HALIBUT VERACRUZ
Steps:
- Preheat oven to 350 degrees F.
- Heat oil in a medium skillet over medium heat. Add onion and garlic, and cook until lightly colored, about 3 minutes. Add tomato, jalapeno and white wine. Cook until wine is reduced by 2/3, about 5 to 7 minutes. While sauce is reducing, heat butter in a separate skillet over medium heat. Season fish with kosher salt. When butter is melted, add halibut to the pan. Cook for 2 minutes, flip over and then transfer pan to preheated oven and bake until cooked through, about 10 minutes. Remove sauce from heat when reduced and stir in olives and olive juice.
- To serve, divide sauce equally among 4 dinner plates. Place halibut (first caramelized side up) in the center of each plate on top of the sauce. Place avocado slices on top of fish, sprinkle with lime juice and cilantro, as garnish.
BAKED HALIBUT WITH CRISPY PANKO
This fish will just melt in your mouth! I like to serve over a quinoa-kale salad. Also, please don't use regular bread crumbs as they are too dense.

- Preheat oven to 350 degrees F (175 degrees C).
- Stir panko bread crumbs and melted butter together in a bowl until evenly coated.
- Pour enough chicken stock into an oven-proof skillet to cover bottom; arrange halibut fillets in skillet. Drizzle lemon juice over fillets; season with salt and pepper. Spread a think layer of Dijon mustard over each fillet; press bread crumb mixture over mustard layer.
- Place skillet in the preheated oven and cook until fillets flake easily with a fork and topping is browned, about 20 minutes.

- Pour the butter in the bottom of a baking dish. Arrange the halibut fillets in the dish, and season with lemon pepper.

- Combine lime juice, garlic,oil, beer, parsley, cumin, and mustard. mix together.
- Place halibut in marinate for 1 hour. Drain.
- Place halibut fillets on a oiled cookies sheet. Bake at 350°F for 15 minutes.
- Drain off liquid, and put salsa on top of halibut fillets and bake 10 more minutes.
- Top with cheddar cheese and bake until cheese is melted.

- Place tomatoes on a large rimmed baking sheet; bake at 450°F for 20 minutes.
- Turn tomatoes; bake 20 more minutes or until skins are blistered and lightly browned.
- Pulse tomatoes and pan juices in a food processor until roughly chopped.
- Sauté onion in 2 tablespoons hot oil in a large skillet over medium-high heat 3 minutes or until tender.

MEXICAN BAKED HALIBUT
Serve with rice, black beans, warm tortillas, and Margaritas for a healthy, festive, Mexican meal! I found this recipe in a magazine one time just before Cinco de Mayo and it has since become a family favorite. Sometimes I flake the halibut and serve as fish tacos in warm tortillas. Any kind of firm white fish will do if you don't happen to have halibut.

- Preheat oven to 350º.
- Cut halibut fillets into four - six serving pieces. Place in single layer in a 9" x 13" baking dish.
- In a small bowl combine chopped tomato, lime juice, ground cumin, cayenne pepper, sliced green onions, minced garlic and salt. Mix well and pour over fish.
- Cover and bake for 20 - 25 mins. Fish should flake easily when tested with a fork.
- Remove from baking dish; place on warm serving platter. Pour sauce over top. Sprinkle with chopped cilantro or chopped parsley.
- Serve with wedge of lemon. Great with steamed rice.
