HALIBUT VERACRUZ

3 tablespoons vegetable oil
1 cup thinly sliced yellow onion
3 cloves garlic, thinly sliced
2 cups diced tomato
1 medium jalapeno, diced
1 cup dry white wine
2 tablespoons butter
4 (8-ounce) halibut fillets
1 teaspoon kosher salt
1/2 cup Spanish olives, cut into thin rounds, plus 2 tablespoons olive juice from bottle
2 medium avocados, peeled and sliced
2 tablespoons fresh lime juice
2 tablespoons freshly chopped cilantro leaves

Steps:

  • Preheat oven to 350 degrees F.
  • Heat oil in a medium skillet over medium heat. Add onion and garlic, and cook until lightly colored, about 3 minutes. Add tomato, jalapeno and white wine. Cook until wine is reduced by 2/3, about 5 to 7 minutes. While sauce is reducing, heat butter in a separate skillet over medium heat. Season fish with kosher salt. When butter is melted, add halibut to the pan. Cook for 2 minutes, flip over and then transfer pan to preheated oven and bake until cooked through, about 10 minutes. Remove sauce from heat when reduced and stir in olives and olive juice.
  • To serve, divide sauce equally among 4 dinner plates. Place halibut (first caramelized side up) in the center of each plate on top of the sauce. Place avocado slices on top of fish, sprinkle with lime juice and cilantro, as garnish.

This fish will just melt in your mouth! I like to serve over a quinoa-kale salad. Also, please don't use regular bread crumbs as they are too dense.

½ cup panko bread crumbs
1 ½ tablespoons butter, melted
¼ cup chicken stock, or as needed
2 (8 ounce) fillets halibut
1 teaspoon lemon juice
salt and ground black pepper to taste
1 tablespoon Dijon mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir panko bread crumbs and melted butter together in a bowl until evenly coated.
  • Pour enough chicken stock into an oven-proof skillet to cover bottom; arrange halibut fillets in skillet. Drizzle lemon juice over fillets; season with salt and pepper. Spread a think layer of Dijon mustard over each fillet; press bread crumb mixture over mustard layer.
  • Place skillet in the preheated oven and cook until fillets flake easily with a fork and topping is browned, about 20 minutes.

¼ cup butter, melted
2 pounds skinless halibut fillets
lemon pepper to taste
¾ cup salsa
¾ cup mayonnaise
¾ cup sour cream
1 tablespoon garlic oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour the butter in the bottom of a baking dish. Arrange the halibut fillets in the dish, and season with lemon pepper.
  • In a bowl, mix the salsa, mayonnaise, sour cream, and garlic oil. Spoon over the halibut fillets.
  • Bake halibut 30 minutes in the preheated oven, or until easily flaked with a fork.

1 lb halibut fillet (4 to 6 oz each)
1/3 cup lime juice
3 garlic cloves, minced
1 tablespoon oil
1/4 cup beer
1 tablespoon fresh parsley, chopped
1/2 teaspoon cumin
2 teaspoons Dijon mustard
1 cup salsa
1 cup shredded cheddar cheese

Steps:

  • Combine lime juice, garlic,oil, beer, parsley, cumin, and mustard. mix together.
  • Place halibut in marinate for 1 hour. Drain.
  • Place halibut fillets on a oiled cookies sheet. Bake at 350°F for 15 minutes.
  • Drain off liquid, and put salsa on top of halibut fillets and bake 10 more minutes.
  • Top with cheddar cheese and bake until cheese is melted.

5 ripe tomatoes
1/2 cup finely chopped onion
1/4 cup vegetable oil, divided
2 garlic cloves, minced
1 1/2 teaspoons seeded and minced serrano chilies (more if wanted)
1/4 cup sliced Spanish olives (stuffed with pimentos)
2 tablespoons capers
1/4 teaspoon dried oregano
6 halibut fillets (6 oz each)
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
2 teaspoons unsalted butter

Steps:

  • Place tomatoes on a large rimmed baking sheet; bake at 450°F for 20 minutes.
  • Turn tomatoes; bake 20 more minutes or until skins are blistered and lightly browned.
  • Pulse tomatoes and pan juices in a food processor until roughly chopped.
  • Sauté onion in 2 tablespoons hot oil in a large skillet over medium-high heat 3 minutes or until tender.
  • Add garlic and serrano; sauté 15 seconds; adding olives, capers, and chopped tomatoes; bring to a boil.
  • Reduce heat, and simmer 5 minutes.
  • Remove from heat; stir in oregano.
  • Sprinkle halibut with salt and pepper.
  • Melt butter with remaining 2 tablespoons oil in a large skillet over medium-high heat.
  • Add halibut; cook 5 minutes on each side or until fish flakes easily with a fork.
  • Serve with sauce, fluffy white rice and a green vegetable.

1 tsp olive oil
1 large clove garlic, minced
2 tsp lemon zest

Steps:

  • Preheat oven to 400°F. In a large nonstick baking dish, add halibut skin side down and drizzle with oil. Top with garlic, parsley, lemon zest and 2 tbsp lemon juice, dividing evenly. I found this recipe in a magazine one time just before Cinco de Mayo and it has since become a family favorite. Sometimes I flake the halibut and serve as fish tacos in warm tortillas. Any kind of firm white fish will do if you don't happen to have halibut.

- 1 1/2 lbs. halibut fillets (cut into 4 - 6 pieces)
- 1 large fresh tomato, seeded and chopped
- 2 tbsp. fresh lime juice
- 1/8 tsp. ground cumin
- 1/8 tsp. cayenne pepper
- 4 green onions, sliced thin
- 1 clove garlic, minced
- 1/4 tsp. salt
- 1 tbsp. fresh cilantro or parsley, chopped (garnish)
- 1 lemon, sliced or cut into wedges (for serving)

Steps:

  • Preheat oven to 350º.
  • Cut halibut fillets into four - six serving pieces. Place in single layer in a 9" x 13" baking dish.
  • In a small bowl combine chopped tomato, lime juice, ground cumin, cayenne pepper, sliced green onions, minced garlic and salt. Mix well and pour over fish.
  • Cover and bake for 20 - 25 mins. Fish should flake easily when tested with a fork.
  • Remove from baking dish; place on warm serving platter. Pour sauce over top. Sprinkle with chopped cilantro or chopped parsley.
  • Serve with wedge of lemon. Great with steamed rice.
