Mexican Pizzas are delicious corn tortillas topped with beans, beef and all the delicious taco toppings you can imagine! They can be cut into wedges and served as an appetizer or left whole and served as a main dish.

1 (16 ounce) can refried beans
1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
1 tablespoon vegetable oil
4 (6 inch) corn tortillas
8 ounces shredded Cheddar cheese
8 tablespoons sour cream
2 roma (plum) tomatoes, chopped
2 green onion, chopped
1 (4 ounce) can diced green chiles, drained
½ avocado, diced
1 tablespoon black olives, sliced

Steps:

  • Heat the refried beans.
  • In a large skillet, brown the ground beef. Stir in the seasoning packet.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.
  • Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
  • Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.

1 (8 1/2 ounce) package 8-inch flour tortillas
1 (10 ounce) can enchilada sauce
1 (10 ounce) can diced tomatoes with mild green chilies
1 lb ground beef
1 (8 ounce) package taco seasoning
1 (15 ounce) can refried beans
1 (8 ounce) bag Mexican blend cheese
2 stalks green onions, chopped

Steps:

  • Prepare taco meat per package directions.
  • Warm refried beans.
  • Prepare a small amount of oil in pan to 375°F (do not put so much that it will cover the flour tortillas).
  • Cook flour tortilla's at 375°F for 30-45 seconds or until just golden brown.
  • Drain on paper towels.
  • Top on tortilla with a thin layer of refried beans.
  • Then top beans with a layer of taco meat.
  • Put another tortilla on top of the taco meat.
  • Put red sauce on top of the tortilla.
  • Put a few diced tomatoes and green chiles on top of red sauce.
  • Top with the Mexican blend cheese.
  • Finally top with a few chopped green onions.
  • Put finished Mexican pizzas on cookie sheet and broil in oven until cheese is melted.
  • Cut into fourths and serve.

1 pound lean ground beef
1 (1 ounce) package taco seasoning mix
⅔ cup water
2 (16 ounce) cans refried beans
4 (10 inch) flour tortillas
2 cups shredded Monterey Jack cheese
2 cups shredded Cheddar cheese
2 tablespoons sour cream
1 tomato, diced
1 avocado - peeled, pitted and sliced
1 (2 ounce) can sliced black olives
2 chopped green onions

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and stir in taco seasoning mix and water. Mix in the refried beans; set aside.
  • Spread the beef mixture evenly on two tortillas. Top each tortilla with a second tortilla. Place even amounts of Monterey Jack cheese and Cheddar cheese on top of the second tortillas. Place the tortillas onto a large baking sheet.
  • Bake in the preheated oven 10 minutes, or until cheeses are melted.
  • Remove from oven and top with sour cream, tomato, avocado, black olives and green onions. Cut each pizza into 8 wedges and serve warm.

1-1/4 to 1-1/2 cups all-purpose flour
1/3 cup cornmeal
1 package (1/4 ounce) active dry yeast
1 teaspoon salt
1/8 teaspoon sugar
1/4 cup water
1/4 cup fat-free milk
2 tablespoons olive oil
TOPPING:
1 cup salsa
3/4 cup canned black beans, rinsed and rained
2 cups cubed cooked chicken breast
1 small onion, thinly sliced
1 can (4 ounces) chopped green chilies
2 cups shredded reduced-fat Mexican cheese blend
1 medium tomato, seeded and chopped
1 jalapeno pepper, seeded and chopped
1 tablespoon minced fresh cilantro

Steps:

  • In a bowl, combine 1/2 cup flour, cornmeal, yeast, salt and sugar. In a saucepan, heat water, milk and oil to 120°-130°. Add to dry ingredients; beat until smooth. Beat in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. On a floured surface, roll dough into a 13-in. circle. Transfer to a 14-in. pizza pan coated with cooking spray; build up edges slightly. Prick dough several times with a fork. Bake at 400° for 8-10 minutes or until lightly browned. Spread salsa over crust. Top with the beans, chicken, onion, chilies, cheese, tomato, jalapeno and cilantro. Bake 12-15 minutes longer or until crust is golden brown and cheese is melted.

1/4 cup black beans, pureed
1/4 cup tomatoes, Sliced
1/4 cup bell pepper, Sliced
1/4 cup corn, canned
1/4 cup spinach leaves
1 teaspoon oregano
1/4 cup mango, sliced (pineapple works too)
1/2 cup salsa
1/4 cup Mexican blend cheese, shredded
1/4 cup cottage cheese

Steps:

  • Preheat oven to 350.
  • Slice tomatoes, bell peppers, and pineapples/mangoes.
  • Stack and bake tortillas at 350 for a few minutes or until crispy.
  • Using a food processor, puree black beans and spread on the tortilla, place spinach leaves on top of the beans and add pineapple/mango, sliced vegetables, corn and salsa.
  • Sprinkle cheese and oregano all over and put back in oven and bake for 10-12 minutes, or until cheese is melted and pizza heats up all over. Top with cool salsa and cottage cheese.

1 1/2 cups long grain white rice (*)
1/4 cup oil ((vegetable or canola oil))
1 teaspoon garlic (, minced)
1/4 medium onion (, finely diced)
1/4 cup tomato sauce (, or 2 pureed tomatoes*)
2 teaspoons tomato bouillon (granulated, or cubes*)
1/4 teaspoon salt
1 carrot (, diced)
1/2 cup peas ((frozen or fresh))
3 cups water
1-3 whole serrano peppers (, optional)

Steps:

  • Rinse the rice in a fine mesh strainer until the water runs clear. Set aside.
  • In a large saucepan over medium-high heat, add the oil. Once hot, add the rice and stir to combine. Cook over medium heat, stirring frequently, until the rice is lightly golden brown all over (about 10 minutes).
  • Add tomato sauce, garlic, and diced onion to the pan. Stir. Add tomato bullion, salt, carrots, peas, and water (and serrano peppers, if using. They add a little flavor, but not spice.).
  • Bring to a boil, then cover, reduce heat to low and cook for about 20 minutes or until the water is completely absorbed. Remove from heat and allow to rest for 5 minutes before fluffing with a fork.
