- Heat a large, nonstick skillet over medium-high heat. Add the tortillas one at a time and cook for about two minutes, flipping halfway through, until it's golden brown and crispy on both sides. You can add a tablespoon of cooking oil to the pan to speed up the process, if you like. Set the tortilla aside and continue cooking until all the tortillas are crisp.
- Reheat the ground beef and refried beans separately in the microwave or on the stovetop, stirring frequently until the items are warmed through.
- Make the Mexican pizza by spreading about 1/4 cup of the refried beans on one tortilla shell. Top it with about 1/4 cup of the ground beef. Lightly press a second tortilla shell onto the beef and bean mixture. Top it with 2 tablespoons of the enchilada sauce and 2 tablespoons of the shredded cheese. If using, add 2 tablespoons of the diced tomatoes to the top of the pizza.
- Place the completed pizza on a baking sheet and assemble the remaining pizzas. Slide the baking sheet underneath the broiler and cook until the cheese is melted, about 1 minute. If you don't have a broiler, you can bake the pizzas in a 400 degree Fahrenheit oven for 8 to 10 minutes. Or, you can cook them one at a time over medium heat in a large skillet with a lid.
