 pound)
2 cups finely shredded cheddar cheese (8 ounces)

Steps:

  • Preheat oven to 350°F.
  • Spray bottom of large saucepan with cooking spray and saute garlic and onion until onions are soft.
  • Add chicken broth, green chiles, sour cream, salt, cumin black pepper and soup stirring with a whisk.
  • Bring to a boil, stirring constantly.
  • Remove from heat.
  • Spread 1 cup of soup mixture in a 13 x 9-inch baking dish coated with cooking spray.
  • Arrange 4 tortillas over the top of soup mixture (it doesn't matter if there are some gaps--I end up tearing some in halves and fourths to spread them out with very little overlap or gaps--placing torn sides against flat sides of pan.).
  • Repeat layers (3 tortilla layers topped with 1/4 of remaining soup mixure, 1 cup chicken and 1/2 cup cheese.
  • Bake at 350°F for 30 minutes or until bubbly.

Everyone begs me to make this. As a native New Mexican I love our Hatch NM Green Chile home grown, in the fall around State Fair time you can smell it being roasted all over the state. This dish offers the heart of NM food it is delicious, inexpensive, expedient as you can use leftovers, or fresh, and layer the sauce, corn tortillas, and cheese as you would lasagna. Garnish with Chopped Roma Tomatoes lettuce, raw onion, and sour cream if you like that too.

4 -6 pieces chicken
1 yellow onion
2 cups green chili peppers
1 teaspoon oregano
1 teaspoon cumin
1 tablespoon garlic
1 (16 ounce) can tomatoes
1/4 cup cornstarch
1 -2 cup sharp cheddar cheese
9 -12 corn tortillas
1 roma tomato
1 cup lettuce
1/2 cup onion
1/2 cup sour cream
4 flour tortillas

Steps:

  • Prep 30 minutes bake 45 minutes, Homemade Chicken Stock 1 ½ hours You can make this stew and freeze it. Thaw, layer and bake, as Corn Tortillas don't freeze well in the dish, they become grainy.
  • Use at least ½ Leftover Rotisserie Chicken/ Raw whole pieces / or breasts boiled in water to cover, until done and broth has a good color, I use my pasta cooker with strainer, but any large heavy pot will do.
  • Drain, reserve liquid, set chicken aside to cool.
  • Reduce the remaining broth to about 2 cups or so while chopping this stuff: boned and skinned chicken, ½ as much yellow onion as you have chicken, same amount of Green Chile as Chicken, hot medium or mild "as you like".
  • Throw it all in the broth with Oregano, Cumin, chopped garlic, stewed Mexican or stewed tomatoes. Simmer til onion is soft, if it's watery stir about ¼ cup cornstarch into some cold water or cooled broth, then add back into the stew to thicken.
  • Taste and add salt til it is yummy.
  • Once the stew is a satisfying thickness you can layer * using shredded sharp cheddar cheese, White/Yellow corn tortillas/and any stale taco shells you might have. Finish with Cheese and bake at 350 until bubbly and done. Let it rest for 20 minutes to firm up before serving.
  • *If you just want some awesome green Chile Stew, add par boiled chopped to bite size potatoes at this point and when it looks like soup, put it in a bowl garnish with cheese and eat with a fresh hot flour Tortilla.
  • This is my Husband's favorite dish. I sure hope you like it too!

1 can cream of mushroom soup
1/2 cup milk

  • Cut tortillas in strips.
  • Mix together soups, milk& chilies.
  • Make layers in a large baking dish, starting with the tortillas at the bottom, then chicken, then soups and ending with the cheese.

I found this recipe in a cookbook, but changed it so much to my own liking that it no longer resembles the original. My husband and I moaned at the first taste of this. It is just as yummy reheated and you can add a few more chips to make it have that crispness again. Hope you enjoy!

