This recipe is from Katie Lee Joel's new cookbook called The Comfort Table. The wontons has a mexican-inspired meat wrapped in a wonton, deep-fried and served with a side of salsa. Kinda like little fried tacos. Instead of frying, you can bake these...instructions included!

1/2 lb lean ground beef
1/4 cup yellow onion, grated
2 ounces cream cheese, room temperature
1/4 cup cheddar cheese, shredded
1 large egg
2 tablespoons dry breadcrumbs
2 tablespoons taco seasoning
2 tablespoons cilantro, minced
36 wonton wrappers
1 large egg white, lightly beaten
2 cups canola oil, for frying

Steps:

  • In a medium bowl, combine the beef, onion, cream cheese, cheddar cheese, egg, bread crumbs, taco seasoning and cilantro.
  • Line a baking sheet with parchment paper. Place the wonton squares on a dry work surface. Place 1 mounded teaspoon of the meat mixture in the middle of each wonton. Brush the wonton's edges with egg white and fold to seal in a triangle. Place the wontons on the baking sheet. Cover and refrigerate for 20 minutes.
  • In a deep heavy pot, heat the canola oil to 375 degrees. Fry the wontons until golden brown, about 1 minute per side. Remove with a slotted spoon and drain on paper towels.
  • You could also preheat the oven to 500 degrees. Brush the wontons with the lightly beaten egg white and bake for 7 to 8 minutes.
  • Garnish with cilantro leaves and serve with salsa.

Wontons:
2 tsp vegetable oil, divided
8 oz lean ground beef
1/4 tsp salt
1/4 cup onion, finely chopped
1/4 cup red bell pepper, finely chopped
1/4 cup canned green chilies, diced
1/4 cup + 2 Tbsp enchilada sauce
22-24 wonton wrappers
Cheese Dipping Sauce:
1 (14.5-oz) can petite diced tomatoes with sweet onions, well drained
1/4 cup canned green chilies, diced
1 (16-oz) package Velveeta cheese, chopped into 1/2" cubes
1/2 cup enchilada sauce
1/4 cup Corona beer

Steps:

  • To prepare the wontons, heat 1 tsp of the oil in a medium-size skillet over medium heat. Place the ground beef into the pan, sprinkle with the salt, and cook until no longer pink, about 5-7 minutes. Remove the meat from the pan, drain any excess fat, and place into a bowl. Set aside. Add the other tsp of oil to the pan, and then add the onions, peppers, and chilies, and cook until tender, about 3-4 minutes. Place the meat back into the pan with the cooked vegetables, and then add the enchilada sauce. Cook for 2 more minutes, or until the sauce is fully absorbed. Scoop the mixture into a bowl. Refrigerate until completely cooled. To assemble the wontons, brush the edges of each wrapper with water, and one by one, place 1 Tbsp of the meat filling into each. Fold the wonton in half to form a triangle and seal the edges. Brush the tips of the triangles with a little more water to join them together, and press to bind. Freeze the stuffed wontons until you're ready to fry. Preheat a deep fryer to 350°F. Place the wontons into the deep fryer in batches and cook for 4-5 minutes, flipping them halfway through, until golden brown. To prepare the cheese sauce, place the petite diced tomatoes and chopped chilies into a 3-qt sauce pot and cook over medium heat for 3-5 minutes. Reduce the heat to low, add the chopped Velveeta cheese, enchilada sauce, and beer and cook, constantly stirring, until the cheese is completely melted. Place the dip into a warm serving vessel and serve.

These are crispy, cheese-filled appetizers. They can be prepared ahead of time and reheated in the oven until they sizzle before serving. Serve with salsa.

1 pound pepper-jack cheese, finely shredded
1 (14 ounce) package won ton wrappers
1 cup vegetable oil for deep frying

Steps:

  • Place 1 to 2 teaspoons of shredded cheese into the center of each wonton skin. Fold the top and bottom corners in toward each other and roll it up like a little egg roll. You will have to seal the wonton with a little water where the ends meet.
  • Heat oil in a deep pot to 365 degrees F (180 degrees C). Fry the wontons two or three at a time. Drain on paper towels. Serve immediately.

24 wonton wrappers
2 tablespoons vegetable oil
1 lb mild pork sausage
1 cup shredded monterey jack cheese
1 cup shredded cheddar cheese
1 cup ranch dressing
1 red bell pepper, chopped
1 cup black olives, sliced

Steps:

  • Grease 24 miniature muffin cups lightly with oil.
  • Press one wonton wrapper into each cup.
  • Brush the wontons with oil.
  • Bake at 375 degrees for 10 minutes, or until golden brown.
  • Remove from muffin cups and arrange on a baking sheet.
  • Brown the sausage in a skillet, stirring until crumbly, and then drain.
  • Combine the sausage, cheddar cheese, Monterey jack cheese, salad dressing, red pepper and olives in a bowl and mix well.
  • Spoon one tablespoon into each wonton.
  • Bake at 325 degrees for five minutes, or until bubbly.

1/2 lb ground beef
1/4 cup chopped onion
2 tablespoons chopped green peppers
7 1/2 ounces cans refried beans
1/4 cup shredded cheddar cheese
1 tablespoon ketchup
1 1/2 teaspoons chili powder
1/4 teaspoon ground cumin
4 dozen square wonton skins
oil (for frying)
salsa

Steps:

  • Filling: In a large skillet, cook ground beef, onion and green pepper until meat is browned and vegetables are tender.
  • Drain off fat.
  • Stir beans, cheese, ketchup, chile powder and cumin into meat mixture and mix well.
  • Place a won-ton skin with 1 point towards you, spoon a generous teaspoon of meat mixture onto center of skin, fold bottom point over filling and tuck point under filling.
  • Fold side corners over filling, forming an envelope shape.
  • Roll up remaining corner, moisten point with water and seal.
  • Fry in hot oil (375°) about 1 minute per side.
  • Drain, serve warm with salsa.
  • These can also be frozen after cooking.
  • Re-heat at 350° for 10-12 minutes.
