2 tbsp Water
8 White Corn Tortillas
16 oz Refried Beans (Taco Bell Brand recommended)
1/3 cup Enchilada Sauce
1/3 cup Thick and Chunky Salsa
1 cup Shredded Cheddar Cheese
1 cup Shredded Monterey Jack Cheese
1/4 cup diced Tomatoes
1/4 cup slice Green Onion (green end)
1/4 cup Sliced Black Olives
Vegetable Oil for Frying

Steps:

  • Brown ground beef in a skillet.
  • Drain excess fat.
  • Add water and taco seasoning. Mix well.
  • Allow to simmer for 10 minutes on low.
  • Remove from heat.
  • Transfer taco meat to food processor and run until it is a fine consistency.
  • Heat Oil to 375 on stovetop.
  • Fry each tortilla for 30-45 seconds on each side and set on paper towels or paper bag to drain.
  • Preheat oven to 400.
  • Spread 1-2 tablespoons of beans on 4 tortillas.
  • Top beans with the meat mixture.
  • Top each of these with the remaining tortillas.
  • Top these tortillas with a blend of enchilada sauce and salsa.
  • Next add a mixture of the cheeses.
  • Then top with tomatoes and olives.
  • Optionally add green onion slices.
  • Bake in oven for 5-10 minutes or until cheese is melted.

20 corn tortillas
1 16 oz can refried beans
1 10 oz can red enchilada sauce

3 green onions (, chopped)

Steps:

  • Cook ground beef, crumbling it into small pieces with a wooden spoon as it cooks. Remove any grease.
  • Add taco seasoning and water and stir to combine.

¼ cup water
1 Tablespoon cornstarch
1/2 cup enchilada sauce
½ teaspoon sugar

1 teaspoon juice from diced green chilies
1/2 cup Cheddar (grated)
1/2 cup Mozzarella (grated)
1/2 cup Monterey Jack (grated)

Steps:

  • Preheat oven to 350 degrees.
  • Brown the beef in a pan over medium heat and drain any excess grease.
  • Add the oats and beef seasonings (except for the corn starch), and stir to combine. Heat until the water has reduced by half, about 5 minutes. Mix in the cornstarch and heat until thickened, about 3-4 minutes.
  • Remove from heat and set aside.
  • Spread the refried beans across the top of 4 tortillas, then top with the beef mixture and another tortilla.
  • Combine the enchilada sauce ingredients and spread on the top of each of the 4 tortillas. Top each with diced tomatoes and then with the 3-cheese blend.

1 teaspoon sugar
1 teaspoon garlic powder

1 teaspoon juice from a can of green diced chilies
2 tortilla shells
1 16-ounce can of refried beans
½ tomato, diced
¼ cup mozzarella cheese
¼ cup cheddar cheese
⅓ cup pepper jack cheese

Steps:

  • Cook the can of refried beans, according to label's instructions, set aside.
  • Combine all meat ingredients except cornstarch in a pan on medium-low heat.
  • Cook for 2-3 minutes, until done, then add cornstarch.
  • As it begins to bubble, reduce to simmer, and cook for two minutes until thickened, set aside.
  • In a separate pan, combine sauce ingredients. Cook at medium-low until heated thoroughly. Set aside.
  • Cook one tortilla shell in a pan at medium low for three minutes, set cooked shell aside. Repeat with second shell.
  • Spread refried beans on the second cooked shell while it's still in the pan.
  • Add one tablespoon of meat to the beans and spread evenly.
  • Place the first cooked shell on top of meat and bean mixture.
  • Spread the sauce on top of the top shell, almost to the edges.
  • Top with the cheese mix, followed by diced tomatoes.
  • Cover with a wet lid for about three minutes, until cheese is melted.
  • Cut into quarters, and serve. Enjoy!

1 recipe Taco Bell Sauce
14 ounces refried beans
12 ounces shredded cheese
1/2 cup tomatoes (chopped)
1/4 cup green onion (tops only, chopped)
vegetable oil (for frying)

Steps:

  • Heat about 1/2 inch of vegetable oil in a 10-inch skillet. Heat the oil to 350 degrees. When the oil is hot place 1 tortilla into the hot oil. Cook for about 30 to 60 seconds until the shell crisps.
  • When the tortilla is crispy, remove it from the oil and drain it on a wire rack.
  • Repeat with remaining tortillas.
  • Spread two tablespoons of refried beans onto six of the fried tortillas.
  • Sprinkle two tablespoons of seasoned and cooked ground beef over the refried beans.
  • Sprinkle 1 tablespoon of shredded cheese on top of the ground beef.
  • Add a fried tortilla to the top of the ground beef and cheese layer.

1 (15 ounce) can refried beans
1 (8 ounce) bag Mexican blend cheese
2 stalks green onions, chopped

Steps:

  • Prepare taco meat per package directions.
  • Warm refried beans.
  • Prepare a small amount of oil in pan to 375°F (do not put so much that it will cover the flour tortillas).
  • Cook flour tortilla's at 375°F for 30-45 seconds or until just golden brown.
  • Drain on paper towels.
  • Top on tortilla with a thin layer of refried beans.
  • Then top beans with a layer of taco meat.
  • Put another tortilla on top of the taco meat.

8 oz. package taco seasoning
15 oz. can refried beans
8 oz. bag Mexican blend cheese
2 stalks green onions, chopped

Steps:

  • Prepare taco meat according to package directions. Warm refried beans. Preheat broiler. Pour a small amount of olive oil in a pan and heat to 375 degrees but do not put so much that it will cover the flour tortilla). Cook tortilla's in the pan at 375 degrees for 30-45 seconds or until just golden brown. Drain on paper towels. ½ red (or orange/yellow) bell pepper (diced )
