SIMPLE MEXICAN COLESLAW

6 cups very thinly sliced green cabbage
1 ½ cups grated carrots
¼ cup rice vinegar
2 tablespoons extra-virgin olive oil
⅓ cup chopped cilantro
¼ teaspoon salt

Steps:

  • Place cabbage and carrots in a colander and rinse in cold water; let drain for 5 minutes.
  • Whisk rice vinegar, olive oil, and cilantro together in a large salad bowl. Stir cabbage and carrots into dressing; season with salt. Slaw can be served immediately or covered and refrigerated for up to 1 day.

2 cups green, shredded cabbage
2 cup red, shredded cabbage
2 cups grated carrots
¼ cup chopped, fresh cilantro
¼ cup lime juice
2 tbsp. rice vinegar
½ tsp. ground cumin
½ tsp. garlic powder
½ tsp. ground black pepper
¼ tsp. salt ((or more to taste))

Steps:

  • In a large mixing bowl, mix together the slaw ingredients.
  • In a small mixing bowl, whisk together the dressing ingredients. Some folks may want to add a little oil just for texture and mouthfeel. If you do, try 1-2 tbsp. But it's not a necessary addition. I did not use it.
  • Pour the dressing over the salad and toss.
  • Serve with your favorite Mexican dishes!

Steps:

1/3 cup sour cream
2 tablespoons lime juice
1/2 packet taco seasoning
1 (14-ounce) bag coleslaw mix
1 cup shredded red cabbage
1/2 cup black beans, rinsed and drained
1/2 cup cooked corn kernels, (preferably grilled corn)
1/2 cup diced red pepper
1/3 cup finely diced red onion
1/3 cup chopped fresh cilantro
2 jalapenos, (seeded and finely diced)
1/4 cup pepitas

Steps:

  • Mix together mayonnaise, sour cream, lime juice, and taco seasoning in a small bowl.
  • In a large bowl, combine cabbage mix, red cabbage, black beans, corn, red pepper, red onion, cilantro, and jalapeno.
  • Add mayonnaise mixture and stir to combine.
  • Cover and chill for at least 30 minutes.
  • Sprinkle with pepitas just before serving.

4-5 cups very thinly sliced green cabbage OR a bag of pre-shredded mixed cabbage
1 1/2 cups peeled and grated carrots
1/3 cup chopped cilantro
1/3 cup lime juice
1/2 teaspoon ground cumin
1 teaspoon honey
2 cloves garlic minced
sprinkle of salt and pepper
1/2 cup olive oil

Steps:

  • Toss together the salad ingredients in a large bowl; set aside.
  • Combine the dressing ingredients together blend with a handblender. You can also just shake them together, but use 1/2 tsp garlic powder instead of cloves.
  • Toss together all of the ingredients in the large bowl until the salad is completely covered in dressing. Serve and enjoy.
  • This salad is even better when marinated overnight in the fridge before serving.

It took a while to get this perfected so it tastes just like our favorite Mexican restaurant. This is a great change up to the ordinary chips and salsa. It goes great with chips or as a quesadilla topping. It's different from your typical Mexican fare, but it is fantastic. This is a pretty forgiving recipe and you can adjust ingredients to your liking. You can add more cilantro, onion or jalapeno depending on your tastes. You can eat this right away but it is best after you have given the flavors an hour or two to blend. For those that don't like it too hot, La Costena® brand makes a great pickled jalapeno that has lots of flavor and not too much heat.

1/4 small red onion (, thinly sliced)
1/4 cup cilantro leaves (, chopped)
1/3 cup canola oil
2 limes (, juiced (about 1/4 cup))
3 cloves garlic (, pressed)
2 tablespoons honey
1 1/2 teaspoons ground cumin
1 teaspoon oregano
1 teaspoon ground coriander
6 dashes hot sauce
kosher salt and freshly ground black pepper

Steps:

  • In a large bowl, toss the colelsaw mix with the sliced onion and chopped cilantro. In a small bowl or jar with a fitted lid, mix the canola oil, lime juice, garlic, honey, cumin, oregano, coriander, hot sauce, kosher salt, and freshly ground pepper. Pour over the coleslaw mixture and toss. Refrigerate for 30 minutes before serving. This recipe is best eaten day of, but can be refrigerated overnight.

This is a simple cabbage salad that goes well with any summer meal. I typically serve this with pollo asado tacos (see my recipe for Pollo Asado), and it goes especially well with fish tacos. Sometimes, I use it ON my fish tacos! You can adjust the cilantro to your taste, I know I have many friends that say they don't eat it, but love this salad when I cut back on the cilantro a little bit. Also, adjust the amount of lime juice to your taste, as limes vary greatly in their acidity. To make this extra colorful, you can add 1/2 cup of shredded carrot or 1/4 cup of finely diced red bell pepper. Buen provecho!

