MEXICAN CHORIZO
A mildly hot, and very delicious, Mexican sausage. Excellent for breakfast, lunch, or dinner. Can be made into patties and cooked in a skillet, or stuffed into natural hog or collagen casings and grilled at your next family gathering.

Steps:
- Place the pork, Aleppo pepper, chili powder, garlic, salt, black pepper, oregano, cumin, cloves, and coriander into a bowl, and lightly toss the pork with the seasonings until thoroughly blended. Cover the bowl, and refrigerate the meat, your meat grinder's head assembly, and grinder hopper for 1 hour.
- Fill a large mixing bowl with ice cubes, and place a smaller metal bowl in the ice cubes to catch the ground meat. Assemble the chilled meat grinder, and grind the pork and seasonings using a coarse cutting plate. Return ground meat to refrigerator for 30 minutes. Lightly stir the ground pork with the vinegar and water until thoroughly mixed, form into patties, and refrigerate overnight, covered, to let flavors develop.
- Heat vegetable oil in a heavy skillet over medium-low heat, and pan-fry the patties until browned and no longer pink in the middle, 5 to 8 minutes per side.

Steps:
- Mix together the patty ingredients until combined.
- Form the beef mixture into 3 round patties.
- Heat oil in a pan over medium heat.
- Cook the burgers for 3 minutes on the first side, flip, and place a slice of manchego cheese on top.
- Cook for 6 more minutes until the cheese is melted.
- Assemble the burgers on the buns with guacamole, cotija, pico de gallo, and sour cream.
- Enjoy!

An extremely flavorful Spanish style burger made from beef and Spanish chorizo sausage, topped with caramelized onions and smoky red pepper ranch sauce and shavings of Manchego cheese served in sweet brioche buns.

- In a large bowl, mix together the ground sirloin and chorizo using your hands. Set aside to let the flavors blend.
- Heat one tablespoon of oil in a skillet over medium-high heat. Add one chopped onion, and saute until tender. Transfer the onion to a blender, and add the red pepper, Ranch dressing, saffron, and paprika. Pulse until fairly smooth. Refrigerate until needed.
- Heat the remaining oil in a large skillet over medium heat, and add the remaining onions, brown sugar, salt and pepper. Cook and stir for about 15 minutes until the onions are golden brown. Set aside.
- Preheat the grill for high heat. Form the meat into four patties, slightly larger than the buns.
- Place burgers on the grill, and cook for 5 minutes per side, or until well done. Split buns in half, and spread butter on the inside. Place on the grill to toast briefly.
- Place burgers onto buns, and top with caramelized onion and the roasted pepper ranch sauce. Sprinkle with a few shavings of manchego cheese, and place the top of the bun on top.

- Add ground beef and chorizo to a large bowl, and, using two forks, fluff the meat (see note above) to evenly mix and lighten the texture. Mix in garlic powder, kosher salt and black pepper, then the cheese. Form the meat mixture into 4 even patties.
- Preheat a gas or charcoal grill over medium-high heat. Brush the burgers lightly with vegetable oil. Also brush the grill grates with vegetable to keep the patties from sticking. Grill the patties directly over the heat for about 4 - 6 minutes a side or until cooked through. Let rest for a few minutes before building the burger. I like to cook the burgers to 155°F, and the temp goes up to 160°F as they rest. I've also cooked these burgers under the broiler (about 7 minutes per side) and using a panini press fitted with flat plates (6 minutes total).
- Stack up the burger as follows: bottom bun, mayo, burger patty, tomato slice, lettuce, ketchup, top bun. Enjoy immediately!

- Mix in the cayenne pepper into the chorizo meat. Divide the chorizo meat into four portions. Flatten the meat into thin patties.
- Pan fry the chorizo burger patties in a medium-high heat pan or griddle or cast iron pan, about 3 - 4 minutes per side, until cooked through. Remove the patties from the pan and let them rest before using them in burgers.
- Rested chorizo burgers can be used immediately, or can be frozen for later use. Place the burger patties in a stack with wax paper between each, in an air-tight container, OR freezer bag. Place the frozen patties in the fridge overnight to thaw, and then microwave for 2 minutes to reheat.
- Mix all the ingredients and season with salt and pepper. Use immediately, or refrigerate for a couple of hours.

- Make the burger mixture - Combine chorizo, ground meat, egg, and cotija in a prep bowl. Mix thoroughly. I find my hands work best, but if you're squeamish, use a flexible spatula.
- Prepare the toppings - If you're doing pickled onions and/or aioli, you may want to start them first. Slice tomatoes, mash avocados, and prepare lettuce. If you have a helper, let your helper grill the rolls/buns.

- To prepare the burgers, add the ground beef, chorizo, eggs, panko, and salt to a large bowl and mix thoroughly. Divide the meat into 6 equal-sized balls and press into patties that are slightly larger than the width of the brioche buns. Place on a plate and refrigerate until ready to cook.
