4 bolillo rolls, sliced in half lengthwise
3 tablespoons butter, room temperature
1 (16 ounce) can refried beans, heated
1 (7 ounce) package Borden® Southwestern Cheddar & Monterey Jack Shredded Cheese
Mexican salsa or pico de gallo, for serving

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with parchment paper.
  • Remove some of the bread from the middle of bread halves to accommodate more toppings. Spread about 1 teaspoon butter on each half.
  • Spread 2 to 3 tablespoons warmed refried beans on bread. Sprinkle about 1/4 cup Borden® Cheddar and Monterey Jack shredded cheese on the beans. Place bread halves on prepared baking sheet.
  • Bake in preheated oven until the cheese is melted and bubbly and the bread is crispy, 15 to 20 minutes.
  • Top molletes with Mexican salsa or pico de gallo.

4 ciabatta rolls
3/4 cup refried black beans
1/3 cup sour cream
1/4 cup minced fresh cilantro
2 teaspoons lime juice
3 to 5 drops chipotle hot pepper sauce
1/8 teaspoon salt
4 large eggs
1/2 cup shredded Monterey Jack cheese
1 teaspoon olive oil
4 cooked bacon strips, halved
1/2 medium ripe avocado, peeled and sliced
1/2 cup salsa
2 green onions, chopped

Steps:

  • Cut the top third off each roll; hollow out bottom, leaving a 1/2-in. shell (discard removed bread or save for another use). Place roll bottoms on an ungreased baking sheet., In a small bowl, combine the beans, sour cream, cilantro, lime juice, chipotle pepper sauce and salt. Spread 1/4 cup inside each roll. Break an egg into each roll. Bake at 400° for 10 minutes., Sprinkle cheese over eggs. Brush roll tops with olive oil; place on the baking sheet. Bake until egg whites are completely set and yolks begin to thicken but are not firm, 5-8 minutes longer. Top each with bacon, avocado, salsa and onions. Replace roll tops.

Start your morning with these deliciously messy, all-out breakfast sandwiches inspired by traditional Mexican flavours. Meat eaters can kick this sandwich up a notch by adding bacon - a salty and savoury combination with the peanut butter. Serve with hot sauce to add some heat.

1 teaspoon cider vinegar
1/3 cup canned black beans
2 teaspoons lime juice
1 pinch cumin
1 pinch salt
3 tablespoons coriander
3 tablespoons peanut butter
2 tablespoons mayonnaise
1 tablespoon canned adobo sauce
2 eggs
2 whole wheat English muffins
2 slices crisp cooked bacon
2 -4 tomatoes, slices

Steps:

  • Bring a medium pot of water and vinegar to a simmer (vinegar helps the eggs to set). Meanwhile, in a medium bowl, use a fork to coarsely mash the beans with lime juice, cumin and salt. Stir in half the coriander. In a small bowl, stir peanut butter with mayonnaise and adobo peppers.
  • Crack one egg into a small ramekin or bowl. Slide egg into simmering water. Repeat with the second egg. Simmer for 3 minutes. While eggs are cooking, split and toast English muffins. Remove eggs, one at a time, using a slotted spoon. Pat dry with paper towel and set on a plate.
  • Spread both sides of English muffins with peanut butter mixture. Top base with bacon if using, then tomato slices, dollops of black bean mash, egg and coriander. Finish with tops of English muffins to form 2 sandwiches.
  • Tip: Swap out the poached egg for a fried or scrambled egg, if preferred.

12 slices jalapeno jack cheese
4 eggs, beaten
4 slices turkey bacon, chopped
2 green onions, thinly sliced
8 slices sourdough bread
butter, softened

Steps:

  • Chop 4 cheese slices; combine with eggs and set aside.
  • Saute turkey bacon and green onions in butter until onions are translucent.
  • Add egg and cheese mixture; cook, stirring over medium heat until eggs are set.
  • Remove and keep warm.
  • Butter all slices of bread on one side.
  • Place 4 slices of bread, buttered side down, in clean skillet.
  • Top each with one slice of cheese and an equal amount of scrambled eggs.
  • Place one slice cheese over eggs on each sandwich; top with remaining bread, buttered side up.
  • Cook over medium-low heat, turning once carefully, until bread is golden brown and cheese is melted.
