EASY MEXICAN CASSEROLE



Easy Mexican Casserole image

This is based on a recipe from the Allrecipes website submitted by AndreaLF63, which I made a few minor changes to suit our taste preferences such as adding a can of white corn and using canned diced tomatoes instead of fresh chopped tomatoes. But I look forward to making this again and trying some of the other changes that some of the reviewers suggested, like maybe adding some minced garlic or perhaps a diced jalapeno pepper or chopped bell pepper.

1 lb lean ground beef
2 cups salsa
1 (16 ounce) can chili beans, drained
1 (15 ounce) can corn
1 1/2 cups tortilla chips, crushed
2 cups light sour cream
1 (3 7/8 ounce) can sliced black olives, drained
3/4 cup chopped green onion
1 cup diced tomato (you can use 15-oz can diced tomatoes if drained well)
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350°F (175°C). Spray a 9x13 baking dish with nonstick cooking spray; set aside.
  • In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans and corn, and cook just until heated through.
  • Spread crushed tortilla chips in bottom of prepared baking dish, and then spoon beef mixture over chips. Spread sour cream over the beef layer, and then sprinkle olives, green onion, and tomato over the sour cream layer.
  • Bake in preheated 350° oven for 25 to 30 minutes. Top with cheddar cheese and return to oven to bake another 5 minutes or just until the cheese starts to melt.

2 tablespoons olive oil
2 cups diced fresh tomatoes (about 3 to 5)
1 onion, diced
3 cloves garlic, minced
4 teaspoons chili powder
2 teaspoons paprika
2 teaspoons ground cumin
1 large boneless, skinless chicken breast (about 12 ounces), cut into bite-size pieces
Kosher salt
1 15-ounce can pinto beans, drained and rinsed
1 15-ounce can kidney beans, drained and rinsed
1 16-ounce jar salsa verde
10 large (burrito-size) flour tortillas or 12 small flour or corn tortillas
2 cups cooked rice (from 2/3 cup dry)
1 11-ounce can corn kernels, drained
1 pound grated cheddar-jack cheese
1 1/2 cups red enchilada sauce
Sour cream and cilantro, for serving

Steps:

  • In a large skillet over medium-high heat, heat 1 tablespoon of the olive oil. Add the tomatoes, onion and garlic, stir and cook for a minute or two to soften the onion. Add 2 teaspoons of the chili powder, 1 teaspoon of the paprika and 1 teaspoon of the cumin. Stir and cook the mixture for another minute or two to release the flavors of the spices. Remove the mixture to a bowl and set aside.
  • In the same skillet, heat the remaining 1 tablespoon olive oil. Add the chicken along with the remaining 2 teaspoons chili powder, 1 teaspoon paprika, 1 teaspoon cumin and 1/2 teaspoon salt. Saute the chicken until it's deep golden brown and done in the middle, about 4 to 5 minutes. Add 1 cup water and stir to make a sauce. Bring the sauce to a boil and cook until it's reduced by half, about 3 to 4 minutes. Stir in the beans and set aside.
  • To assemble the casserole, pour half a jar (about 1 cup) of salsa verde into the bottom of a 9-by-13-inch casserole dish or disposable foil baking pan. Add a layer of half the tortillas on top of the salsa verde, overlapping the edges. Spoon the rice over the tortillas, spread the tomato mixture over the rice, then sprinkle the corn over the tomatoes. Next, add the chicken and bean mixture, then sprinkle on half the cheese and pour over half the enchilada sauce. Next, add the rest of the tortillas, then pour on the rest of the salsa verde and the rest of the enchilada sauce and sprinkle on the rest of the cheese.
  • If you're baking the casserole right away, preheat the oven to 375 degrees F and bake, covered with foil, for 20 minutes. Then remove the foil and continue baking for 15 to 20 minutes, or until hot and bubbly. Serve with sour cream and cilantro.

1 big jar medium pace picante sauce (unless you are in foul mood, then get hot!)
1 bag(s) tortilla chips
12 oz can, evaporated milk - or 2 cups anything, beer maybe?
1 large can chopped green chile (if pissed, use jalapenos)
2 can(s) cream of chicken soup
1 jar(s) mexican cheese dip
1 can(s) cheese dip with jalapenos (for a little more kick-ass)
2 c or more cooked chicken, diced (just buy a damned rotisserie chicken-you don't feel like cooking the friggin bird!)
10 tamales....shucked and chopped

Steps:

