MEXICAN FUDGE
My sister brought this recipe home from her middle school Spanish class for the Day of the Dead - fudge with the traditional Mexican twist of added cinnamon. I did not include cooling in the cooking time.

Steps:
- In a 3-quart saucepan combine both sugars and the milk and bring to a boil over medium-high heat, while stirring constantly. Once it reaches a boil, stop stirring the mixture (so fudge doesn't turn gritty).
- Reduce heat to medium and continue cooking mixture, without stirring, until it reaches the soft-ball stage, 236F/113C degrees.**If mixture is stirred after boiling and before cooling down, large sugar crystals will form and fudge will be gritty**
- Remove saucepan from the heat and add the butter and vanilla, but DO NOT STIR. Let the mixture cool without stirring until it reaches 110F/43C degrees. Start checking the temperature at 20 minutes and then check every 5 minutes, until it reaches 110F/43C.
- While the mixture is cooling, butter an 8-inch-square pan. Set aside.
- Once the mixture has cooled down, beat with a wooden spoon until the butter is fully incorporated and mixture starts to thicken. Quickly pour the fudge into the buttered pan before it becomes too solid. ***If using optional 1 cup chopped nuts, quickly stir them into the fudge right before pouring into the prepared pan***
- Let cool completely before cutting into 1-inch squares. Store leftovers in a covered container in the refrigerator.

JAMONCILLO DE LECHE (MEXICAN FUDGE)
If you have ever been in Texas or any of the Southwest border cities you will be familiar with this candy. If you are Mexican-American, good food is a part of our tradition. This candy resembles a type of fudge.

JALAPENO MEXICAN FUDGE
As a cheese lover, there is nothing better than Jalapeno Mexican Fudge. It reminds me of a dense version of a cheese soufflé, with a crusty caramelized top, savory, soft cheesy inside and a jalapeno kick...indulgent and INCREDIBLE!

Steps:
- Step 1 Preheat oven to 350 degrees. Lightly grease a 9×13 pan.Step 2 Spread sliced jalapenos across the bottom of the pan into one layer. **Test your jalapenos heat. If you want less heat, you can use less jalapenos or chop them up.Step 3 In a large mixing bowl, combine shredded cheeses, eggs, milk, garlic and onion powder. Mix will. ( I use my hands here.)Step 4 Pour cheese mixture over jalapenos and spread evenly.Step 5 Bake for 45-55 minutes or until golden brown and bubbly.Step 6 Cool at least 20 minutes before cutting. For best cutting results cool completely.Step 7 For a 9×9 pan: Use 1lb of each cheddar and monterrey jack, 3 beaten eggs, 6 tablespoons of evaporated milk or cream, 1/4 teaspoon garlic powder and 1/8 teaspoon onion powder. Prepare pan the same, using half a jar of jalapenos. Bake for 25-35 minutes.

- In a medium saucepan, while stirring, heat the butter, sugar, and half and half on low heat until melted and well combined.
- Stir in the marshmallows, turn the heat up to medium, and while continuing to stir bring to a boil and cook for 5 minutes or until all the marshmallows are melted, and the mixture is thick and in strands. When you pull the spoon up, it should be in thick strands like taffy. It's very important that the mixture gets hot enough or it might not set. (If it's super humid, however, it may never set.)
- Turn off the heat and stir in the chocolate chips, vanilla, cinnamon, cayenne, salt, and pecans until well combined. The chocolate chips should melt immediately and the mixture will be thick.
