This delicious chocolate frozen yogurt has a simple list of ingredients and is made without an ice cream maker.

2 cups Greek yogurt (plain, full-fat (I use Fage 5%))
1/2 cup unsweetened cocoa powder, (Dutch-processed )
2 teaspoons pure vanilla extract
2 teaspoons stevia glycerite (equals 2/3 cup sugar - see notes)

Steps:

  • Add the ingredients to your food processor. Process until completely smooth, stopping once to scrape the sides and bottom of the bowl.
  • Using a spatula, transfer the mixture to a square 9-inch pan. Cover with cling wrap, and freeze for 1 hour.
  • Remove the pan from the freezer. Use a fork to stir the already-frozen edges into the still-soft center. If the edges are very frozen, you might need to scrape them with a knife. Stir the mixture until smooth, then spread it evenly in the pan.
  • Cover again, and place in the freezer for 3 more hours, repeating the process of stirring the yogurt every 60 minutes.
  • When the entire mixture is frozen, serve immediately as soft-serve yogurt (use chilled bowls), or freeze for two more hours for a firmer consistency that you can scoop out with an ice cream scoop.
  • If frozen overnight, remove the yogurt from the freezer 10 minutes before serving to allow it to soften.

32 ounces low-fat yogurt (must be low-fat coffee yogurt, preferably Dannon)
1 1/2 cups sugar
2/3 cup unsweetened cocoa powder
4 tablespoons unsweetened cocoa powder
1/8 teaspoon salt
2 tablespoons instant coffee (try instant espresso)
1 tablespoon dark rum

Steps:

  • Place yogurt, sugar, cocoa, salt, espresso and rum in a large bowl and whisk until thoroughly mixed and smooth. Stir for about 10 minutes until sugar is dissolved.
  • Transfer to ice cream maker and freeze according to manufacturer's directions.
  • Freeze at least five hours before serving.

1 quart nonfat yogurt (plain, nonfat, Greek strained yogurt makes it really rich)
1 cup sugar
1/2 cup unsweetened Dutch-processed cocoa powder
1/8 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • In bowl or food processor, combine all ingredients until sugar dissolves.
  • Note: You can start with less sugar, and then just add sugar to taste until it's as sweet as you want it to be.
  • Refrigerate until very cold -- at least four hours, or up to two days.
  • Transfer to ice cream maker and freeze according to manufacturer's directions.

Requires no machine or real tough labor! Great to make for yourself and with kids because it's easy. I like to whip up this frozen treat for when I'm craving chocolate and peanut butter, it's nutritious and fairly low in sugar. Cook time is freeze time.

2 cups plain low-fat yogurt
2 tablespoons chocolate, nestle nesquik powder
3 tablespoons creamy natural-style peanut butter (see directions)

Steps:

  • Mix the Nesquik with the yogurt in a bowl with a whisk or fork until fully blended.
  • 3 tablespoons of peanut butter is an estimate-- it's approximately how much I use. Feel free to use as much or little as you want. But it should be cold and "cuttable" if it's the natural type, like it'll retain its shape after you drop it in the yogurt.
  • Mix some clumps of peanut butter of varying size into the yogurt.
  • Pour the mixture into 4 ramekins or little containers, or one big one, whatever you prefer. I like about 4 1/2-cup servings. Cover each one with plastic wrap to prevent freezerburn, and let freeze for at least 90 minutes prior to eating.

¾ cup white sugar
2 teaspoons cornstarch
1 (12 fluid ounce) can fat-free evaporated milk
½ cup semisweet chocolate chips
1 cup plain lowfat yogurt
1 teaspoon vanilla extract

Steps:

  • Stir together the cornstarch and sugar, and place in a saucepan. Stir in the evaporated milk, and chocolate chips. Cook over medium heat until chocolate is melted and the mixture is thickened. Stir constantly to prevent burning.
  • Remove the mixture from the heat, and stir in the plain yogurt and vanilla. Refrigerate until chilled.
  • Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions.