  • 1. DISCLAIMER: This is NOT a joke and it was yummy and I made it up on the spot. WARNING: There is NOTHING healthy about this dish! It will clog your arteries, pack on the pounds, it may even make you sick! The salt content alone is enough to make you retain water and raise your blood pressure.
  • 2. Disclaimer: Should be eaten during PMS, when you don't give a crap about calories and need real comfort food. Side Dishes: Pinto beans cooked with salt pork. Who cares if you stink up the house? It's YOUR house!
  • 3. Combine Picante sauce, milk, chili, soup, cheese, dips and chicken in a saucepan. Heat until it's mixed together nicely and the cheese is melted or you are feeling a little better. Smash a bunch of the tortilla chips in the bottom of a big pan (smashing things feels good today). Eat a few to make sure they are good. (Hint: might even want to dip one in that warm concoction on the stove.) Pour the rest of the bag of chips into the sauce mixture and mix together. Pour the whole thing over the tortilla chips and bake at 350 for about 35-40 minutes or until bubbly.
  • 4. Serve this with some sour cream and pinto beans cooked with salt pork.
  • 5. It will either make you happy or kill you.

2 cups cooked brown rice (or quinoa or other grain of choice-about 2/3 cup uncooked)
1 tablespoon olive oil
1 yellow onion (chopped)
1 green bell pepper (chopped)
1 red bell pepper (chopped)
1 pound lean ground beef (or swap ground chicken or ground turkey)
2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
2 cloves minced garlic (about 2 teaspoons)
1 cup plain nonfat Greek yogurt
1 can reduced fat refried black beans (15 ounces)
3/4 cup freshly grated sharp cheddar cheese (divided)
3/4 cup freshly grated mozzarella cheese (divided)
1 10-ounce tomatoes with green chiles (such as Rotel)
Fresh cilantro (for serving)
Chopped green onions (for serving)

Steps:

  • Be sure to cook your rice if you haven't already (if you are just reading this and just now realized you don't have any cooked rice and don't want to wait, consider switching to quinoa, which cooks much more quickly than brown rice. Instant brown rice also works in a pinch).
  • Preheat the oven to 350 degrees F. Coat a large casserole dish (9x13 inch or similar) with nonstick spray and set aside.
  • In a Dutch oven or large, deep skillet, heat the olive oil over medium high. Add the onion, green bell pepper, and red bell pepper. Sauté until slightly softened, about 5 minutes.
  • Add the beef, chili powder, cumin, salt, black pepper, and cayenne pepper. Continue to sauté until the beef is cooked through and no longer pink, about 4 to 5 minutes. Add the garlic and cook just until fragrant, about 1 additional minute.
  • Remove from the heat. Stir in the rice and Greek yogurt until evenly combined. Taste and adjust seasoning as desired.
  • Assemble the casserole: Spread the beans into an even layer in the prepared baking dish.
  • Sprinkle 1/4 cup cheddar cheese and 1/4 cup mozzarella cheese over the beans.
  • Scatter the tomatoes with green chilis over the top.
  • Spoon the rice and ground beef mixture on top of the tomatoes, spreading it into an even layer.
  • Top with remaining 1/2 cup cheddar and 1/2 cupmozzarella.
  • Bake the casserole, uncovered, until the cheese is melted and the casserole is hot, about 15 minutes.
  • Turn the oven to broil, then continue cooking until the cheese is lightly browned, about 3 to 4 additional minutes, watching carefully so that the cheese does not burn.
  • Let rest 5 minutes, sprinkle with chopped cilantro and green onions, and serve.

1 lb hamburger meat
2 (1/4 ounce) cans cream of chicken soup
2 (10 3/4 ounce) cans cream of mushroom soup
2 (19 ounce) cans red enchilada sauce (mild or hot use your own judgment on how hot you like it) or 2 (19 ounce) cans green enchilada sauce (mild or hot use your own judgment on how hot you like it)
2 -3 onions, chopped
1 (8 ounce) can mushrooms, diced ones, 1-2 cans (or chopped)
2 -6 jalapeno peppers, chopped (there again use your own judgment or use your choice of your favorite pepper)
1 (8 ounce) bag cheese
1 (20 ounce) bag flour tortillas (depending on how much you want to make)

Steps:

  • Note: Brown ground hamburger meat in a big pot with your onions and jalapeno peppers and mushrooms. Drain off grease.
  • Take your flour tortillas and tear into 1/4 and place into a long casserole baking dish and then you put your mixture over the flour tortillas and then put your cheese over that, then just keep on layering it till its all gone.
  • Then place into the oven to melt the cheese and get hot, I put mine into a 350°F oven and just check on it to see if its the way you like it to be.
  • This is a good recipe to fix.
