DIY MEXICAN CHILLI WRAPS

- Cook the meat. Dry fry the beef in a non-stick pan until it has changed colour all over, spooning in a little of the sauce if the meat starts to stick to the pan. Pour in the rest of the sauce, then fill the jar about one-third full with water and rinse it out into the pan. Bring to the boil, then let it bubble away for 15 minutes, stirring occasionally.
- Do the tortillas. Heat the tortillas in the microwave according to the packet instructions (or dry fry them singly in a frying pan for 1 minute on each side). At the same time, drain and rinse the beans and tip them into the meat. Stir well and heat through for about 5 minutes until the beans are hot and the meat sauce is thick (if it's too runny it will ooze out of the wraps when you eat them).
- Serve up. Pile the tortillas on a plate and let everyone make their own wraps. The best way to do this is to spread the tortilla with some soured cream, then spoon the meat and some salad in the centre. Now fold up the side of the tortilla nearest to you, and fold in the sides to enclose the filling.

- In a large skillet, cook beef over medium heat until no longer pink. Stir in the tomato sauce, beans, corn, green chilies, onion, chili powder, cumin, garlic powder and oregano; heat through., In an 11x7-in. baking dish coated with cooking spray, layer half of the tortillas, beef mixture and cheese. Repeat layers. Bake, uncovered, at 350° for 25-30 minutes or until bubbly. Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

MEXICAN CHILLI BEAN TORTILLA

- Heat the oil in a large pan and cook the onion for 2 mins. Add 1 can of the beans and heat for a further 2-3 mins, while mashing into the onions with a masher or fork to make a rough paste.
- Add the remaining can of beans, the tomatoes, courgettes, paprika and 5 tbsp water. Cover and very gently simmer for 10 mins until thickened and pulpy, stirring occasionally. Season to taste with lime juice, salt and pepper, then stir in the coriander. Warm the flour tortillas in a dry frying pan, then lay out with the chilli beans, shredded lettuce, sliced cucumber and soured cream dip. Ask everyone to help themselves: fill, roll and eat!

MEXICAN CHILI
Steps:
- Heat the oil in a large pot over medium heat. Add the onions and cook, stirring occasionally, until translucent, about 5 minutes. Stir in the garlic and cook, stirring occasionally, until slightly golden, 2 to 3 minutes. Add the beef, breaking it up with a wooden spoon, and cook for about 5 minutes. Add the chili powder, cumin, oregano, salt, cayenne and chile paste and stir until the beef is coated with the seasonings. Add the tomatoes with their juices, beans, enchilada sauce and chocolate and stir. Reduce the heat, cover and simmer until thickened, stirring occasionally, about 30 minutes.
- Garnish the chili with your desired toppings and serve.
TORTILLA LASAGNE
Many of you might have noticed this recipe has had a name-change: somewhat lazily, and definitely erroneously, I've always called it "Mexican Lasagne"; I'm far happier with its new name, Tortilla Lasagne. Admittedly, there might well be those who take issue with the word "lasagne" here. Still, this is a lasagne-type pile-up and in place of pasta layers, there are soft tortillas and in between them a riotous assembly of tomato, red pepper, onion, chilli, corn and cheese. I advise you to put a baking sheet in the oven as you preheat to catch any drips that might fall later. And talking of later, one of the joys of this is that it reheats, by the slice, so wonderfully on the days that follow. So do think about cooking this even when you don't have so many to feed first time around. For US cup measures, use the toggle at the top of the ingredients list.

- You will need a round ovenproof dish, approx. 26cm diameter x 6cm deep / 10 inches diameter x 2¼ inches deep. Preheat the oven to 200°C/180°C Fan/gas mark 6/400ºF, slipping in a baking tray at the same time. To make the sauce, heat the oil in a pan on the stove and fry the onion, pepper and chilli. add the salt and cook gently for 15 minutes and, once soft, add the chopped coriander stalks. Add the canned tomatoes, then swill the cans out with water and add this too. Spoon in the ketchup and let things come to a simmer, leaving the sauce (or salsa, in keeping with the Mexican mojo) to cook while you get on with preparing the filling - about 10 minutes. To make the filling, mix the drained beans and sweetcorn in a bowl. Add most of the grated cheese, reserving some to sprinkle on the top at the end, and mix together. Start to assemble the lasagne by spooning about a third of the salsa into the bottom of your ovenproof dish and smearing it about, then layer on 2 tortillas so that they cover the sauce overlapping slightly, like a Venn diagram. Add a third of the beans and cheese mixture, covering the tortillas, and then about a quarter of the remaining salsa and another 2 tortillas. Repeat with another third of beans and cheese, and some more salsa before layering on another 2 tortillas. Finally, add the last layer of beans and cheese, nearly all of the remaining salsa and cover with the last 2 tortillas. Spread the very last bit of salsa over the tortillas and sprinkle with the remaining cheese. Bake in the oven for 30 minutes, and let it rest for a good 10-15 minutes before slicing like a pizza.

- To make the chilli beans, heat the oil in a saucepan over low heat and cook the garlic, onion and capsicum, stirring frequently, for 8-10 minutes, or until the onion and capsicum have softened. - Heat a dash of oil in a frying pan. Add onion, red capsicum and garlic and sauté over a low heat until the vegetables soften. Increase the heat and add the mince. Continue to cooking to brown the mince breaking it up with a fork if necessary. Add Gregg’s Ground Cumin.
- Reduce the heat. Add Wattie’s Medium Salas Chilli Beans and Wattie’s Mexican Style Tomatoes. Stir to mix. Continue cooking, stirring regularly over a medium to high heat for 15 – 20 minutes, until mince is cooked and sauce is thick. Remove from the heat. The cooked mixture should be very thick – too thin and the filling will run out of the tortilla. You should have about 3 cups of mixture. Stir through parsley or coriander if wished.
- Brush a little oil on the base of a frying pan or crepe pan, large enough to fit the tortilla. Place a tortilla into the pan. Spread about ½ a cup of the hot mince and bean filling over one half of the tortilla. Sprinkle with grated cheese and fold the other half over to enclose the filling. Cook for 2-3 minutes over a medium heat and then carefully turn the quesadilla and continue cooking until the quesadilla is golden, crispy and hot. Repeat with the remaining tortilla. Cut into wedges. Serve with a fresh tomato salsa on the side and salad greens.
