6 poblano chile peppers
5 plum tomatoes, cored and coarsely chopped
1/2 small white onion, chopped
1 clove garlic, chopped
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper
1 1/2 cups shredded monterey jack cheese
1 tablespoon dried oregano, preferably Mexican
3 large egg whites plus 1 egg yolk, at room temperature
Vegetable oil, for frying
All-purpose flour, for dredging

Steps:

  • Char the chiles.
  • Turn a gas burner on high. Char the chiles on the burner grate, turning with tongs (Marcela is a pro and uses her hands!), until blackened all over. Or char the chiles under the broiler.
  • Let them soften.
  • Transfer the charred chiles to a heavy-duty resealable plastic bag and close. Let stand 10 minutes. The chiles will steam in the bag, making them soft and easy to peel.
  • Remove the skin.
  • Gently rub the chiles with paper towels to remove as much skin as possible. It's okay if a few flecks remain-they'll add flavor, so don't rinse them off.
  • Open the chiles.
  • Using a paring knife, make a slit across the top of a chile just below the stem, leaving the stem intact. Starting from the middle of the slit, slice lengthwise down to the tip of the pepper (cut through only one layer). Open the chile like a book and pull out the seeds and inner membranes. You may need to use a paring knife to loosen the top of the seedpod. Repeat with the remaining chiles.
  • Prepare the sauce.
  • Puree the tomatoes, onion and garlic in a blender until smooth. Warm the olive oil in a saucepan over medium heat. Add the tomato puree and simmer 5 minutes, stirring occasionally; the sauce will be broth-y. Season with salt and pepper and keep warm.
  • Make the filling.
  • Place the cheese in a bowl, then add the oregano, crumbling and rubbing it with your fingers to release its flavor. Season the mixture with salt and pepper.
  • Stuff the chiles.
  • Fill each chile with about 1/4 cup cheese mixture. Fold in the sides to cover the filling, then thread 2 toothpicks across the seam to form an X. You will probably need to make a second toothpick X to secure each chile so the filling doesn't leak out when you fry.
  • Mix the batter.
  • Beat the egg whites with a mixer on high speed until soft peaks form. Add the egg yolk and beat 3 more minutes.
  • Batter and fry.
  • Heat about 1 inch vegetable oil in a deep skillet over medium-high heat until a deep-fry thermometer registers 375 degrees F.
  • Dredge: Pour flour into a shallow dish and season with salt and pepper. One at a time, coat the stuffed chiles with the flour.
  • Batter: Holding each chile by the stem, lower it into the egg batter to cover completely. Let any excess batter drip off.
  • Fry: Add the chiles to the hot oil, 1 or 2 at a time; fry, flipping once with tongs, until golden, 1 to 2 minutes per side. Drain on paper towels.
  • Eat!
  • Place a fried chile on each plate and pour the warm sauce over it. Serve immediately.

6 large poblano peppers
10 ounces Queso Oaxaca or Monterey Jack or Mozzarella cheese, shredded (you should have about 4 cups shredded cheese)
6-12 fresh epazote leaves (optional)
4 eggs, separated
1 cup neutral oil like avocado oil, grapeseed oil or vegetable oil
1/2 cup all purpose flour
Kosher salt, for seasoning
4 large ripe tomatoes, cored
1/2 white onion
2 garlic cloves, unpeeled
2 serrano peppers
2 teaspoons kosher salt
1 tablespoon fresh Mexican oregano or 1 teaspoon dried Mexican oregano or Mediterranean oregano
1 cup water
2 tablespoons neutral oil (whatever you use to fry the chiles is fine)

Steps:

