MEXICAN MARTINI
Originally the Mexican Martini was just a large margarita in Austin, Tex. But the presentation calls for the margarita to be served in a martini glass, with olives on a spear. Because it is about twice as large as a regular drink, customers are usually given the cocktail shaker and invited to pour it themselves.

- Wet half the lip of a martini glass and dip it in salt. Chill the glass. Pour the liquid ingredients into a cocktail shaker and fill with ice. Shake vigorously for 10 seconds. Strain into the glass. Garnish with olives on a spear.

MEXICAN MARTINI
This is a sweet, creamy martini style sipper. Patron XO Cafe is a coffee flavored liquor made with tequila. Really quite tasty. I got a bottle as a gift from a wonderful friend and have been trying out some different drinks. The original recipe called for half and half but I find that too heavy most of the time and I enjoyed it better with milk. Don't leave off the cinnamon sugar, it really adds to the flavor of the drink. (***** Zaar wouldn't let me just call it Patron XO Cafe so I had to call it coffee flavored tequila.) Cheers!!!

Steps:
- set two flat plates on a counter.
- Pour simple syrup on one plate
- Pour salt on the other plate.
- Invert the martini glass and roll the lip in the simple syrup.
- Move the glass to the salt and roll the rim until a fine edge of salt completely coats the glass rim.
- Fill your cocktail shaker half full with ice
- Add the tequila, cointreau and juices all into your shaker.
- Shake vigorously 10 to 30 seconds until the shaker is very cold.
- Strain the drink into your salt rimmed martini glass.

- Moisten the edges of two martini glasses with a little lime juice, and then dip moistened edges into coarse salt. Place an olive in each glass.

- Mexican Hot Chocolate. Although I suppose you could add a dash of rum to it if you like, Mexican hot chocolate isn’t usually served with alcohol in it.
- Horchata. Call it horchata or call it rice water. Call it whatever you want to call it; this drink is delicious. Sweet, creamy, and milky, with just enough cinnamon to add spice, horchata goes with practically anything.
- Fruit Agua Frescas. These fresh, fruity frescas are a summertime favorite in my house. They taste like pure, undiluted fruit juice, and aside from a little sugar and water, that’s precisely what they are.
- Champurrado. Many people confuse champurrado with Mexican hot chocolate, and while they do share a base of chocolate and cinnamon, they’re two different things.
- Ponche. Ponche is one of my favorite fall drinks. I’m not sure if you’re actually supposed to serve it in the fall, but that’s when I love it most. It’s sort of like a hot fruit punch combined with warm apple cider.
- Carajillo. Also known as the coffee cocktail, carajillo requires only three ingredients – espresso, Licor 43, and ice cubes – and takes about 5 minutes to make once you brew your espresso.
- Atole. Atole is like the polar opposite of Mexican hot chocolate. In other words, it’s a hot, sweet, and cinnamony drink, but instead of chocolate, you’ll make it with vanilla.
