MEXICAN-STYLE CHIPOTLE RICE



Mexican-style chipotle rice image

This vegetarian recipe for Mexican-style rice uses chipotle paste, which you can buy in a jar from the supermarket. Chipotle is a mild, smoky chilli and using a ready-made paste makes it really easy to adapt the amount you use to suit your tastes. Also suitable for vegans.

1 tablespoon olive oil
1 onion (finely chopped)
2 cloves garlic (finely chopped)
1 teaspoon chipotle paste or dried chipotle (or adjust to taste)
1 red pepper (diced)
100 g sweetcorn (fresh, tinned or frozen)
400 g tinned chopped tomatoes
240 g tinned black beans (1 standard tin) (drained and rinsed)
200 ml hot vegetable stock (or boiling water)
160 g basmati rice (rinsed*)
salt and pepper (to taste)
small handful coriander (leaves picked or chopped)
1 lime (cut into wedges)

Steps:

  • Heat the olive oil in a large non-stick pan over a medium heat.
  • Add 1 chopped onion, stir well, reduce the heat to medium-low and cover.
  • Cook, stirring occasionally for ten minutes or until the onion is soft and translucent.
  • Add 1 cloves garlic and 1 tsp chipotle paste, stir well and cook for a further minute.
  • Add a chopped red pepper and cook for another ten minutes, stirring occasionally, until the pepper is cooked.
  • Add 100g sweetcorn then pour in a tin of chopped tomatoes, the drained tin of beans, 160g rice and 200ml boiling water or hot vegetable stock.
  • Bring to the boil, then cover with a lid and cook on a low heat for 25-30 minutes until the rice is cooked through and most of the liquid has gone.
  • Add a little more water if needed but be careful not to add too much.
  • Season to taste with salt and pepper and serve with fresh coriander and lime wedges.

400g pork shoulder steak , cut into 3cm pieces
2 tbsp chipotle paste
2 tsp each ground cumin and smoked paprika
1 tsp sugar
1 tsp vegetable oil
100g basmati rice
400g can black bean , drained, rinsed
1 avocado , cut into chunks
1 small red onion , finely chopped
handful coriander , roughly chopped
1 lime , ½ juiced, ½ wedges
2 tbsp pickled jalapeños , slices, rinsed

Steps:

  • Heat oven to 180C/160C fan/gas 4. Toss the pork with 1 tbsp of the chipotle paste, cumin, paprika, sugar and some seasoning. Spread on a baking tray, drizzle with the vegetable oil and bake for 20 mins until tender.
  • Meanwhile, cook the rice following pack instructions until just cooked, then drain. Put back in the pan, add the beans and keep warm with a lid on.
  • In a small bowl, toss the avocado with the red onion, most of the coriander, remaining chipotle paste and lime juice, then season. Serve the rice and beans with the pork, avocado salsa, jalapeño, lime wedges and remaining coriander.

Mexican Fried Rice with a subtle sweet and smoky flavor of chipotle and the beautiful color of turmeric, gives the ultimate quick and easy lunch or side dish!

2 eggs
1 carrot, cut into matchsticks
1 small yellow onion, finely chopped
1/4 cup red bell pepper, 50g. semi finely chopped
1/2 cup frozen peas, 75g
2 cups leftover cold cooked rice, 500ml
1 tablespoon turmeric
1 tablespoon chipotle paste
1 teaspoon cumin
2 teaspoon garlic powder, divided
2 tablespoon soy sauce
salt and pepper, to taste, I used 1/4 teaspoon pepper and 1/2 teaspoon salt

Steps:

  • Mix eggs with 1/2 teaspoon garlic powder, salt and pepper. In a skillet on medium high heat, pour the eggs into the pan with a little oil. Make scrambled eggs by folding the eggs with a spatula, and set aside.
  • In the same pan fry carrot matchsticks, onion and bell pepper with chipotle paste and the rest of the spices. Fry for a couple of minutes, until vegetables reach your desired softness. I like to cook them for about 5 minutes. Add in rice and frozen peas*. Give it a good mix and then add in eggs. Pour over soy sauce. Taste and adjust seasoning with salt and pepper.
  • I like to serve this with avocado and a dollop of sour cream. Adding some crunchy tortilla chips and shredded Mexican cheese are also high on my list!
