Spicy seafood stew with tomatoes & lime image

John Torode's Mexican-inspired one-pot casserole is packed with shellfish, white fish and plenty of chilli

2 dried ancho or guajillo chillies
1 tbsp olive oil
1 large onion , chopped
4 garlic cloves , chopped
1 tsp chipotle paste or 1 tsp smoked hot paprika (pimentón)
1 tsp ground cumin
700ml chicken stock
250g chopped tomato , from a can
200g large peeled raw prawn
300g halibut or other firm white fish fillets, cut into 2.5cm pieces
300g clam
500g small new potato , halved and boiled
juice 2 limes
lime wedges
1 avocado , chopped
handful coriander leaves
1 small red onion , finely diced
corn tortillas , sliced and baked

Steps:

  • Toast the chillies in a hot dry frying pan for a few moments (they will puff up a bit), then remove. Deseed and stem chillies, and soak in boiling water for 15 mins.
  • Heat the olive oil in a large saucepan over a medium heat. Add the onion and garlic, season and cook for about 5 mins or until softened. Add the chipotle paste, reconstituted chillies, cumin, stock and tomatoes. Sauté for 5 mins, then purée until very fine in a blender. Pour back into the pan and bring to the boil. Reduce the heat and simmer for 10 mins. When close to eating, add the prawns, fish fillets, clams and potatoes. Place a lid on top and cook for 5 mins over a medium-high heat. Add the lime juice and serve with lime wedges, avocado, coriander, red onion and tortilla chips for sprinkling over.

1 onion, chopped
2 each poblano peppers, seeded and chopped
3 cloves garlic, minced
8 ounces chorizo sausage
1 (32 ounce) container chicken stock or broth
2 (14.5 ounce) cans Hunt's® no salt added Petite Diced Tomatoes, drained
1 (11 ounce) can Mexican-style corn, drained
1 (7 ounce) can salsa verde
1 ½ teaspoons ground cumin
½ teaspoon ground chipotle chile pepper, or to taste
1 pound cod fillets (or other firm white fish like halibut), cut into chunks
1 pound large raw shrimp, peeled, deveined
1 Chopped green onions
1 bunch Chopped fresh cilantro
1 Lime wedges

Steps:

  • Heat olive oil in a large pan over medium heat. Add onion, peppers, and garlic; cook and stir until soft, 5 to 7 minutes. Transfer to a plate. Add ground chorizo to pan and cook and stir, crumbling, until browned and cooked through, 5 to 7 minutes. Remove from heat.
  • Pour chicken stock into a large soup pot. Add Hunt's tomatoes, Mexican corn, salsa verde, cumin, chipotle, and softened onion-peppers-garlic mixture. Stir to combine, then simmer for 10 minutes to blend flavors.
  • Stir in cod, shrimp, and reserved chorizo and continue to simmer until fish and shrimp are cooked, about 5 to 7 minutes.
  • Ladle into serving bowls. Serve with fresh chopped green onions, chopped cilantro, and lime wedges.

1 large (9-ounce) white onion, chopped
half of a 15-ounce package chorizo, removed from casing
2 thick slices hardwood smoked bacon, diced
2 pound boneless country-style pork ribs or cubed pork shoulder, cut into 1-inch cubes
1 (29-ounce) can mexican-style hominy, drained, rinsed
1 (15-ounce) can diced tomatoes, preferably fire-roasted
1/4 cup ancho chili powder or another chili powder
3 to 4 large cloves garlic, crushed
1/2 teaspoon oregano
1 teaspoon salt
6 to 8 large super-fresh eggs
2 1/2 tablespoons distilled or apple cider vinegar
chopped fresh cilantro for garnish

Steps:

  • Put onion, chorizo and bacon into a large nonstick skillet or heavy-bottomed Dutch oven.
  • Cook over medium heat, stirring often, until chorizo is cooked through, about 10 minutes.
  • If using a slow cooker, transfer the cooked mixture to the slow cooker.
  • Stir in pork, hominy, tomatoes with their juice, ancho powder, garlic and oregano.
  • Add 3 cups water; set heat to low.
  • Cook covered until pork is tender, about 8 hours. (If using a Dutch oven, stir in pork, hominy, tomatoes with their juice, ancho powder, garlic and oregano. Add 4 cups water; heat to a simmer. Reduce heat to very low; cook partly covered, stirring often, until pork is fork-tender, about 2 hours.)
  • Stir in salt; simmer a few minutes longer.
  • To poach eggs, heat 3 inches of water with the vinegar and a pinch of salt in a deep 3-quart saucepan to a gentle simmer.
  • Crack one egg at a time into a small dish.
  • Swirl the water with a large spoon, then gently slip the egg into the middle of the swirling water.
  • Cook at the barest simmer until yolk is soft set, about 4 minutes.
  • Use a slotted spoon to carefully scoop the egg out of the water; transfer it to a shallow bowl of cool water.
  • Repeat to poach all of the eggs.
  • To serve, ladle very hot stew into shallow serving bowls.
  • Nestle a poached egg into the stew, which will warm it nicely.
  • Garnish with a generous sprinkle of cilantro.