  • Char the poblanos: Char the peppers over the open flame of your gas stove, turning occasionally until all sides are blackened. Transfer to a heat proof bowl, cover and let cool to room temperature. If you don't have a gas stove you can also do this on a grill or under the broiler.
  • Make the Salsa Ranchera: Turn the broiler to high and line a baking sheet with aluminum foil. Place tomatoes, onion, garlic, and serranos on the baking sheet and place under the broiler. Check every 2-3 minutes and turn the vegetables so the blacken on all sides. The garlic will cook much faster than the other vegetables. Remove each ingredient as it is done cooking. This should take anywhere from 9-15 minutes.
  • Blend the salsa ingredients. Remove the skin from the garlic and the stem and skin from the serranos. If you are sensitive to heat you can also remove the seeds of the serrano peppers too. Place all the blackened vegetables into a blender along with the 2 teaspoons of salt, the oregano, and the cup of water. Blend on high until smooth.
  • Fry the sauce. Heat the 2 tablespoons of oil in a small Dutch oven or heavy bottomed pot over medium-high heat. Add the sauce (careful it will splatter) and fry in the oil until the color deepens and the sauce is fragrant, about 2-3 minutes. Cover and keep warm.
  • Peel the peppers. Carefully remove the blackened skin from the peppers. Try your best not to rip or break them. Get off as much as you can and rinse the rest off under running water.
  • Stuff the peppers. Cut a slit down the side of each pepper and remove the seeds with your fingers, again being careful not to rip or break them. Rinse out any remaining seeds under running water. Fill each pepper with 3/4 to 1/2 cup of shredded cheese depending on the size of the pepper-you will use all the cheese. Place 1-2 fresh epazote leaves inside each pepper if using. Seal closed by threading a toothpick through the opening.
  • Make the batter. Beat the egg whites in a bowl of a stand mixer with the whisk attachment on medium-high until they are stiff. Turn the mixer to low and add the yolks one at a time until they are completely incorporated. Add a generous pinch of salt and mix that in as well.
  • Heat oil. Heat the cup of oil in a large frying pan over medium-high heat.
  • Batter the chiles. Place flour in a pie plate or shallow baking dish. Season generously with salt. Coat the chiles, one at a time, in the flour, dusting off any excess then dip the chiles into the mixing bowl and cover with the egg batter. I like to use a small spatula to "paint" the batter onto the chiles until they are thoroughly coated.
  • Fry the chiles. Once the oil is hot (test by sticking a wooden chopstick in the oil, if it is immediately covered in bubbles the oil is ready) add the chiles, two at a time. Adjust the oil temperature as they are cooking. If the oil starts to smoke, turn it down if it becomes too cool, turn up the heat.
  • Flip the chiles. Once the chiles are golden brown on one side, flip using a fish spatula and cook until golden on that side. Keep flipping and frying until they are golden all over and they are warmed through, about 5-8 minutes.
  • Drain the chiles. Remove to a paper towel-lined baking sheet to drain the excess oil and sprinkle with salt. Repeat with remaining chiles. Then serve immediately with Salsa Ranchera.
  • Make in advance. The chiles keep great if you want to make them ahead. Keep them warm for up to an hour in a low (200°F) oven. Or make, let cool, and refrigerate then reheat in a 350°F oven until hot, about 15 minutes.

A luscious mexican specialty! These are quite easy to prepare and better than what you find in a mexican restaurant. Chiles filled with savory cheese, crusted in a golden egg coating and topped with a light tomato sauce or enchilada sauce of your choice. I use canned red enchilada sauce to save time and it adds a little kick too. My family loves these! You can use 1 lg. 7 oz. can of whole green chiles but they are very soft and make it difficult to stuff.

6 chilies, medium size Anaheim Chiles or 6 pablano chilies
12 ounces monterey jack cheese
1/2 cup all-purpose flour
1 tablespoon butter or 1 tablespoon margarine
3 tablespoons onions, chopped
1 garlic clove, minced
1 (15 ounce) can tomato puree
1/4 teaspoon dry oregano
salt
4 eggs
1 teaspoon salt

Steps:

