MEXICAN HOLIDAY BRUNCH QUICHE WITH CRISPY POTATO CRUST
Ready, Set, Cook! Special Edition Contest Entry: I love the unique flavor of chorizo and it goes perfectly with potatoes. I came up with this fabulous quiche while dreaming of a Mexican holiday. I didn't get the vacation but this delightful brunch dish is perfect for an at-home fiesta! Any breakfast sausage can be substituted for the chorizo. You may also substitute any mild white cheese for the Mexican cheese. Ole!!

Steps:
- Preheat oven to 400°F.
- Combine all crust ingredients in a medium mixing bowl. Stir until well combined. Spray a nine inch springform pan generously with cooking spray. Press crust ingredients firmly into the bottom of the pan. Bake for twenty minutes or until a beautiful golden brown, Reduce oven to 325°F.
- Meanwhile, place bacon in a medium non -stick skillet on medium heat. Remove chorizo from casings, crumble and add to bacon. Fry until well cooked, about eight minutes. Add bell pepper and green onion and cook until soft, another two minutes. Stir in chiles, sun dried tomatoes, salt, and cayenne. Turn off heat, cover, and allow to sit for five minutes.
- Drain any excess fat from mixture. Crumble or chop bacon. Return bacon to chorizo mixture and stir. Transfer mixture to potato crust and spread evenly. Sprinkle top with cheese.
- Combine eggs and milk in a medium mixing bowl. Whisk until frothy and pour over chorizo mixture. Bake until set, about fifty minutes.
- Allow to rest for five minutes while making sauce.
- Combine sour cream with cilantro in a small mixing bowl and stir well.
- Carefully run a table knife around edge of quiche. Remove from pan and place on a festive platter. Sprinkle with chopped green onion tops. Serve with sour cream sauce and enjoy!

- Line unpricked pastry shells with a double thickness of heavy-duty foil. Bake at 400° for 5 minutes. Remove foil; bake 5 minutes longer., Sprinkle chili powder and cumin over shells; sprinkle with cheeses. In a large bowl, whisk the eggs, cream, chilies, olives, onions, cilantro, salt and pepper. Pour evenly over cheese. , Cover and freeze one quiche for up to 3 months. Cover edges of remaining quiche loosely with foil; place on a baking sheet. Bake at 400° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting. Serve with salsa and sour cream if desired. , To use frozen quiche: Remove from the freezer 30 minutes before baking (do not thaw). Cover edges of crust loosely with foil; place on a baking sheet. - Preheat oven to 400 degrees.
- Lightly grease a 9-inch glass or ceramic pie dish with 1/4 teaspoon oil. Toss potatoes with 1 teaspoon oil and 1/8 teaspoon each salt and pepper. Press into an even layer in pie dish, up the sides like a crust. Bake until golden brown at the edges and dry, about 20 minutes. Let cool.
- Lower the oven to 325 degrees. Heat 1 teaspoon oil in a large skillet, preferably nonstick, over medium heat. Add onion and cook until softened and golden, about 5 minutes. Add remaining teaspoon oil and mushrooms and cook, stirring, until mushrooms release their liquid and most of the liquid evaporates, about 8 minutes. Add spinach and 1/4 teaspoon each salt and pepper, and cook, stirring, just until spinach wilts, about 30 seconds. Let cool slightly.
- Whisk together eggs, milk and remaining 1/8 teaspoon salt and pepper. Spread the mushroom mixture in an even layer in the pie dish, and top with an even layer of the cheese. Carefully pour in egg mixture. Bake until firm around the edges but still wobbly in the center, about 20 minutes. Let cool, and serve warm or at room temperature.
POBLANO ENCHILADA QUICHE

- Preheat the oven to 400 degrees F. Whisk the eggs, heavy cream, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Heat 1 tablespoon olive oil in a large nonstick skillet over high heat. Add the poblano, season with 1/4 teaspoon salt and cook until charred in spots, 5 to 8 minutes. Add to the egg mixture along with the scallions and all but 2 tablespoons of the cheese; stir to combine.
- Pour the enchilada sauce into the skillet and heat until bubbling; remove from the heat. Using tongs, dip the whole tortilla in the sauce until coated. Place in a 9-inch pie plate. Dip the tortilla halves in the sauce and arrange around the sides of the pie plate, with the rounded edge up. Reserve the remaining sauce.
- Pour the egg mixture into the tortilla crust, sprinkle evenly with the reserved 2 tablespoons cheese and drizzle with 3 tablespoons of the remaining enchilada sauce. Bake until golden, slightly puffed and set, about 25 minutes.
- Meanwhile, peel the jicama and cut into matchsticks. Toss with the lime juice, cilantro, remaining 2 tablespoons olive oil and 1/4 cup water in a bowl; season with salt and pepper. Reheat the remaining enchilada sauce over medium-low heat, thinning with a couple tablespoons of water if necessary. Cut the quiche into wedges and drizzle with the sauce. Serve with the jicama.

BROCCOLI QUICHE IN POTATO CRUST
Very easy to throw together! We used to travel around the country in a beat up old motorhome, and this was a good dinner for us, as it doesn't take much kitchen space or much cleanup. It's from Secrets of Fat-Free Cooking, but I hate nonfat cheddar cheese and use lowfat instead. The original recipe called for 1 1/2 teaspoons of mustard, but we thought that was totally overpowering, and cut it way back. This one certainly leaves room for some playing around-you could change the vegetable or add your favorite herbs or spices, but we eat it just the way it is. Hope you enjoy!

- Combine all of the ingredients except for the potatoes in a large bowl, and stir to mix well. Set aside.
- Coat a 9 inch deep-dish pie pan with cooking spray.

- Fit hash browns into greased 10-inch pie plate, forming a solid crust.
- Brush crust with melted butter, making certain to brush top edges.

- Preheat the oven to 400°F (200°C).
- Peel the potatoes, then thinly slice a knife or mandoline.
- Add the sliced potatoes to a large bowl and drizzle with the olive oil, 1 teaspoon of salt, ¼ teaspoon of pepper, and the Parmesan and toss with your hands or a spoon to coat.

- Preheat the oven to 425 degrees. Line a nine- or 10-inch pie plate with the pastry.
- Bring enough water to the boil to cover the shrimp when they are added. Add the shrimp and cook two minutes. Drain.
- Chop eight of the shrimp into small pieces. Keep the remaining shrimp whole and set aside.
- Scatter the chopped shrimp over the bottom of the pastry. Cover the shrimp with layers of chopped green chilies and the grated cheese.
- In a mixing bowl, combine the cream, eggs, chives and salt and beat to blend. Pour the mixture into the pie shell.
- Place the dish in the oven and bake 15 minutes. Reduce the oven heat to 300 degrees and continue baking 35 minutes or until the filling is set.
- Remove the pie from the oven and let rest 15 minutes. Spoon six dollops of sour cream in a circle about halfway between the center of the pie and the crust. Dip each of the remaining shrimp in the taco sauce or tomato and Serrano chile sauce and arrange one shrimp on each dollop of sour cream. Cut into six wedges and serve warm.
