Green Goddess Salad Dressing (Dairy-Free) image

This is my adaptation of a recipe my great aunt has been making for years. I love the combination of herbs in this dressing. The original recipe called for tarragon wine vinegar, so if you happen to have that on hand feel free to use it in place of the white vinegar and omit the fresh tarragon. Not only does this dressing taste great on salads, but it's also a key ingredient in another of my aunt's delicious dishes, her Tuna Salad Bake (recipe #83226)!

Number Of Ingredients 10

1 cup light mayonnaise
1/2 cup plain soy yogurt (I prefer Whole Soy)
1/2 cup finely minced parsley
1/4-1/2 cup finely minced fresh tarragon
3 tablespoons finely minced chives or 3 tablespoons green onions
3 tablespoons anchovy paste or 3 tablespoons finely minced anchovies (optional-I omit! Yuck!)
3 tablespoons white vinegar
1 tablespoon lemon juice
1 clove garlic, crushed or grated
salt & freshly ground black pepper

Steps:

  • Combine all ingredients.
  • Chill; it mellows and thickens on standing.

  • Soak cashews in very hot water for 15-20 minutes, then drain. This step is optional if you have a powerful blender (we find raw cashews blend well in high-speed blenders).
  • To a small blender, add all ingredients and blend on high for 1-2 minutes or until smooth and creamy.
  • Taste and adjust flavor as needed, adding more salt to taste, lemon juice for acidity, or herbs for more herbal flavor. Coconut aminos enhance umami flavor / saltiness. If too thick, add slightly more water. If too thin or strong, add more cashews.
  • Enjoy on salads, in bowls, or as a dip for raw or roasted veggies. Best when fresh. Store leftovers in a sealed container in the fridge up to 3-4 days. Not freezer friendly.

  • Remove husk from tomatillos and rinse to remove any sticky residue. Bring water to boil in a pot, add tomatillos and boil for 4-5 minutes. Remove from boiling water, rinse with cold water and allow to cool for a few minutes.
  • Add cooled tomatillos, avocado, garlic, jalapeño, salt, white balsamic vinegar and lime juice into a high-powered blender or food processor and blend until everything is incorporated and dressing is relatively smooth. Add cilantro leaves and process a few seconds more.
