This is the quickest, easiest, best tasting Mexican dip ever! It's great to serve at parties. I always make two!

1 (9 ounce) can bean dip
1 (6 ounce) container guacamole
12 ounces sour cream
1 (1 ounce) package taco seasoning mix
1 (8 ounce) package shredded Cheddar cheese
1 jalapeno pepper, seeded and diced
1 tomato, chopped

Steps:

  • In a clear pie pan, or similar dish, spread a layer of bean dip. Top the bean dip with a layer of guacamole. Allow the layers to thicken in the refrigerator for approximately 20 minutes.
  • In a mixing bowl, while the bean dip and guacamole chill, combine the sour cream and taco seasoning. When the chilled mixture is sufficiently thickened, spread a layer of the sour cream mixture over the layer of guacamole. Top the sour cream layer with the grated cheese. Garnish the layers with the jalapenos and tomatoes.

This recipe was given to me by my sister-in-law and always goes fast! Cream cheese at the base of the dip makes it extra thick and scoopable. Seasoned beef and vegetables make it extra filling and tasty! You may want to prepare two batches. Serve with tortilla chips and enjoy.

2 pounds lean ground beef
1 (16 ounce) jar taco sauce
1 (16 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
1 (1 ounce) package taco seasoning mix
1 (16 ounce) package shredded Cheddar cheese
1 cup shredded lettuce
1 tomato, cubed
2 green onions, sliced
1 (2 ounce) can sliced black olives, drained

Steps:

  • Crumble ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, mix in the taco sauce and set aside.
  • In a large bowl, mix the sour cream, cream cheese and taco seasoning mix. Spread the mixture into a medium serving dish.
  • Layer the sour cream mixture with beef mixture, Cheddar cheese and lettuce. Top with tomato, green onions and black olives.

8 cups canola oil, for frying
1 1/2 cups Mexican chocolate
3/4 cup heavy cream
3 tablespoons unsalted butter
2 tablespoons granulated sugar
1/4 teaspoon kosher salt
1 cup unbleached all-purpose flour
3 medium eggs
1 cup granulated sugar
2 teaspoons ground cinnamon

Steps:

  • In a large Dutch oven or countertop fryer using a high heat thermometer, bring the canola oil to 375 degrees F.
  • For the chocolate sauce: Bring a double broiler to a simmer over medium-low heat. Carefully melt the chocolate. Remove from the heat. With a wooden spoon or heat resistant spatula, stir in the heavy cream until the sauce is smooth. Set aside.
  • For the churros: Set a large saucepot over medium heat. Add 1 cup water, the butter, sugar and salt. Bring to 155 degrees F, then dump in the flour and stir with a wooden spoon to incorporate and remove lumps, about 1 minute.
  • Using the spoon, add the eggs into the batter one at a time, beating after each addition, until fully incorporated. Spoon the batter into a pastry bag fitted with a star tip and carefully pipe into the heated oil, forming 6-inch strips or free form shapes. Do not overcrowd the pot. Fry for 3 to 5 minutes, turning once as the underside browns. Remove with a spider or slotted spoon and drain on paper-towel-lined sheet tray or plate.
  • To finish: Working quickly, combine the sugar and cinnamon together in a large mixing bowl. Gently add the hot churros, tossing to coat. Serve with the chocolate dipping sauce.

2 large, ripe avocados
Juice of 1 lime
3/4 teaspoon Kosher salt
3/4 cup sour cream
1/3 cup mayonnaise
1 tablespoon vinegar or rice wine vinegar
2 teaspoons store-bought taco seasoning (or homemade)
2 (9 ounce) cans bean dip (i.e. Fritos Bean Dip)
1 1/4 cup freshly grated Cheddar cheese
1 (2 ounce) can sliced black olives, drained and patted dry
2 Roma tomatoes, seeded and diced small
2 green onions, sliced

Steps:

  • Have ready a 4-cup capacity, rimmed serving dish. You could also use a pie dish or a small casserole dish.
  • To make the guacamole, in a medium-sized mixing bowl, mash together the flesh of avocados, lime juice, and Kosher salt using a fork or potato masher t until smooth.
  • In a small mixing bowl, stir together sour cream, mayonnaise, vinegar, and taco seasoning.
  • To assemble the seven layers of the dip, spread the bean dip evenly across the bottom of the dish using either an offset spatula or the back of a spoon. Then, add the guacamole and spread evenly across the beans, and repeat with the layer of sour cream.
  • Sprinkle the Cheddar across the top of the dish, followed by the olives, tomatoes, and green onions.

½ lb smoked, sharp or American cheddar, shredded fresh Cheddar cheese
1 tbsp butter
¾ cup finely chopped Green Onions
2 minced large cloves garlic
3½ oz Roma, grape or cherry tomatoes diced tomatoes
½ tsp each ground cumin and onion powder
½ tsp add more to taste if desired Cayenne pepper
1 tbsp cornstarch
13 oz full fat evaporated milk
4 oz or jalapeños fire roasted green chiles
¼ cup finely chopped fresh cilantro

Steps:

  • Melt butter in a medium-sized pot over medium heat. Sauté the green onions (white parts only) for 4 minutes, until soft. Then add the garlic and sauté for about 30 seconds until fragrant.
  • Add the tomatoes in with juices with the chiles, cumin, onion powder, and cayenne pepper. Cook while stirring occasionally, for 2 minutes until soft and fragrant.
  • Mix cornstarch into the pot, then pour in the evaporated milk, stirring well to combine.
  • Bring to a boil, then add the cheese, mixing well. Cook, while stirring, until cheese just melts through the milk and transforms into a smooth sauce. Take off heat immediately.
  • Stir in cilantro, green onions (reserved green parts) and season with salt to taste if needed. Mix well. Serve warm.