1 lb boneless skinless chicken breast half, cooked and shredded
1 (16 ounce) can black beans, drained and rinsed
1 cup chicken broth
1/2 cup onion
3/4 cup green pepper
1/4 cup scallion
1 (16 ounce) can whole kernel corn, drained
1 (16 ounce) can diced tomatoes with green chilies
1/2 lb American cheese
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
7 ounces tortilla chips

Steps:

  • mix everything together except the chips and 1/4 cup of cheese. butter a deep casserole dish. Pour some of the mixture in the bottom of the pan. break chips into small pieces and sprinkle on top the mixture - repeat with about 3 layers. use the remaining cheese to sprinkle on top. bake uncovered at 350 for 30 minutes or less. Check oven occasionally.
  • you can add green chiles and jalapenos depending on how spicy you'd like it.

I love the flavor of green enchiladas, but sometimes I don't love rolling all the tortillas, lol! Here is a casserole that gives that great, tangy flavor, but in much less time. Garnish with sour cream, if you like. Mexican rice and borracho beans are great sides for this Tex-Mex family meal.

1 cooking spray
1 ½ pounds boneless, skinless chicken thighs, cooked
2 cups shredded Monterey Jack cheese, divided
2 teaspoons chili powder
1 (28 ounce) can tomatillos, drained
2 (4 ounce) cans mild chopped green chile peppers
1 bunch green onions, trimmed and cut into 3-inch lengths
½ cup chopped cilantro
1 jalapeno pepper, seeded and minced
2 cloves garlic, peeled
salt and ground black pepper to taste
1 cup chicken broth
12 corn tortillas

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Chop cooked chicken thighs into small pieces and place in a medium mixing bowl. Stir 1/2 cup Monterey Jack cheese and chili powder into the chicken.
  • Combine tomatillos, chile peppers, green onions, cilantro, jalapeno, and garlic in the bowl of a food processor. Process until pureed, about 3 minutes. Add chicken broth and pulse to mix. Season with salt and pepper.
  • Cut tortillas in half and place directly on the hot oven racks. Heat for 2 to 3 minutes. Carefully remove tortillas and set aside.
  • Place 1 cup of the green sauce on the bottom of the prepared baking dish. Layer 1/2 of the tortillas over the sauce. Add 1/2 of the chicken mixture. Spoon 1/2 of the remaining green sauce over the chicken, then sprinkle on 1/2 of the remaining cheese. Repeat the layers of tortillas, chicken mixture, green sauce, and cheese.
  • Bake in the preheated oven until the cheese is melted and the sauce is bubbly, about 20 minutes.

1 lb tomatillo, husks removed, rinsed
1 teaspoon vegetable oil
1/2 cup chopped onion (1 medium)
1 fresh pablano chili pepper, seeded and chopped
1/4 cup snipped fresh cilantro
1 teaspoon sugar
1/2 teaspoon ground cumin
1/4 teaspoon salt
72 inches corn tortillas, halved
3 cups shredded cooked chicken breasts
3/4 cup mexican style shredded cheese
1 (16 ounce) jar salsa

Steps:

  • Preheat broiler. Lightly coat a 2 quart square baking dish with cooking spray; set aside. Line a 15x10x1 inch baking pan with foil. Place tomatillos in baking pan. Broil 4 to 5 inches from heat for 6 to 8 minutes or until softened and charred, turning occasionally. Set aside to cool slightly.
  • In a large skillet heat oil over medium heat. Add onion and chile pepper; cook and stir for 4 to 5 minutes or until tender and onion starts to brown.
  • In a blender or food processor combine tomatillos, onion mixture, the ¼ cup cilantro, the sugar, cumin, and salt. Cover and blend until smooth, stopping and scraping sides as necessary.
  • Spread ¾ cup of the tomatillo mixture in the prepared baking dish. Arrange 6 tortilla halves over the sauce, overlapping slightly. Top with 1 cup of the chicken, ½ cup of the cheese, and half of the remaining tomatillo mixture. Add six more tortilla halves, the remaining 1 cup chicken, ½ cup cheese, and half of the remaining tomatillo mixture. Top with the remaining six tortilla halves and the remaining salsa, spreading to cover.
  • Cover the dish with plastic wrap and chill for at least 8 hours (up to 24).

2-1/2 cups shredded cheddar cheese, divided

20 (6 inch) corn tortillas
