MEXICAN HASSELBACK POTATO

Mexican Hasselback Potato image

Old El Paso™ original taco seasoning mix adds a Mexican flair to this tasty hasselback potato.

Provided by Cindy Rahe

Categories     Entree

Time 1h15m

Yield 1

Number Of Ingredients 4

1 large russet potato
2 tablespoons unsalted butter, melted
2 teaspoons Old El Paso™ original taco seasoning mix (from 1-oz package)
Sour cream, chopped tomatoes, chopped fresh cilantro, hot sauce, as desired

Steps:

  • Heat oven to 425°F. Line cookie sheet with foil. Scrub potato well with stiff-bristled brush, and rinse.
  • Place two chopsticks or two wooden spoon handles parallel to each other a few inches apart. Place potato, widest side down, between chopsticks. Use sharp knife to cut deep slits, about 1/4-inch apart, crosswise into potato, cutting most of the way down, but not all the way through, using chopsticks as a guide. In small bowl, stir melted butter and taco seasoning mix together. Brush potato all over with spiced butter, making sure to get some butter into cuts. Place on cookie sheet.
  • Bake about 1 hour or until potato is tender throughout. The cuts in the potato should open like an accordion. Brush with additional butter, making sure each cut gets buttered. Bake 5 minutes. Serve with any toppings you like.

HASSELBACK POTATOES

Categories     side-dish

Time 1h25m

Yield 2 potatoes

Number Of Ingredients 5

2 large Yukon Gold potatoes
4 tablespoons unsalted butter, melted
2 teaspoons fresh thyme leaves
Fine sea salt and freshly ground black pepper
2 tablespoons grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F. Scrub the potatoes and pat them dry.
  • Place 2 chopsticks along either long side of a potato. Using a long paring or chef's knife, score the potato down to the chopsticks (the chopsticks act as a stopgap, keeping you from cutting all the way through the potato). Cut slits 1/8 inch apart all the way down the length of the potato. Repeat with the second potato.
  • Place the potatoes on a baking dish and brush with half the butter and sprinkle with some of the thyme and salt and pepper.
  • Bake for 35 to 40 minutes, brush with the remaining butter and continue baking until cooked through, about 30 minutes more. Sprinkle with more thyme and the Parmesan and bake for 5 minutes more before serving.

Loaded Hasselback Potato Recipe by Tasty image

Here's what you need: chopsticks, medium potatoes, butter, salt, pepper, cheddar cheeses, sour cream, bacon, green onion

Provided by Alvin Zhou

Categories     Sides

Yield 2 servings

Number Of Ingredients 9

2 chopsticks
2 medium potatoes
2 tablespoons butter, melted
salt, to taste
pepper, to taste
6 cheddar cheeses, slices, cut into 1-inch squares
¼ cup sour cream
2 slices bacon, cooked and crumbled
2 tablespoons green onion, sliced

Steps:

  • Preheat oven to 425°F (220°C).
  • Lay 2 chopsticks about 2-3 inches apart on a cutting board.
  • Place a potato lengthwise between the chopsticks, making sure the potato touches the cutting board.
  • Make ¼-inch slices across the potato, making sure you do not cut through the bottom of the potato. The chopsticks will help serve as a bumper of sorts to prevent this from happening. Repeat with the second potato.
  • Transfer the potatoes to a baking sheet lined with parchment paper, then brush the butter evenly on both of the potatoes.
  • Sprinkle a bit of salt and pepper on top of the potatoes, then bake for about 30 minutes until the slices of each potato have started to separate and crisp up. To have a better separation between the slices, pull the slices apart before they are baked.
  • Remove the potatoes and lower the oven heat to 350°F (180°C).
  • Place a square of cheddar cheese in between the slits in the potatoes, then return to the oven and bake for about 10 minutes, until the cheese is melted and starting to bubble.
  • Garnish each potato with a dollop of sour cream, bacon, and green onions.
  • Serve and enjoy!

