1 cup shredded pepper Jack cheese (4 oz)
4 oz cream cheese, softened
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 package (1 oz) Old El Paso™ taco seasoning mix
4 boneless skinless chicken breasts (6 to 8 oz each)
2 tablespoons olive oil
3/4 cup shredded mozzarella cheese (3 oz)
1/4 cup sliced green onions (4 medium)
1/4 cup fresh cilantro leaves

Steps:

  • Heat oven to 400°F. Line large, rimmed sheet pan with foil. Place wire rack on top of foil. Spray with cooking spray.
  • In medium bowl, mix pepper Jack cheese, cream cheese, chiles and 1 tablespoon of the taco seasoning mix. In thick side of each chicken breast, cut 3-inch-long pocket to within 1/4 inch of opposite side of breast. Spoon about 1/3 cup cheese mixture into pocket in each chicken breast. Secure with toothpicks.
  • In small bowl, mix remaining taco seasoning mix and the olive oil. Place chicken on rack; brush with oil mixture.
  • Roast uncovered 25 to 30 minutes or until stuffing reaches internal temperature of 160°F. Top chicken breasts with mozzarella cheese; bake 3 to 5 minutes or until cheese is melted. Top each breast with green onions and cilantro.

8 Old El Paso™ Stand 'N Stuff™ bold nacho cheese flavored taco shells
4 chicken breasts- butterflied and pounded thing
1 cup Old El Paso™ traditional refried beans
1-1/3 Cup shredded pepper Jack cheese
1 can (4.5 oz) Old El Paso™ Chopped green chiles- drained
Salt & Pepper to taste

Steps:

  • Preheat Oven to 350° F. / 175° C. In a food processor, pulse the taco shells into a fine crumb. Place in a shallow dish and set aside.
  • Butterfly each chicken breast open, cover in plastic wrap and pound thin. Season both sides with salt and pepper and spread 1/4 cup refried beans over the cut side of each breast. Layer 1/3 cup cheese on top of the beans and spoon a tablespoon of the drained green chilies on top of each.
  • Roll each chicken breast tightly away from you and secure with 2-3 toothpicks. Bread the prepared chicken in the taco crumbs, pressing evenly on all sides. Place chicken on a baking rack placed over a sheet pan and bake for 35 - 45 minutes or until the chicken reaches an internal temperature of 165° F. / 74° C. Allow to rest 5 to 10 minutes before serving.

1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 cup black beans
1/3 cup chopped fresh tomato (such as Roma), seeds removed
1/3 cup chopped fresh spinach
2 cups shredded cheddar or Monterey Jack cheese, divided
2 teaspoons taco seasoning
Salsa, sliced avocado or guacamole, chopped fresh cilantro, chopped green onions, sour cream or Greek yogurt, pickled jalapeños or hot sauce

Steps:

  • Preheat oven to 375. Line a baking sheet with parchment paper and set aside.

  • Sprinkle the inside of each chicken breasts with the salt and pepper.
  • Add to each chicken breast 2 tablespoons of black beans, 1 1/2 tablespoons of chopped tomato, 1 1/2 tablespoons of chopped spinach and 1/4 cup of shredded cheese.
  • Fold chicken breasts to close them up and lay on parchment-lined baking sheet.
  • Sprinkle each of the tops of the chicken breasts with 1/2 teaspoon of the taco seasoning. Top each breast with an extra 1/4 cup of shredded cheese.

4 cups chicken breast, cooked and chopped
1 can black beans, rinsed and drained
6 green onions, diced
1/2 each of red, green, yellow, & orange bell peppers, diced
3 (8-ounce) blocks cream cheese, softened
2 cans diced tomatoes with chiles
1/4 to 1/2 cup chicken stock
1 teaspoon cumin
1 1/2 cups sharp cheddar cheese, shredded
1 cup of picante sauce
38 large pasta shells, cooked al dente

Steps:

  • Cook pasta shells in well salted, boiling water until al dente. If you cook them too long, they will be difficult to stuff, plus they will have additional cooking time, once they are stuffed. Drain the pasta and set aside while you make the filling. Cook, drain and dice enough chicken breast to make 4 cups. I always have homemade chicken stock and pre-cooked diced chicken bagged in my freezer. You could use canned chicken broth if you prefer. To make the filling, mix diced chicken, drained black beans, green onions, diced peppers, and cumin in a large mixing bowl. Thoroughly incorporate all the ingredients. In a separate bowl, mix the cream cheese, chicken stock and undrained tomatoes with chiles. When thoroughly combined, pour it over the chicken mixture and mix well. (If you have trouble incorporating the cream cheese and tomatoes, you can heat it slightly in the microwave.) Spread 3/4 cup picante sauce in the bottom of a large baking dish. (I used one 13x18x2-inch dish, but two 9×13-inch dishes should also work.) Reserve the final 1/4 cup for later. Using a spoon, or your fingers, fill each of your cooked and cooled pasta shells, setting them into the picante covered pan. Continue until all shells are filled and arranged in the pan. When the pan is full, drizzle the shells with the remaining 1/4 cup of picante and then sprinkle with the shredded cheddar cheese. Cover the baking pan tightly with foil and bake at 350°F for about 30 minutes or until hot and bubbly.

4 teaspoons chili powder, divided
4 teaspoons ground cumin, divided
1 skinless, boneless chicken breast

  • Place toothpicks in a small bowl and cover with water; let them soak to keep them from burning while cooking.

