"PILE-ONS"

We call them "Pile-on's" because we pile everything on them! About 35 years or so...give or take a few, my sister had me over her house and they made these. I fell in love! My son asks for them on his birthday and I wanted them for my birthday dinner last night. That really tells you how good these are. Frying a flour tortilla makes all the difference for this wonderful crispy dish. They are so good and very easy to make. If you have a big crowd, I would strongly suggest this. It doesn't cost much, it's fast and easy, plus everyone is very very happy! "Enjoy"

MEXICAN BUILD-UP

Mexican Build-Up image

We have enjoyed this dish from the Denver Post since the '70's. It's a filling, versatile type of a taco salad and/ or burrito filling. The rice makes the sauce wonderfully thick. My kids really love it! I like to serve both corn chips, tortillas, little bowls of chopped lettuce, avocado, green onions, sliced black olives, shredded cheddar cheese, etc. and let each person BUILD-UP their own plate. (If you have some already cooked frozen ground beef (OAMC) this can be assembled quickly). Warning: this is so good you will overeat every time you make this meal (if you're anything like me!)
