This Mexican corn bread casserole is a delicious, cost-effective recipe to make and is really easy to throw together in a pinch. Serve with sour cream.

1 tablespoon olive oil
1 small onion, diced
½ red bell pepper, chopped
1 pound ground beef
1 teaspoon minced garlic
1 teaspoon chili powder
¼ teaspoon cayenne pepper
salt and ground black pepper to taste
½ cup frozen corn
1 cup shredded Mexican cheese blend, divided, or more to taste
1 cup salsa
1 cup cornmeal
¾ teaspoon salt
½ teaspoon baking soda
1 cup milk
2 eggs, beaten

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Heat olive oil in a skillet over medium-high heat. Add onion and red bell pepper; saute until softened, 5 to 7 minutes. Add ground beef, garlic, chili powder, cayenne pepper, salt, and black pepper. Cook and stir until beef is browned and crumbly, 5 to 7 minutes.
  • Mix corn into the beef mixture and toss to defrost, about 3 minutes. Drain and discard fat. Add about 1/4 of the shredded Mexican cheese blend and mix well. Pour meat sauce into a 9x13-inch casserole dish. Cover meat with a thin layer of salsa.
  • Combine cornmeal, salt, and baking soda in a large bowl. Add milk and eggs; stir until well blended. Pour cornmeal mixture on top of salsa layer and top with remaining shredded Mexican cheese blend.
  • Bake in the preheated oven until browned on top, about 30 minutes.

4 eggs (beaten)
1 (14 1/2 ounce) can corn, drained
1 (14 1/2 ounce) can creamed corn
1 1/2 cups cornmeal
1 1/2 cups buttermilk
1 cup melted butter
8 ounces green chilies, drained
1 large chopped onion
1 teaspoon baking soda
3 cups cheddar cheese or 3 cups Mexican blend cheese

Steps:

  • Beat all ingredients together except 1 c cheese.
  • Place in casserole dish, and bake at 325° for 1 hour.
  • Sprinkle remaining cheese on top and serve.

1 (8 ounce) package cream cheese, cut into cubes
½ cup butter
1 (15 ounce) can black beans, drained
1 (8 ounce) can diced italian-style tomatoes, drained
1 (11 ounce) can Mexican-style corn with red and green peppers, drained
1 (10 ounce) can white shoepeg corn, drained
1 cup shredded Cheddar cheese, divided
½ cup diced jalapeno peppers

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place cream cheese and butter in a 8x8-inch casserole dish. Heat in microwave in 2-minute intervals until melted; stir until smooth.
  • Mix black beans, tomatoes, Mexican-style corn, and white corn into the cream cheese mixture.
  • Bake casserole in the preheated oven until bubbling, about 20 minutes. Stir 1/2 cup Cheddar cheese into casserole until incorporated; top with jalapeno peppers and remaining 1/2 cup Cheddar cheese.
  • Bake until cheese topping is melted and bubbling, 3 to 5 more minutes.

  • Beat eggs in a large bowl, add the next eight ingredients and mix well.

  • Pour into a greased 13 in x 9 in x 2 in baking dish and bake uncovered at 325 for 1 hour.
  • Top with remaining cheese. Let stand 15 minutes before serving.

7 ears corn
1/4 cup mayonnaise
1/2 cup sour cream
1 cup monterey jack cheese, grated
1 cup parmigiano-reggiano cheese, grated
1 tablespoon butter, for greasing casserole dish
1 egg
1/2 cup fresh cilantro, chopped
2 limes, cut into wedges
1 cup Cotija cheese, crumbled
1 teaspoon chili powder seasoning, Tajin is preferred

Steps:

  • Cut the corn off the cob, and spread out on a baking sheet. Broil for about 5 minutes to get some of the kernels to char, then pull from oven and set aside for later.
  • Preheat the oven to 350 degrees.
  • Combine mayonnaise, sour cream, jack cheese, parmesan, and egg and mix until combined. Add corn to the mayo mixture. Stir to combine.
  • Grease a casserole dish with butter. Pour the corn mayo mixture in and bake for about 30-35 minutes.
  • Before serving, sprinkle the casserole with cotija cheese, cilantro, and a few pinches of Tajin over the casserole.
  • Give each person a nice big scoop, and serve with a lime wedge to add juice. Enjoy!
