My boyfriend is from Mexico and he whipped this up one night and it turned out great. Beef, onions, garlic and peppers cooked in a delicious salsa verde sauce. Serve with rice, beans and tortillas. You may also add some sour cream to the sauce to make it creamier or add it after as a garnish.

1 tablespoon olive oil
1 onion, diced
1 pound cubed beef stew meat
1 ½ teaspoons minced garlic
½ lime, juiced
1 jalapeno pepper, seeded and chopped
3 green onions, chopped
¼ cup chopped fresh cilantro, or to taste
1 teaspoon dried oregano
1 (7 ounce) can green salsa

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add the onion, and cook for a few minutes, then stir in the beef, and garlic. Cook, stirring frequently until meat is evenly browned.
  • While the meat is cooking, stir together the lime juice, jalapeno, cilantro and green onion. When the meat is browned, stir in the cilantro mixture and oregano. Pour in the salsa, cover and cook for about 10 minutes, stirring occasionally, until the meat is cooked through.

2 tablespoons reduced sodium soy sauce
2 tablespoons freshly squeezed lime juice
2 tablespoons canola oil, divided
3 cloves garlic, minced
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 1/2 pounds skirt steak, cut into 1/2-inch pieces
12 mini flour tortillas, warmed
3/4 cup diced red onion
1/2 cup chopped fresh cilantro leaves
1 lime, cut into wedges

Steps:

  • In a medium bowl, combine soy sauce, lime juice, 1 tablespoon canola oil, garlic, chili powder, cumin and oregano. In a gallon size Ziploc bag or large bowl, combine soy sauce mixture and steak; marinate for at least 1 hour up to 4 hours, turning the bag occasionally. Heat remaining 1 tablespoon canola oil in a large skillet over medium high heat. Add steak and marinade, and cook, stirring often, until steak has browned and marinade has reduced, about 5-6 minutes, or until desired doneness. Serve steak in tortillas, topped with onion, cilantro and lime.

Easy, cheesy Mexican steak. Green chiles pack a spicy punch and taco sauce brings the Mexican flavor to these cube steaks. The only question is, is it better for dinner or for a Mexican steak and eggs breakfast?

1 1/2 pound cube steaks
1 tablespoon butter
1 tablespoon olive oil
1 can (4 ounce size) chopped green chiles, hot or mild
1 jar (8 ounce size) taco sauce, hot or mild
1 cup shredded Monterey Jack cheese

Steps:

  • Preheat the oven to 350 degrees F. Heat the butter and oil in a skillet over medium-high heat. Add the cube steaks and cook until browned on both sides. Place the browned cube steaks in a baking dish. Top the cube steaks with the green chiles and taco sauce. Cover the baking dish and place in the oven. Bake at 350 degrees F for 40 minutes. Remove the cover and sprinkle the cube steaks with the cheese. Return the baking dish to the oven and bake for 5 more minutes or until the cheese is melted. Serve hot.

1 kg well trimmed shoulder/chuck beef or shoulder of lamb, cubed
1-2 tablesp. oil
1 large onion, diced
1 teasp. ground cumin
1 teasp. ground coriander
½ teasp. chilli powder
1-2 fresh chillies, chopped
2-3 cloves garlic, chopped
1 teasp. fresh ginger, grated
1 can tomatoes, chopped
125ml stock or water
Juice of ½ lemon
Salt and black pepper

Steps:

  • Set oven Gas Mark 4, 180°C (350°). In a large pan heat the oil and brown the beef. Then brown the onions. Transfer to a casserole dish. Add the spices to the pan and heat, stirring for 1-2 minutes. Add garlic, ginger, tomatoes, stock, lemon juice and seasoning. Pour the sauce over the meat and onions. Place in the oven for 1½ hours or until the meat is tender. This dish will taste even better 2-3 days later.

2 -3 pork steaks, cubed
1 yellow squash, 1/4 in slices
1 onion, 1/4 in slices
1 (8 3/4 ounce) can sweet corn, drained
1 green pepper
2 tablespoons olive oil
garlic powder
salt
pepper
chili powder
hot sauce

Steps:

  • Heat Olive Oil in skillet and brown pork cubes in oil, liberally spice with garlic powder.
  • DO NOT DRAIN.
  • Add all vegetables, spice with garlic, salt, pepper, chile powder and hot sauce to your preference of"hotness".
  • Cover and cook about 15-20 minutes , don't over cook the vegies!
  • Serve over rice or just by itself.
  • Be creative, add other vegies that you like.

2 pounds cube steak
2 tbsp vegetable or corn oil
1/4 cup white vinegar or red wine vinegar
6 garlic cloves (grind in a mortar and pestle or blended)
1 tsp Adobo Seasoning ( I use Goya brand)
1/4 tsp dried oregano
2 onions (cut into slices)

Steps:

  • If you have a mortar and pestle, use it to mash the garlic and the oregano. Combine the vinegar to the garlic and oregano.Note: If you do not have a mortar and pestle, add the garlic, oregano and vinegar to a blender and blend until smooth.
  • Using a mallet, pound the meat to about an 1/8 of an inch.
  • Add the cube steaks to a bowl and season on both sides with adobo.
  • Add the garlic, oregano and vinegar blend. Add the oil.Stir and cover steaks well with marinade on all sides.Marinate for at least 30 minutes to 2 hrs.
  • In a skillet over medium high heat, add the cube steak and the marinade.Cover the pan and cook for a few minutes stirring occasionally, about 15 minutes.
  • While steak is cooking, slice the onions.Add onions midway into cooking and cook until onions are translucent.
  • Steak is done.Serve with white or yellow rice.Drizzle steaks with sauce from pan.
