If you can't decide between Mexican food and pizza, you should try this Mexican pizza! It's vegan, super easy to make, ands so comforting. Perfect for the whole family!

1 pizza dough (homemade or store-bought)
1 cup pizza sauce
1 teaspoon cumin
2 teaspoons paprika powder
salt, to taste
black pepper, to taste
1 cup veggie ground meat
1 cup canned kidney beans
1 cup corn (frozen or canned)
1/2 red bell pepper, sliced
1/2 green bell pepper, sliced
1/2 red onion, sliced
1/2 cup vegan cheese
1 green chili, sliced
1/2 cup vegan sour cream
red pepper flakes, to taste
1/2 cup fresh cilantro

Steps:

  • Make your pizza dough. You could use my recipe for a vegan pizza dough. Or use a store-bought one. Preheat the oven to 350 °F.
  • Roll out your pizza dough and place it on a baking tray lined with parchment paper. In a small bowl, combine the pizza sauce with the spices. Spoon the pizza sauce on top and evenly spread it out.
  • Now add the toppings. Start by adding the veggie ground meat, then the corn, the bell peppers, the red onion, and the kidney beans.
  • Top the pizza with vegan cheese.
  • Bake the pizza for 7-10 minutes at 350 °F. Keep the pizza in the middle of the oven, so the crust won't burn.
  • Top the pizza with vegan sour cream and sprinkle it with red pepper flakes, sliced green chili, and fresh cilantro. Serve immediately.

1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
1 tablespoon vegetable oil
4 (6 inch) corn tortillas
8 ounces shredded Cheddar cheese

2 roma (plum) tomatoes, chopped
2 green onion, chopped
1 (4 ounce) can diced green chiles, drained
½ avocado, diced
1 tablespoon black olives, sliced

Steps:

  • Heat the refried beans.
  • In a large skillet, brown the ground beef. Stir in the seasoning packet.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. 1 pound ground pork (or chorizo sausage , raw)
1 onion (chopped)
2 garlic cloves (minced)
1 tablespoon olive oil
1 (16-ounce) bottle taco sauce
1 (8-ounce) can tomato sauce
1 tablespoon chili powder
1/8 teaspoon cayenne pepper
1/4 teaspoon pepper
1 (4-ounce) can green chilies (drained)
2 (13.8-ounce) cans pizza dough (or enough pizza dough for 2 pizzas)
Cooking spray
4 cups Colby-Jack cheese (or Monterey Jack cheese, shredded)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F. Arrange the racks in the oven so they evenly divide the oven into thirds. You'll use both racks, rotating and moving the pizzas around as they cook.
  • In a large skillet, cook the pork with onion and garlic in olive oil over medium heat until the meat is browned, stirring to break up with a fork. Drain if necessary. If you are using chorizo, cook the onions until they are tender and then add the chorizo, cooking for a few minutes until the fat is rendered and the meat is well browned.
  • Add the taco sauce, tomato sauce, chili powder, cayenne pepper, and pepper to the onion mixture. Stir well, and simmer on low heat for 5 minutes to blend flavors.
  • Stir in drained green chiles.
  • Spray 2 cookie sheets with nonstick cooking spray and then spread the pizza crust dough onto the sheets.
  • Bake them for 5 to 8 minutes or until they are just set.
  • Spread the sauce evenly over both of the pizza crusts and top evenly with the shredded cheese.
  • Bake at 400 F for 20 to 25 minutes until cheese is melted, bubbly, and begins to brown. Halfway through the cooking time, swap the cookie sheets so they each have time on the upper and lower baking racks. This will help ensure an even bake on both pizzas. Make sure that the crusts are browned on the bottom and the pizzas have cooked evenly.
  • Slice, serve, and enjoy.

1 16 oz can low-fat refried beans (you may not need the entire can)
2 cups shredded rotisserie chicken
1/2 cup salsa
vegetable oil (or cooking spray)
8 flour tortillas (fajita or taco size)
1 10 oz can red enchilada sauce (you will only need about half a can)
8 ounces shredded Mexican blend cheese
2 green onions (thinly sliced)
2 Roma tomatoes (diced)

Steps:

  • Preheat oven to 350ºF.
  • Warm up beans in a small bowl in the microwave. Combine chicken and salsa in another bowl and warm it up in the microwave.
  • To toast the tortillas, either heat oil in a skillet and fry both sides of the tortilla, or spray both sides of tortilla with cooking spray and heat on skillet (my preferred method).
  • Lay four of the toasted tortillas on a large baking sheet. Spread with about 2 tablespoons of refried beans on each tortilla. Top with the salsa/chicken mixture, evenly dividing it among the four tortillas. Top with another toasted tortilla.
  • Spread a thin layer of enchilada sauce on the top of each tortilla. Sprinkle with shredded cheese, evenly dividing it among the four pizzas. Bake in preheated oven for 5-7 minutes, or until the cheese is melted.
  • Cut into triangles and serve immediately. Enjoy!

1/2 Teaspoon Kosher Salt
2 Teaspoons Xanthan Gum
1 Teaspoon Baking Soda
2 Teaspoons Apple Cider Vinegar
1 Egg (whole)

1 Tablespoon Mild Tasting Oil (see notes below)
1 Pound Ground Beef
4 Tablespoons Keto Taco Seasoning (or 1 (1.25-ounce) package taco seasoning)
4 Ounces Sharp Cheddar Cheese (shredded)
Tomato (sliced)
Olives (sliced)
Green Onions (sliced)
Sour Cream
Guacamole

Steps:

  • Preheat oven to 375 F.
  • Toss dry ingredients in the food processor, and pulse a few times to combine.
  • Add 2 teaspoons apple cider vinegar and 1 whole egg to the dry ingredients and pulse together until the dough forms into a ball.
  • Lay a sheet of parchment paper on your counter, and spray the top with cooking spray. Now, there are 2 ways you can form the pizza base. Keep in mind that the dough will be very sticky! So you'll want to use damp hands whenever you handle it.
  • OPTION 1 (creates "prettier" shapes. You will need a 5" bowl or cookie cutter): Press the ball into a disc and place it on the prepared parchment paper. Spray a second sheet of parchment and lay over the top of the dough. Use a rolling pin to roll dough until it's 1/4" thick. Then remove the top sheet of parchment, and place it in the center of your baking sheet. Use a 5" bowl to stamp the center of each tortilla. Remove the excess dough from the outside of the bowl. Transfer stamped tortillas to the prepared baking sheet.
  • OPTION 2 ("messier" looking, but tastes the same): Use damp hands to divide the dough into 6 balls. Flatten them into discs. Place each in the center of your prepared parchment paper and lay a second sheet of parchment sprayed with cooking spray over the top of the dough. Roll each ball using a rolling pin until it's 1/4" thick.
  • Bake in preheated oven for 5 minutes. Remove, flip the pizza base, and bake for another 4 minutes.
  • Meanwhile, heat the oil in a large pan over medium heat. Once shimmering, add the 1 Pound beef and break into small pieces with the back of your spoon as it cooks. Cook until no longer pink.
  • Remove pan from heat and push the beef to one side. Tilt the pan so the grease pools on the other side of the meat. Carefully use paper towels to remove excess grease.
  • Return pan back to medium heat, and stir in the taco seasoning. Cook until the seasoning becomes fragrant, as you stir to incorporate and coat the meat -- about 2-3 minutes.
  • Once the pizza base is done, divide the meat over the top of each pizza and sprinkle with cheese.
  • Bake in the oven for 3-5 minutes, or just until the cheese melts to your liking.
  • Cover with toppings, slice using a pizza cutter, and enjoy!