3 green onions, sliced thinly (white and green parts)
3 tablespoons olive oil, extra-virgin

Steps:

  • In a large serving bowl, combine cabbage, cilantro and green onion. If using carrot or bell pepper, add it too.
  • In a small bowl, combine the olive oil, lime juice, garlic, salt and pepper. Adjust seasoning. If preparing in advance, stop here and refrigerate both bowls until serving time.
  • Right before serving, stir the dressing then add it to cabbage mix and toss well to coat. Serve immediately or it will wilt.

1 pound thinly sliced or shredded cabbage ( 1/2 a large head, 4-5 cups shredded - purple is pretty, or green or use a mix)
¼ cup very thinly sliced red onion, more to taste ( or sub 1/2 cup green onion)
1 cup chopped cilantro ( packed, thin stems ok!)
¼ -½ - one whole jalapeño, finely chopped, more to taste
1 tablespoon lime zest
¼ cup fresh lime juice, more to taste
2 tablespoons olive oil
½ teaspoon kosher salt, more to taste
1 teaspoon cumin
1/2 teaspoon coriander
pepper to taste

Steps:

  • Shred the cabbage by very thinly slicing or use a mandolin. If making an extra-large batch using your food processor with grater attachment is a good option. See notes for adding other veggies.
  • Add the cilantro, onion (see note), jalapeno, lime zest and lime juice, olive oil, salt, cumin, coriander and pepper.
  • Toss well. Taste and adjust salt and lime to your liking. Add extra jalapeno if you like.
  • Keep in the fridge until ready to serve.

I took the recipe from Cooking Light and tweaked it a little. The first time I made it by the recipe it was too tart and not spicy enough so the following is what I finally came up with.

1/2 head cabbage, thinly sliced
1 large maui onion, thinly sliced
1/2 bunch cilantro, chopped
1/3 cup lime juice
5 teaspoons light extra virgin olive oil
3/4 teaspoon sea salt
1 tablespoon sugar or 1 tablespoon sugar substitute
4 jalapenos, seeded and thinly sliced

Steps:

  • Combine the cabbage, onion, cilantro and jalapeños in a salad bowl and set aside.
  • Combine the lime juice, olive oil, sea salt and sugar and whisk until the sugar and salt are dissolved, then pour over the cabbage mixture and serve immediately.
  • I do not like this dish as a leftover, it loses it's crispness and clean taste.

6 TBS Neutral Oil (- vegetable or canola - DIVIDED)
3 Ears Corn (- shucked & kernels cut off cob (about 2 ½ cups kernels))
2 large Jalapenos (- stemmed, seeded & diced)
4 cups Shredded Green Cabbage ((16 ounces shredded coleslaw mix or ½ medium head))
1 large Carrot (- shredded or peeled into ribbons)
1 medium Red Bell Peppers (- stemmed, cored & finely sliced or diced)
½ small Red Onion (- finely sliced)
4 medium Green Onions (- thinly sliced)
1/3 Cup Fresh Cilantro (- packed & finely chopped, or more to taste)
2 ½ TBS EACH: Fresh Orange Juice & Fresh Lime Juice
2 tsp Apple Cider Vinegar
1 tsp EACH: Ground Cumin & Smoked Paprika
½ tsp Chili Powder

Steps:

  • Char the corn and jalapenos: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the kernels of corn and the jalapenos. Cook, stirring occasionally, until the corn is slightly charred, about 7 minutes. Remove from heat and let cool completely.
  • Make the dressing: In a small bowl, combine the remaining 5 tablespoons of oil with the orange juice, lime juice, vinegar, cumin, paprika, chili powder, Mexican oregano (if using) and 1 tablespoon of honey. Season with ½ teaspoon of kosher salt and ¼ teaspoon of pepper. Whisk together. Taste and adjust with more citrus juice, honey, salt and pepper if desired. Set aside.
  • Assemble the slaw: In a large bowl, combine the cooled corn and jalapenos, cabbage, carrots, bell peppers, red onions and half of the green onions (and jicama if using). Pour half of the dressing over the slaw. Toss well to combine. Taste and adjust with more dressing if desired.
  • Let stand: Let coleslaw stand for at least 20 minutes, tossing once, to allow flavors to develop and meld. Toss again before garnishing and serving.
  • Serve: Garnish the top of the slaw with the remaining green onions and cilantro. Top with cheese, avocado and any optional add-ins if using. Serve and enjoy!
