MEXICAN HOMEMADE SALSA
In the summertime, I love to make this easy, zippy homemade salsa recipe with fresh tomatoes from my garden. I even have a special pan for roasting the peppers. -Roger Stenman, Batavia, Illinois

Steps:
- Heat a small ungreased cast-iron skillet over high heat. With a small sharp knife, pierce jalapenos; add to hot skillet. Cook for 15-20 minutes or until peppers are blistered and blackened, turning occasionally., Immediately place jalapenos in a small bowl; cover and let stand for 20 minutes. Peel off and discard charred skins. Remove stems and seeds., Place onion and garlic in a food processor; cover and pulse 4 times. Add the tomatoes, cilantro, salt and jalapenos. Cover and process until salsa reaches desired consistency. Chill until serving. Serve with chips.

RESTAURANT STYLE SALSA

Steps:
- Place onion and jalapeno in the food processor first, then add remaining ingredients (start with 1/2 tbsp lime juice).
- Blitz to desired consistency - I like mine pretty smooth because you get better flavour out of the onion etc.
- Taste test with corn chip for salt and lime. Adjust if necessary.
- Refrigerate 1 hour before serving with corn chips, or other dippers (see in post for suggestions).

- In a small bow, mix together the refried beans and taco seasoning.
- Spoon bean mixture into the base of a shallow square casserole dish, spread to form bottom layer.
- Spread sour cream evenly over bottom layer.
- In a small bowl mix together avocado and lemon juice, stir in tomatoes and season with salt and pepper.
- Carefully spoon avocado mixture over sour cream.
- Evenly pour the salsa to form next layer.
- Finally sprinkle with cheese.
- Serve with corn chips.

- Mix 3 tablespoons of the Salsa liquid and 2 tablespoons of the sour cream in with the refried beans and stir until combined. Then spread refried beans evenly on the bottom of a 9x13 casserole dish.
- In a medium mixing bowl, combine the cream cheese, remaining sour cream, and taco seasoning. Stir until combined. Spread over refried beans.
- Add the guacamole in an even layer. Pour salsa over the guacamole and spread until covered. Top with a layer of cheese.
- Garnish with chopped tomatoes, chopped pickled jalapenos, chopped cilantro, and sliced black olives.
- Cover and chill until ready to serve.
