American Chop Suey (Just Like Mama Used to Make) image

I've found that the only place in the world that this recipe is called "American Chop Suey" is in and around the Boston area. Everywhere else it is known as goulash. Go into most any diner north of Boston, and "American Chop Suey" is on the lunch menu. This is a one pot meal that is terrific during these budget-conscious times. It is a comfort food that brings back wonderful childhood memories of simpler times. I've told friends that have asked for the recipe that if I give it to them, they have to call it "American Chop Suey", not goulash:).

Number Of Ingredients 13

1 (16 ounce) box elbow macaroni, cooked al dente according to directions on box
2 tablespoons olive oil
1 cup chopped celery
2 large green bell peppers, cut into bite-sized pieces (don't cut too small)
2 medium sweet onions, sliced into bite-sized pieces
1 -2 garlic clove, minced (depending on your taste for garlic)
1 1/2 lbs ground beef (you could use just a pound, but I like it meaty)
2 tablespoons sugar
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley
salt and pepper, to taste
3 (14 1/2 ounce) cans stewed tomatoes, with juices (use 4 cans, if you like a lot of tomatoes)

Steps:

  • In a very large skillet, heat the olive oil. Add the chopped celery and cook a few minutes. Add the cut-up green bell pepper, and cook a few more minutes. Add the onion and continue to cook until celery, peppers, and onions are tender, about 5 minutes. Add the minced garlic and mix into the vegetables. Then add the ground beef, breaking up with a wooden spoon. Continue to cook until the ground beef is browned, about another 5 minutes, mixing the beef up with the vegetables. Sprinkle the mixture with the sugar, basil, oregano, and parsley and mix. Add the stewed tomatoes, juices and all. Add salt and pepper, to taste. Let simmer, covered, stirring occasionally.
  • Meanwhile, cook the elbow macaroni, according to the directions on box, in a very large saucepan. But, don't overcook. The macaroni should be al dente, because it will continue to cook a little when added to the beef/vegetable mixture. Drain pasta and put back into the large saucepan in which it was cooked.
  • Very carefully, add the beef and vegetable mixture, juices and all, to the drained pasta in the large saucepan. Mix well and keep heated, covered, stirring occasionally, on a very low heat.
  • When ready to serve, just put the pot of "American Chop Suey" along with bowls in the middle of the table, so everyone can help themselves. Serve with a basket of good Italian bread and butter.

1 medium yellow onion, chopped
1 green bell pepper, stemmed, seeded, and chopped
2 garlic cloves, minced
1 lb ground beef
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon ground black pepper
kosher salt
1 (14 1/2 ounce) can diced tomatoes
1 (14 1/2 ounce) can tomato sauce
1/4 cup tomato paste
2/3 cup tomato juice
1 pinch sugar
1 lb elbow macaroni

Steps:

  • In large pot over medium heat melt butter. Add onion and bell pepper and cook, stirring occasionally, until soft, about 5 minutes. Stir in garlic for about 1 minute. Stir in ground beef and cook, stirring and breaking up meat chunks with a spoon. Cook until meat is done, about 7 minutes until no longer pink. Toss herbs and pepper over the meat mixture, add salt to taste, and stir until well mixed.
  • Add canned tomatoes with their juices, tomato sauce, tomato paste, and tomato juice. Add sugar to taste. Simmer gently while you prepare the pasta.
  • Bring a large pot of salted water to the boil over high heat. Add macaroni and cook until al dente, stirring occasionally. Drain the macaroni and add to the chop suey.
  • Serve hot.

This is the fast and easy chop suey recipe that my mother always made, and we love it 'as is', but you could substitute a can of Chinese mixed vegetables for the bean sprouts if you like more color and texture. Serve over hot rice, topped with chow mein noodles and soy sauce, if desired.

¼ cup shortening
1 ½ cups diced pork loin
1 cup diced onion
1 cup diced celery
1 cup hot water
1 teaspoon salt
⅛ teaspoon ground black pepper
1 (14.5 ounce) can bean sprouts, drained and rinsed
⅓ cup cold water
2 tablespoons cornstarch
2 teaspoons soy sauce
1 teaspoon white sugar

Steps:

  • Heat shortening in a large, deep skillet. Sear pork until it turns white, then add onion and saute for 5 minutes. Add celery, hot water, salt and pepper. Cover skillet and simmer for 5 minutes. Add sprouts and heat to boiling.
  • In a small bowl combine the cold water, cornstarch, soy sauce and sugar. Mix together and add to skillet mixture. Cook for 5 minutes, or until thickened to taste.

1 lb elbow macaroni
1 tbsp butter
1 onion (, large)
2 garlic cloves
1 lb ground beef
1 green bell pepper
1 can diced tomatoes (about 400 g/ 14 oz can)
1 lb tomato sauce
1/2 cup tomato paste
1/2 cup chicken stock (or vegetable stock, from a cube is fine)
2 tsp sugar
1 tsp dried oregano
1 tsp dried basil
1 tsp dried parsley
½ tsp ground black pepper
1 tsp fine sea salt (or Kosher)
1 cup Cheddar (Note)
1 tbsp Worcestershire sauce (more to taste)
2 tbsp chopped fresh parsley (optional)

Steps:

  • Fill a large pot with hot water for the pasta. During the time it takes to come to a boil, start preparing and cooking the rest of the dish.
  • Heat a large skillet and use the time to chop the onion and the garlic.
  • Cook the onion in the butter with a pinch of salt on low heat for about 3 minutes. Add garlic and stir for another minute.
  • Increase heat to medium. Add ground beef and stir well breaking the lumps of meat. Cook until browned, about 3 minutes.
  • In the meantime, dice the green pepper. Add to the pot and cook for another 4 minutes, stirring occasionally.
  • Your pasta water should have come to a boil by now. If it is so, add salt generously and then the pasta. Cook according to the packet's instructions.
  • Add canned tomatoes, tomato paste, tomato sauce, stock or water, dried oregano, basil, parsley, sugar, salt, and pepper to the skillet with the sauce. Stir well. Cook for about 10 minutes, on medium-low, uncovered, stirring occasionally.
  • Turn off the heat and stir in the grated cheese until melted.
  • Adjust the taste with Worcestershire sauce, salt, and pepper. Add fresh parsley if using.
  • Drain the cooked macaroni, mix with the sauce and stir well to coat.

This recipe supposedly came from the back of a Campbell's Tomato Soup can from back in the 50's. The title may not be the original name, but it is what my dad & his dad always called it. It has been a family favorite for 3 generations.

6 pork steaks, seasoned with garlic powder, salt and pepper
1 1/2 c celery, chopped
1 c onion, chopped
1 c green pepper, chopped
4 can(s) campbell's tomato soup - do not substitute brand as it will not taste the same
2 can(s) water
2 can(s) mushrooms, canned (large cans, not the small ones)
2 can(s) kidney beans, canned
4 bay leaves
salt and pepper, to taste
2 lb spaghetti noodles, cooked

Steps:

  • 1. Sauté pork steaks in deep pan with some cooking oil until browned on both sides, set aside to cool. When cooled, cut into 1 inch pieces.
  • 2. Add the celery, onions & green peppers to the deep pan that the pork was browned in and sauté for about 6 mins. Add pork back in and mix together.
  • 3. Add rest of ingredients, except the spaghetti, to the deep pan and simmer until the veggies are tender, about 45 mins to 1 hr. Serve over cooked spaghetti.