I love chorizo and quite often whip up a stew like this for supper. It is very adaptable to whatever you happen to have around the house.

2 tablespoons oil
2 bay leaves
1 small onion, thinly sliced into half-moons
1 green pepper, seeded and sliced
2 fresh chorizo sausages, cut into 1 cm thick slices
1 potato, peeled and diced
1 (400 g) can white beans, drained and rinsed
2 (400 g) cans chopped tomatoes
1 tablespoon tomato paste
1 tablespoon paprika (preferably smoked paprika)
1 teaspoon chili powder
1 spring onion, sliced
salt and pepper, to taste

Steps:

  • Heat the oil in a large saucepan and add in the bay leaves, onion, green pepper and chorizo.
  • Saute for 2-3 minutes over a medium-high heat, then add the potato, beans, tomatoes, paste and spices.
  • Bring to a boil, then turn the heat down very low and let simmer covered for 20 minutes.
  • Stir the stew, then leave partially covered for another 20 minutes or until the stew is as thick as you like and the potatoes are cooked.
  • Season to taste.
  • Ladle into bowls and top with the spring onion.

1 1/2 cups extra-virgin olive oil
1 pound spicy Mexican chorizo, casing removed
1/4 cup finely chopped sweet or Vidalia onion
1 teaspoon adobo seasoning
1 teaspoon Hungarian paprika
Freshly ground black pepper
1 head garlic, peeled and finely chopped
Salt
1 1/2 pounds peeled deveined shrimp (16/20 count)
Crusty, chewy bread, for sopping

Steps:

  • In a medium straight-sided pan, heat 2 tablespoons of oil over medium-high heat and saute the chorizo and onions, breaking the chorizo up with a wooden spoon while cooking until it resembles ground beef. Add the adobo, paprika and a few grinds of black pepper. Cook until the fat is rendered and the onions are tender and cooked into the chorizo, 8 to 10 minutes.
  • Add the remaining oil and the garlic and lower the heat to medium-low. Let the flavors infuse over the low heat for 5 to 7 minutes. Add the shrimp to the garlic oil, raise the heat slightly, and stir and turn to cook the shrimp evenly, 6 to 8 minutes. Serve as an appetizer on toothpicks with crusty, chewy bread.

2 large carrots, diced
1 poblano pepper, diced
1 red bell pepper, diced
1 chayote squash, diced
2 Fresno peppers or jalapeño peppers, minced
1 cup uncooked Mexican chorizo
4 cloves garlic, minced
2 large Roma tomatoes, diced
1/4 cup cilantro, chopped, plus more for garnish
1 tablespoon file gumbo powder
2 bay leaves
2 teaspoons smoked paprika
1 teaspoon Cayenne pepper
1/2 teaspoon dried thyme
2 teaspoons Mexican oregano
1 teaspoon fresh cracked pepper
1/4 cup tomato paste
4 cups tomato cocktail (I used Clamato)
4 cups seafood or chicken broth
1 pound firm, white-fleshed fish, cut into 1-inch pieces (I used swai but you can use another)
1 pound large shrimp, cleaned and peeled
1/2 pound bay scallops
1 1/2 cups crab meat of your choice
12 oysters, optional (I did not use them)
2 to 4 tablespoons hot sauce of your choice (I used both Tabasco and Tapatio)
Salt to taste
*Serve with cooked white rice, hot sauce, lemon wedges, avocado slices and chopped cilantro

Steps:

  • Directions: 1. Preheat the oil to medium/high heat in a large Dutch oven pot. Add the onions, celery, carrots, poblano pepper, red bell pepper, chayote squash and Fresno chile peppers. Season lightly with salt and pepper and cook for 8 to 10 minutes. 2. If using the Mexican chorizo, add it to the center of pot and cook down for 5 to 6 minutes. Stir well to combine. 3. Add in the garlic, tomatoes, cilantro, file powder, smoked paprika, thyme, oregano, cayenne, pepper and tomato paste. Cook for 5 minutes. 4. Add in the clamato and chicken broth. Bring to a boil, taste for salt and pepper and cook for 30 minutes. 5. Add in the white fish and cook for 5 minutes. Add in the remaining seafood and cook for another 5 minutes. Add hot sauce to taste. Yields up to 8 servings. Notes: If you cannot find the file gumbo powder, combine 2 tablespoons of cornstarch with 2 tablespoons of water.
