½ pound ground beef
⅛ cup oats
1 tablespoon garlic powder
1 tablespoon onion powder
3 tablespoons chili powder
1 tablespoon smoked paprika
1 tablespoon cocoa powder
1 cup water
2 tablespoons cornstarch
1 10-ounce can of red enchilada sauce
1 teaspoon sugar
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon juice from a can of green diced chilies
2 tortilla shells
1 16-ounce can of refried beans
½ tomato, diced
¼ cup mozzarella cheese
¼ cup cheddar cheese
⅓ cup pepper jack cheese

Steps:

  • Cook the can of refried beans, according to label's instructions, set aside.
  • Combine all meat ingredients except cornstarch in a pan on medium-low heat.
  • Cook for 2-3 minutes, until done, then add cornstarch.
  • As it begins to bubble, reduce to simmer, and cook for two minutes until thickened, set aside.
  • In a separate pan, combine sauce ingredients. Cook at medium-low until heated thoroughly. Set aside.
  • Cook one tortilla shell in a pan at medium low for three minutes, set cooked shell aside. Repeat with second shell.
  • Spread refried beans on the second cooked shell while it's still in the pan.
  • Add one tablespoon of meat to the beans and spread evenly.
  • Place the first cooked shell on top of meat and bean mixture.
  • Spread the sauce on top of the top shell, almost to the edges.
  • Top with the cheese mix, followed by diced tomatoes.
  • Cover with a wet lid for about three minutes, until cheese is melted.
  • Cut into quarters, and serve. Enjoy!

1/3 cup Enchilada Sauce
1/3 cup Thick and Chunky Salsa
1 cup Shredded Cheddar Cheese
1 cup Shredded Monterey Jack Cheese
1/4 cup diced Tomatoes
1/4 cup slice Green Onion (green end)
1/4 cup Sliced Black Olives
Vegetable Oil for Frying

Steps:

  • Brown ground beef in a skillet.
  • Drain excess fat.
  • Add water and taco seasoning. Mix well.
  • Allow to simmer for 10 minutes on low.
  • Remove from heat.
  • Transfer taco meat to food processor and run until it is a fine consistency.
  • Heat Oil to 375 on stovetop.
  • Fry each tortilla for 30-45 seconds on each side and set on paper towels or paper bag to drain.
  • Preheat oven to 400.
  • Spread 1-2 tablespoons of beans on 4 tortillas.
  • Top beans with the meat mixture.
  • Top each of these with the remaining tortillas.
  • Top these tortillas with a blend of enchilada sauce and salsa.
  • Next add a mixture of the cheeses.
  • Then top with tomatoes and olives.
  • Optionally add green onion slices.
  • Bake in oven for 5-10 minutes or until cheese is melted.

1 (8 ounce) bag Mexican blend cheese
2 stalks green onions, chopped

Steps:

  • Prepare taco meat per package directions.
  • Warm refried beans.
  • Prepare a small amount of oil in pan to 375°F (do not put so much that it will cover the flour tortillas).
  • Cook flour tortilla's at 375°F for 30-45 seconds or until just golden brown.
  • Drain on paper towels.
  • Top on tortilla with a thin layer of refried beans.
  • Then top beans with a layer of taco meat.

10 oz. can diced tomatoes with mild green chilies, drained
1 lb. lean ground beef or ground turkey
8 oz. package taco seasoning
15 oz. can refried beans
8 oz. bag Mexican blend cheese
2 stalks green onions, chopped

Steps:

  • Prepare taco meat according to package directions. Warm refried beans. Preheat broiler. Pour a small amount of olive oil in a pan and heat to 375 degrees but do not put so much that it will cover the flour tortilla). 1 small onion, diced
2-3 cloves of garlic, minced
1 packet Taco Bell Taco Seasoning
Salt and Pepper to taste
1 (15 ounce can) Fat-Free refried beans, warmed
Salsa or taco sauce, your choice, we buy the Taco Bell Taco Sauce in a bottle
8 - 6" flour tortillas, soft taco size
2 cups Shredded Mexican Cheese, divided
tops of 4 Green Onions, sliced
4 Roma sized tomatoes, diced
Sliced black olives (optional)
Non-Stick Cooking Spray

Steps:

  • In a skillet brown your ground beef with onions and garlic, salt and pepper to taste, drain, add taco seasoning packet and 1/4 cup water and simmer for about 10 minutes.
  • Set Aside.
  • Spray a small skillet with non-stick cooking spray and place on the stove over medium heat.
  • Place a tortilla in the skillet and let it slightly brown, and flip it to do the other side
  • Place them on a paper towel until you're ready to "build" your pizzas.
  • We made 4 pizzas, so you will need 8 tortillas browned on both sides.
  • Now it's time to BUILD your pizzas.
  • Place about 1/3 cup of refried beans and top with about 1/2 cup beef mixture, spread to coat.
  • Top with other tortilla.
  • Place under broiler set on low for about 5 minutes.
  • Remove from oven.

1 package of taco seasoning
8 medium flour tortillas, plus vegetable oil for frying if you want a crispier pizza
2 cup refried beans
2 cup salsa
3 cups Mexican blend shredded cheese
1/2 cup sliced black olives
1 cup of Roma tomatoes, diced
4 green onions, sliced thin
sour cream and cilantro

Steps:

  • Preheat oven to 400 degrees F. Cook ground beef over a medium high heat. Once meats starts to brown, add in taco seasoning and water as indicated on the seasoning packet. Cook until meat is fully cooked through. Drain off any access fat.
  • NOTE: If you have extra time and don't mind a couple extra calories, you can fry each tortilla for 30-45 seconds on each side in vegetable oil. Make sure to drain off on a paper towel. This will give you a more of the taco bell crunch! If not, these still taste yummy with non-fried tortillas.
  • Line a baking sheet with aluminum foil, and spray with non stick cooking spray. Place 4 tortillas on baking sheet. Spread 1/2 cup refried beans evenly over four tortillas.

2 Roma tomatoes (diced finely)
2/3 c. shredded cheese (I used a blend of cheddar and monterrey jack)
2 green onions (sliced)
1/3 c. enchilada sauce
4 whole wheat tortillas (I like La Banderita Xtreme)
Cooking spray

Steps:

  • Preheat oven to 400 degrees. Grease a hot skillet or griddle with cooking spray and 'fry' the tortillas, flipping frequently so they don't burn. You want them to get nice and crispy. Remove fried tortillas to a plate.
  • Heat the refried beans so they are warm. Place 2 tortillas on a baking sheet. Spread 1/2 cup of refried beans onto each tortilla. Place remaining tortillas on top of beans.
  • Pour half of enchilada sauce on top of each tortilla and spread around.
  • Add half of the chopped tomato on top of the sauce. Add 1/3 cup of cheese on top of each tortilla. Add half of the green onions on top of the cheese.

4 oz Shredded Mexican Cheese
Pico de Gallo, for serving

Steps:

  • Preheat an oven to 400ºF and place 8 tostadas on a large baking sheet (or two baking sheets). Set aside.

Lightly press a second tortilla shell onto the beef and bean mixture. Top it with 2 tablespoons of the enchilada sauce and 2 tablespoons of the shredded cheese.