2 pkg low-sodium taco seasoning
5 oz cream cheese
16 jumbo pasta shells
2 c salsa, chunky
2 c taco sauce
1 c cheddar cheese, shredded
1 c Monterey jack cheese, shredded
2 c four cheese Mexican cheese, shredded (Kraft)
2 fresh jalapenos, minced (optional)
4 green onions, green parts only-chopped (optional)
sour cream, optional (topping)
1 medium can black olives (optional)

Steps:

  • 1. Preheat oven to 350°.
  • 2. In a pan brown the ground beef and jalapenos (optional); Drain once done. Add taco seasoning and prepare according to package directions.
  • 3. Add cream cheese. Cover and simmer until cheese is melted.
  • 4. Add 2 cups of Kraft four cheese Mexican. Add olives (optional) Stir together and mix well. Set aside and cool completely.
  • 5. While ground beef is cooking, cook the pasta shells according to package directions; drain.
  • 6. Set shells out individually on cutting board or baking sheet so that they don't stick together.
  • 7. Pour salsa on bottom of a 9×13 baking dish.
  • 8. Stuff each shell with 1-2 tablespoons of the meat mixture. Place shells in 9×13 pan open side up.
  • 9. Evenly cover shells with taco sauce.
  • 10. Cover dish with foil and bake for 30 minutes.
  • 11. After 30 minutes, add remaining shredded cheese and bake for 10-15 more minutes with the foil removed.

½ onion, thinly sliced
1 mild green chile pepper, chopped

  • Preheat oven to 375 degrees F (190 degrees C). Spray an 9x12-inch baking dish with cooking spray.
  • Rub the red bell peppers, yellow bell peppers, and orange bell peppers with barbeque rub; arrange in the baking dish.
  • Heat olive oil in a skillet over medium heat; cook and stir chicken, onion, green chile pepper, jalapeno pepper, turmeric, coriander, cumin, salt, and pepper until chicken and onion are lightly browned, about 5 minutes. 1/4 cup pepper jack cheese, shredded
1/4 cup sharp cheddar cheese, shredded

1 (4.9 ounce) can chopped green chilies

1 cup crushed cheese it crackers
1 1/2 teaspoons taco seasoning

  • Preheat oven to 350*F Coat a 9x9 inch casserole dish with cooking spray and set aside. Place chicken breast between two pieces of plastic wrap. Pound with a meat tenderizer until flattened to 1/4 inch thick. Do this to all breasts. In a bowl mix 3 Tablespoons butter, pepper jack cheese, sharp cheddar cheese, green onions & green chilies. In another bowl place melted butter. In another bowl mix crushed cheese crackers and taco seasoning. Spoon cheese mixture onto each chicken breast and roll up, tucking sides in if possible. 1/3 cup white or yellow cornmeal
1/2 package taco seasoning mix
1 egg, beaten
1 can (4 ounce size) green chiles
2 ounces cheddar cheese, cut into strips
4 tablespoons chopped fresh cilantro
1/4 teaspoon crushed red pepper flakes
2 ounces shredded cheddar or monterey jack cheese
8 ounces salsa, optional

  • Preheat the oven to 375 degrees F. Pound the chicken breasts so they are an equal thickness of about 1/8-inch thick. Set aside. Combine the cornmeal and taco seasoning in a shallow dish. Place the beaten egg in another shallow dish. Place a chicken breast on a work surface. Place green chiles, cheddar cheese strips, cilantro, and crushed red pepper near the bottom edge of the chicken breast. Fold the sides in and roll the chicken breast up. Dip the rolled chicken breast in the beaten egg, turning to coat it well and then let any excess drip off. Next roll the chicken in the seasoned cornmeal, pressing lightly so the cornmeal adheres to the chicken. Place the chicken seam-side down in a shallow baking dish. With ground beef, melty cheese, rice, and jarred salsa cooked in one pot, this Mexican stuffed peppers recipe is like a healthy taco in a bell pepper shell.

6 bell peppers (, stems and tops removed, then seeded and)
1 pound 90% lean ground beef
1 medium onion (chopped, about 1 1/2 cups)
24 ounce jar restaurant style salsa
1 teaspoon chile powder
1 teaspoon cumin
1 cup long grain white rice
2 cups water
1/2 tsp kosher salt
1 cup shredded cheese (, Mexican blend or cheddar)
2 tablespoons chopped cilantro
1/4 cup sour cream (, optional)

Steps:

  • Preheat the oven to 350 degrees F.
  • Brown the ground beef in a large fry pan over medium high heat for 5 minutes or until cooked almost through. Add the onion cook until softened, about 5 more minutes. Stir in the jarred salsa, chile powder, and cumin. Add the white rice and water, season with kosher salt and bring to a boil, then reduce to medium low. Cover and cook for 20 minutes, stirring occasionally, until the rice is tender, adding more water if necessary. When the rice is tender, fold in 3/4 of the chopped cilantro, reserving some for garnish.
  • While the meat and rice are cooking, cut off the tops of the peppers, spoon out the ribs and seeds, then rinse. Lightly sprinkle the inside of the peppers with kosher salt and place in a microwave safe dish with 1/4 cup water. Cover with plastic wrap and microwave for 5 minutes or until they soften but still hold their shape.
  • Transfer the peppers to a 3 quart baking dish. Fill the peppers with the hot meat and rice mixture.
