FAVA BEAN SALAD WITH JAMON AND FRESH MINT

Fava Bean Salad With Jamon and Fresh Mint image

In the Catalonia area of Spain, Fava beans are paired with slivered jamon (cured ham) and fresh mint. According to The New Spanish Table, this salad was invented by Catalan chef Josep Mercader and is now copied all over Catalonia. If fresh fava beans are hard to find, shelled edamame may be substituted. Posted for ZWT 5.

SOPA DE HABAS (FAVA BEAN SOUP)

Sopa De Habas (Fava Bean Soup) image

This is a Mexican soup made with Fava Beans, saffron, and cumin. The recipe calls for dry fava beans, but you can also use frozen, which will cut down on cooking time and affect the color of the soup. I do not recommend canned (broad beans) because they are cooked with the skins and texturally you'll want to remove them, but the beans are now squishy and it is not fun.

Yield 4 serving(s)

Number Of Ingredients 8

2 cups fava beans, dried shells removed (can also use frozen)

Time 1h

Yield 10 serving(s)

Number Of Ingredients 15

4 cups peeled dried fava beans, soaked overnight
1 medium diced turnip
2 medium diced tomatoes
1 medium diced brown onion
2 stalks diced celery
2 thinly sliced serrano peppers
4 minces garlic cloves
5 cups fat-free low-sodium chicken broth
5 cups water
himalayan pink salt (to tastet)
1 teaspoon pepper mill fresh coarse ground black pepper
1 (8 ounce) bag blue corn tortilla chips
25 fresh mint leaves
extra virgin olive oil (to garnish)
additional fresh mint leaves (to garnish)

Steps:

  • • Lightly sauté the turnips, onion, celery, and garlic in a skillet with a light coating of olive oil while adding the Himalayan Pink Salt and pepper.
  • • In a separate soup pan add the chicken broth and water to the rinsed and cleaned Fava beans bring to a slow boil and then reduce the heat to simmer. Add the sautéed vegetables from above and the tomatoes, sliced Serrano peppers and the 25 mint leaves to the Fava beans and simmer for 15 minutes.

  • • Here's the trick serve the gazpacho in your favorite soup bowl, drizzle some extra virgin olive oil on top, add 2 cranks of your peppermill coarse ground pepper, place 3 dampened mint leaves so that they stand up in the olive oil then add 2 cranks of your salt mill coarse ground Himalayan Pink Salt to the mint leaves. The presentation is very nice and the slight crunch of the salt while eating the gazpacho is excellent. Serve with blue corn tortillas on the side.
  • • Voila "Mexico jus' like I pictured it".

FAVA BEAN PESTO WITH MINT AND ANCHOVY

Fava Bean Pesto with Mint and Anchovy image

This unusual pesto variation, adapted from a recipe by Colman Andrews in his book Flavors of the Riviera, cries out for grilled or roasted lamb, but you will discover many other ways to use it. In fact, it's perfectly delicious on simple grilled bread with a glass of white wine or rosé.

Yield makes about 2 cups

Number Of Ingredients 8

Salt
2 pounds fresh fava beans, in pods
2 garlic cloves, minced
1 cup packed fresh mint leaves
1 cup packed fresh basil leaves
3-4 anchovy fillets, rinsed with cold water
2/3 cup extra-virgin olive oil
1/4 cup pecorino or Parmesan cheese

Steps:

  • Fill a medium saucepan with water, add a little salt, and bring to a boil over medium-high heat. While the water is heating, shell the fava beans. Blanch the beans for a minute or two in the boiling water, drain, then shock them in ice water. Peel the skins and set the beans aside. Crush the garlic, mint, and basil with 1/4 teaspoon salt, using a mortar and pestle, then work in the anchovy fillets. Add about 2 tablespoons olive oil, then the fava beans, adding a third at a time. Add 2 more tablespoons olive oil, then the cheese, and finish with the oil. Season to taste. Alternatively, you can blend all the ingredients in a food processor, adding the oil last in a slow, steady stream while the motor is running.

GABRIEL'S SAUTEED FAVA BEANS

Gabriel's Sauteed Fava Beans image

This basic method of cooking fava beans was taught to me by chef Gabriel Claycamp of Culinary Communion. When I was recently able to get ahold of fresh fava beans, I wanted to cook them in a way that highlighted the taste of the beans themselves, and here's how Gabriel suggested I fix them. Although fresh fava beans are, as he said, about 70% waste (and the prep time is shelling and peeling), the remaining 30% after you've prepared and eaten them are *well* worth the effort! We loved them!

Time 45m

Yield 2 serving(s)

Number Of Ingredients 9

boiling water
salt
ice
tap water
2 lbs fresh fava beans, in the pod (yields about 1 1/2 to 2 cups shelled beans)
1 tablespoon butter
1 teaspoon olive oil
2 garlic cloves, minced, to taste
salt & freshly ground black pepper, to taste

Steps:

  • First, shell the beans from the fava pods (I found it's sometimes easier - especially if you're new to fava beans - to open the pods when you run the edge of a knife along the seam, cutting away the tough edge so that the pod halves come apart).
  • In a large saucepan, bring water to a boil, then add salt - the amount depends on how much water you have, but it should be very salty, like seawater.
  • In a bowl, combine ice and tap water to make ice water; set aside.
  • Add the shelled beans to the boiling water and let cook for about 3 minutes, then remove from saucepan and immediately plunge into the ice water to halt the cooking.
  • Let the beans cool, then peel the outer skin from each of them.
  • Over medium heat in a skillet, melt together the butter and olive oil, then add the garlic and sauté for 1 minute.
  • Add the peeled fava beans and sauté for about 5 to 7 minutes, or until they are done to your preference.
  • Season to taste with salt and freshly ground pepper, serve, and enjoy!
  • Note: in choosing your fava beans, get the pods that are firm and fresh looking; also, if you're feeling silly, have these along with your favorite liver dish and a nice Chianti.
  • Note 2: once you've made these basic fava beans, you can add other delicious items such as caramelized onions or fennel, chunky fresh tomatoes, and/or a bit of chopped proscuitto.
  • Note 3: I asked Gabriel if favas could be frozen effectively, and he said that yes, you can shuck them and blanch them for 1 minute at most, then freeze them in a single layer on a sheet in the freezer before putting them into bags; great bright green color and no mushiness in texture; thaw, peel, and use as usual.

SAUTEED MUSHROOMS WITH FRESH MINT

Sauteed Mushrooms with Fresh Mint image

When we often stay away at big hotels we request the breakfast buffet in the morning. Although I don't eat bacon or eggs and I'm not into sweet pastries. So I really look forward to morning veggies such as sautéed mushroom, grilled tomatoes, home made style baked beans on toast and hash browns. This sautéed mushroom is not like the ones served at the hotels but it satisfy my cravings.
