FOUR-CHEESE LASAGNA

Four-Cheese Lasagna image

Cheese really stars in this lighter lasagna, which I created a few years ago. It can be prepared ahead of time and baked later. I sometimes make up a couple batches and freeze them in case company drops by. -Janet Myers, Napanee, Ontario

Lasagna with Cottage Cheese image

Lasagna with Cottage Cheese is a classic Midwestern noodle casserole. Layers of rich meat sauce, pasta, creamy filling and cheese will have the whole family coming back for seconds!

Provided by Lori Yates

Categories     Pasta

Time 1h35m

Number Of Ingredients 19

1 pound ground beef
1/2 pound mild or spicy Italian sausage, casings removed if necessary
3 garlic cloves, minced
1/2 medium white onion, finely chopped
1 can (29 ounces) tomato sauce
1 can (12 ounces) tomato paste
2 teaspoons dried oregano leaves
1-1/2 teaspoons kosher salt
2 eggs
3 cups small curd cottage cheese
1/2 cup grated Parmesan cheese
2 tablespoons dried parsley leaves
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 box (16 ounces) lasagna noodles (traditional, NOT no-boil)
Nonstick cooking spray
1 pound mozzarella cheese slices
Additional grated Parmesan cheese
Chopped fresh basil leaves

Steps:

  • Make the Meat Sauce: In large high-sided skillet, cook beef, sausage, garlic and onion over medium-high heat 10 to 12 minutes or until meat is cooked through, breaking up meat with back of spoon and stirring occasionally. Remove and discard any excess fat in pan.
  • Stir in tomato sauce, tomato paste, oregano and salt; heat to simmering over medium-high heat. Reduce heat to medium-low and cook 30 minutes, stirring occasionally. Remove from heat and let cool slightly.
  • Meanwhile, make the Cheese Filling: Place eggs in large bowl and whisk until smooth. Add cottage cheese, Parmesan cheese, parsley, salt and pepper; stir until well combined.
  • Prepare noodles according to package directions; drain.
  • Preheat oven to 375 degrees F. Spray 10 x 16-inch lasagna pan or large baking dish with nonstick spray. Arrange 1/4 of noodles in bottom of dish. Spread noodles with 1/4 of Cheese Filling. Arrange 1/4 of mozzarella cheese slices over Cheese Filling (you can rip the cheese slices into halves or thirds to arrange them easier). Spread 1/4 of Meat Sauce over mozzarella cheese slices. Repeat layers 3 more times.
  • Transfer to oven and bake 45 to 60 minutes or until edges are bubbly. Let rest 15 minutes before serving topped with additional Parmesan cheese and basil, if desired.

Number Of Ingredients 10

9 ready for the oven lasagna noodles (( no boil noodles))
1.5 pounds lean ground beef
1/2 medium white onion (chopped ( optional))
3 cloves garlic (minced)

3/4 cup water
500 grams cottage cheese
1 large egg (beaten)
1 tablespoon Italian seasoning
5 cups pizza mozza and cheddar cheese (mixed & shredded)

  • Drain the excess grease and add in the garlic. Sautee until the garlic is browned.
  • Stir in the sauce and the water, remove from heat.
  • Combine the cottage cheese, egg and Italian seasoning.

LASAGNA WITH COTTAGE CHEESE

Lasagna with Cottage Cheese image

A decadent, meaty lasagna that's a simplified version of a New York Time's recipe with more than 5,000 5-star reviews.

Provided by Marissa Stevens

Categories     Main Course

Time 3h20m

Number Of Ingredients 18

2 tablespoons olive oil (divided)
2 medium red onions (finely diced)
4 large garlic cloves (minced, divided)
4 ounces pancetta (diced)
1 1/2 cup dry red wine
2 28-ounce cans crushed tomatoes (with juice)
2 tablespoons tomato paste
1 cup warm water
8 ounces grated pecorino Romano cheese (divided)
4 large eggs (divided)
1/2 cup finely chopped fresh parsley (divided)
1 pound lean ground beef
Kosher salt and freshly ground black pepper (to taste)
1 pound sweet Italian sausage
1/4 teaspoon crushed red pepper flakes
16 ounces full-fat cottage cheese
1 pound grated mozzarella cheese (ideally whole milk)
1 pound fresh lasagna noodles (ideally Homemade Lasagna Noodles)

Steps:

  • Heat 1 tablespoon of olive oil in a large heavy Dutch oven or kettle over medium-low heat. Add onions, 1/2 of the garlic and pancetta; cook and stir 8 minutes, or until onions are translucent and pancetta is lightly browned. Season with kosher salt and pepper. Raise heat to medium-high and add the wine; cook until mostly evaporated, about 10 minutes. Add tomatoes along with their juice. Stir in warm water and tomato paste and bring to boil; reduce heat and simmer 30 minutes, stirring occasionally.
  • While the sauce simmers, combine 1/4 cup of the pecorino Romano cheese, 1/4 cup of the chopped parsley, remaining minced garlic and 2 of the eggs in a large bowl. Add ground beef and season with kosher salt and pepper. Combine mixture with your hands until well blended.
  • Heat remaining olive oil in a large skillet over medium-high heat. Add Italian sausage and crushed red pepper flakes; cook and stir until lightly browned. Transfer to clean bowl with a slotted spoon and pour off all but enough oil to coat the bottom. To the same skillet, add ground beef mixture (no need to wipe it out); cook and stir, breaking mixture up until lightly browned, but not quite cooked through. Add browned sausage to mixture in skillet and stir to combine; transfer to sauce. Stir sauce to combine and simmer 45 minutes, stirring occasionally.
  • Once the sauce has simmered for 30 minutes, preheat the oven to 350˚F.
  • In a large bowl, combine cottage cheese, remaining 2 eggs, remaining pecorino Romano cheese and parsley, and 1/2 of the mozzarella. Season mixture with kosher salt and pepper and thoroughly combine.
  • Spoon a thick layer of sauce into a 9-by-12-inch lasagna pan and spread evenly. Cover with one layer of noodles. Spoon 1/4 of the remaining sauce evenly over noodles followed by 1/3 of the cottage cheese mixture. Repeat for 2 more layers. Top with a final layer of noodles, and cover with the remaining sauce. Bake 45 minutes. Sprinkle remaining mozzarella evenly over the top and bake 15 minutes more until cheese is melted. Let stand 15-30 minutes before serving.
