MEXICAN GOULASH

Steps:
- Cook the ground beef and onion into a large skillet over medium heat until browned and crumbly, about 10 minutes. Break the meat apart as it cooks. Drain the excess grease.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- Add the macaroni to the the beef and onion and place over medium-low heat; stir in the processed cheese until melted, about 3 minutes. Add the salsa, pinto beans, and corn to the mixture; stir and heat until the mixture bubbles slightly, another 5 minutes.

EASY MEXICAN GOULASH
My stepson loves tacos, so I whipped this up one night when I didn't have taco shells.

Steps:
- Heat a large skillet over medium-high heat. Cook and stir beef, onion, bell pepper, and Worcestershire sauce in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add tomatoes, corn, salsa, and taco seasoning. Cover and simmer while preparing macaroni.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain. Stir macaroni into beef mixture.

MEXICAN GOULASH
My neighbor bought a cookbook for her son and I was flipping through it and saw this recipe. I told her it looked pretty good. The next thing I know she was calling me up and saying, "I have almost all the ingredients to make this but do you have this and this and this.....?" Well, I did and so we made it together and split it. She had to make a copy of the recipe for me so I could make it anytime I wanted. It is so good. Great for those cold, yucky days or nights. It looks like a lot of work but it is not, trust me.

Steps:
- Brown ground beef. Reserve drippings in pan and transfer beef to a slow cooker.
- Saute onions, bell pepper, celery, and garlic in drippings in skillet. Transfer to slow cooker.
- Add next 11 ingredients. Mix well.
- Cover and cook on high 3 to 4 hours.
- Sprinkle individual servings with shredded cheese. Serve with tortialls chips.

- 1.In a large nonstick skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, tomato sauce, corn, water, chili powder, oregano and salt. Bring to a boil. Add macaroni. Reduce heat; cover and simmer for 20-25 minutes or until macaroni is tender. Sprinkle with cheese; cover and cook 2-3 minutes longer or until cheese is melted.
GOULASH
This delicious, easy goulash recipe is made with hearty beef, tender macaroni pasta, lots of vegetables and a savory tomato based sauce. Makes about 7 cups.

- Saute veggies: Heat a large pot over medium-high heat. Add onion, bell pepper and carrot and saute 6 minutes. Scoot to one far side.
- Brown beef: Add beef in about 5 chunks and let brown on bottom, about 2 - 3 minutes then break up beef and toss with veggies. Cook beef through, tossing occasionally.
- Drain fat, saute garlic: Drain off excess fat as needed*. Add garlic and saute 1 minute longer.
- Add canned ingredients and seasonings, simmer: Pour in chicken broth, tomato paste, tomato sauce, diced tomatoes, Worcestershire sauce, Italian seasoning and paprika. Season with salt and pepper to taste. Bring mixture to a simmer.
- Add pasta and cook to al dente: Add pasta and stir. Reduce to medium-low cover and let simmer, stirring occasionally until pasta is nearly tender, about 10 - 12 minutes. If needed add a little more broth to thin.
- Let rest: Remove from heat and let rest a few minutes until pasta is tender and sauce has thickened.
- Garnish: Stir in parsley. Serve warm.

This is my special homemade recipe. Goulash with a spicy twist!! Not too hot, but just right for the buds!!! I like to sprinkle shredded cheese on top, with a little bit of Greek seasoning... YUM!

- Cook pasta accordingly.
- While pasta cooks, brown hamburger and drain.
- Transfer meat to stockpot and add all other ingredients.
- When pasta is done, drain excess water and add pasta to stockpot.

- Preheat oven to 375°. Put on a large pan of water to boil for the egg noodles. When it comes to a boil, add egg noodles and boil until they are done. Drain noodles and set aside.
- Meanwhile, brown ground beef with the onion, celery, and bell pepper. When meat is almost brown, add the garlic and start to cook that also. Drain well and place the meat back in the pan you browned it in.
- Add tomato paste and cup of water to the meat and cook the tomato paste for 3-4 minutes with the meat.
- In a large bowl mix the meat veggie mixture, 1 1/2 cups of cheese and the rest of the ingredients including the cooked egg noodles. Mix well.

- Sprinkle with crushed red peppers, cumin, salt and pepper. Stir, then add taco seasoning and water. Stir. Let cook for 5-10 minutes.
- Next, add tomato paste plus 3 cans of water. Stir until well incorporated. Let simmer for 15 minutes