HASSELBACK SWEET POTATO WITH PECAN STREUSEL

Hasselback Sweet Potato with Pecan Streusel image

Sweet potatoes come in different colors, from white to yellow to orange to orange-red. The darker the inside, the sweeter it is. I chose white because I was adding maple syrup and brown sugar, but any sweet potato will do.

1 tablespoon unsalted butter, melted
½ teaspoon maple syrup

CAPRESE HASSELBACK POTATOES

Caprese Hasselback Potatoes image

Is there truly a better salad than one that is stuffed between layers of crispy tater?

Provided by Jonathan Charbz

Categories     Potato Side Dishes

Time 1h15m

Yield 4

Number Of Ingredients 11

4 large long russet potatoes, scrubbed and patted dry
⅓ cup extra-virgin olive oil, or more to taste
1 teaspoon garlic powder
1 teaspoon Italian seasoning
¾ teaspoon red pepper flakes, or to taste
sea salt and freshly cracked black pepper to taste
4 medium vine-ripened tomatoes, thinly sliced
1 (8 ounce) container small fresh mozzarella balls (bocconcini), thinly sliced
¼ cup fresh basil leaves, or to taste
2 tablespoons balsamic glaze, or to taste
2 tablespoons finely grated Grana Padano cheese

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Set potatoes on a cutting board. Starting from one end, cut slices that are roughly 1/4-inch thick into each potato, stopping about 1/2-inch from the bottom to keep potato slices connected. Transfer prepared potatoes to a baking sheet.
  • Stir together olive oil, garlic powder, Italian seasoning, and red pepper flakes in a small bowl. Brush olive oil mixture onto the potatoes using a basting brush, making sure to coat the outer sides and in between the slices. Season liberally with sea salt. Set aside remaining oil mixture.
  • Bake potatoes in the preheated oven for 25 minutes. Remove from the oven and brush once again with remaining oil. By now the potatoes will have opened a bit, allowing for more oil to slip between the slices. Sprinkle a little more sea salt onto each potato, making sure to sprinkle salt in the slices.
  • Return to the oven and bake until potatoes are cooked through, 25 to 30 more minutes. Remove from the oven and let cool for 5 minutes. Leave oven on.
  • Leave a few potato slices unstuffed on both ends of each potato, starting somewhere about 1/4 of the way through the potato. Start by slipping a tomato slice in between your first 2 slices of potato, skip 2 slices, and stuff the next slice with mozzarella cheese and a fresh basil leaf. Skip 2 more, add a tomato slice, and continue alternating tomato and mozzarella cheese/basil leaf until you reach the other end of the potato. Continue until all potatoes have been stuffed. Season each potato with sea salt and cracked pepper.
  • Return potatoes to the oven and bake until mozzarella has melted, about 5 minutes.
  • Drizzle with balsamic glaze, sprinkle with grated Grana Padano cheese, and garnish with fresh basil.

  • 1. Preheat oven to 425ºF. Combine oil, ancho chili powder, cumin, garlic and 1 tablespoon of the lime zest. Set aside.
  • 2. Set up two wooden kitchen spoons parallel to each other about two inches apart on a non-slip cutting board mat (or use a wet towel to anchor your board). Using a large kitchen knife, make slices in the potato about 1/4-inch apart, using the spoons to keep the knife from sliding all the way through the potato. Repeat with all the potatoes.
  • 3. Brush the potatoes with oil (saving at least half of the oil), place on a foil-lined baking sheet or oven-safe pan and sprinkle with salt and pepper. (We like to use a large cast iron skillet with large, course rock salt on the bottom to nestle the potatoes in for a great presentation).
  • 4. Place potatoes in the oven and bake for 30 minutes. Remove and brush with more oil, using a paring knife to open up the slices and get the oil down into the crevices. Put the potatoes back in the oven and cook for another 30-45 minutes or until cooked through.
