Steps:
- Cook the can of refried beans, according to label's instructions, set aside.
- Combine all meat ingredients except cornstarch in a pan on medium-low heat.
- Cook for 2-3 minutes, until done, then add cornstarch.
- As it begins to bubble, reduce to simmer, and cook for two minutes until thickened, set aside.
- In a separate pan, combine sauce ingredients. Cook at medium-low until heated thoroughly. Set aside.
- Cook one tortilla shell in a pan at medium low for three minutes, set cooked shell aside. Repeat with second shell.
- Spread refried beans on the second cooked shell while it's still in the pan.
- Add one tablespoon of meat to the beans and spread evenly.
- Place the first cooked shell on top of meat and bean mixture.
- Spread the sauce on top of the top shell, almost to the edges.
- Top with the cheese mix, followed by diced tomatoes.
- Cover with a wet lid for about three minutes, until cheese is melted.
- Cut into quarters, and serve. Enjoy!

- Prepare taco meat per package directions.
- Warm refried beans.
- Prepare a small amount of oil in pan to 375°F (do not put so much that it will cover the flour tortillas).
- Cook flour tortilla's at 375°F for 30-45 seconds or until just golden brown.
- Drain on paper towels.
- Top on tortilla with a thin layer of refried beans.
- Then top beans with a layer of taco meat.
- Put another tortilla on top of the taco meat.
- Put red sauce on top of the tortilla.
- Put a few diced tomatoes and green chiles on top of red sauce.
- Top with the Mexican blend cheese.
- Finally top with a few chopped green onions.
- Put finished Mexican pizzas on cookie sheet and broil in oven until cheese is melted.
- Cut into fourths and serve.

- In a skillet brown your ground beef with onions and garlic, salt and pepper to taste, drain, add taco seasoning packet and 1/4 cup water and simmer for about 10 minutes.
- Set Aside.
- Spray a small skillet with non-stick cooking spray and place on the stove over medium heat.
- Place a tortilla in the skillet and let it slightly brown, and flip it to do the other side
- Place them on a paper towel until you're ready to "build" your pizzas.
- We made 4 pizzas, so you will need 8 tortillas browned on both sides.
- Now it's time to BUILD your pizzas.

- Preheat oven to 400 degrees F. Cook ground beef over a medium high heat. Once meats starts to brown, add in taco seasoning and water as indicated on the seasoning packet. Cook until meat is fully cooked through. Drain off any access fat.
- NOTE: If you have extra time and don't mind a couple extra calories, you can fry each tortilla for 30-45 seconds on each side in vegetable oil. Make sure to drain off on a paper towel. This will give you a more of the taco bell crunch! If not, these still taste yummy with non-fried tortillas.
- Line a baking sheet with aluminum foil, and spray with non stick cooking spray. Place 4 tortillas on baking sheet. Spread 1/2 cup refried beans evenly over four tortillas.
- Evenly spread meat over beans and then top with 1/4 cup cheese. Top cheese with 2-3 Tablespoons salsa.
- Place another tortilla on top, and spread another 2-3 Tablespoons of salsa over the top. Sprinkle 1/4 cup cheese over the salsa and arrange olives, tomatoes, and green onions over the cheese. Sprinkle another 1/4 cup cheese over the top of each pizza.

- Preheat oven to 400 degrees. Grease a hot skillet or griddle with cooking spray and 'fry' the tortillas, flipping frequently so they don't burn. You want them to get nice and crispy. Remove fried tortillas to a plate.