  • Roast chiles 3" under broiler, rotating until charred and blistered, about 3-4 minutes.
  • Place chiles in a sealed plastic bag or bowl covered with plastic wrap until cool enough to handle and skin is loose enough to peel.
  • Peel off skins under cold running water, then make a small slit three-quarters down length of chile and discard seeds, leaving stem attached.
  • Cut cheese in six 3/4 - 1" thick slices slightly smaller than the chiles.
  • Stuff each chile with 1 piece of cheese.
  • Roll stuffed chiles in flour, shake off excess and set aside.
  • In medium size frying pan, melt butter over medium-high heat.
  • Add onion and garlic, cook, stirring until golden (about 10 min).
  • Add tomato puree and oregano, season to taste with salt.
  • Reduce heat, cover and simmer for 15 minutes and keep warm.
  • Crispy Egg Coating.
  • Seperate 4 eggs.
  • In large bowl, whip egg whites with salt until firm peaks form. (make sure they are firm).
  • Beat egg yolks until well blended and fold into egg whites.
  • Pour oil to a depth of 2-3 inches or so and heat to 425 degrees or med-high.
  • Dipp each chile in egg coating and drop into oil and cook about 2 minutes until golden brown on each side, turning once with a fork or spatula.
  • Drain on paper towels.
  • Top with tomato sauce or enchilada sauce.
  • Optional toppings, chopped cilantro, green onions and sour cream.

1 lg. can(s) ortega whole green chiles
6 tsp flour (you can use less yolks, 1tsp. per yolk)
6 eggs, separated
1/2 tsp salt
1 Tbsp water
12 oz oaxaca cheese (mexican melting cheese, or monterey jack) you can use as much cheese as you like.
12 oz cheddar cheese, shredded (or more to taste)
1/2 c cooking oil (you can use more or less, depending on your skillet)
i usually use a large skillet, and put about a half an inch of oil in it. i don't usually use measuring cups.

Steps:

  • 1. If using fresh, skins must be removed, I deep fry until skins are brown and chile is cooked. Do not remove stem or seeds. Plunge into cold or ice water, skins will come off easier if you start at the tip and peel towards stem. If using canned, wash, remove seeds, and pat chiles dry. Keeping them whole. Cut enough Xoaca or Jack cheese into strips to stuff each chile, and set aside. Grate whatever cheese you don't use to stuff the chiles, and save it with the shredded cheddar to sprinkle over chiles when they are done.
  • 2. Beat egg whites until stiff. Add salt to yolks and stir in the flour, it will be very stiff and pasty, add water enough to make smooth but thick. Fold into stiff egg whites. It will be a very nice thick batter. (Sometimes I will add salsa juice instead of water to thin out the yolk mixture. For a less "eggy taste", I will use a 2 whites to one yolk ratio, if you have more chiles you will need to use more eggs, don't stress it's hard to mess it up.)
  • 3. Heat oil in skillet, on my electric range I do it on medium, a little on the high side. I use the oil from the deep fryer, that I used to cook the chiles to get the skins off. It makes a better tasting pepper in the end.
  • 4. When oil is hot, hold by stem (if fresh) dip stuffed chiles into batter, and drop gently into hot skillet. Cook until golden brown, (they will try to float) turn and do the same on the other side. Remove from oil. I place on paper towels or on a rack over them, to drain, sprinkle with cheese. (You can deep fry them and they are delicious that way also, but I prefer pan fried.)
  • 5. I like to serve with either salsa over the chile or some chile verde spooned over it. I like to put one in my burrito too.

Make the classic stuffed peppers, called chiles rellenos, that are common in Mexican homes and Mexican-style restaurants.

2 pounds large fresh green chiles , such as Poblano or Anaheim, roasted and peeled, or canned whole green chiles
1 pound queso blanco , Mexican Manchego or Chihuahua cheese, sliced or shredded
Optional : 1/4 cup all-purpose flour
5 large eggs, chilled and separated into whites and yolks
Pinch of salt
Oil, for frying, enough to reach a depth of 2 inches in your frying pan

Steps:

  • Gather the ingredients.
  • Roast the chiles on a hot grill or under a broiler on high heat. Use tongs to turn them occasionally, roasting until the skins are blackened and charred, about 20 minutes.
  • When the skin of the peppers is sufficiently charred and blistered, remove from the heat, place in a bowl with plastic wrap, and let them cool to room temperature. Once cool, remove from bowl and peel the skin from the cooled chiles, rinsing your fingers if they become sticky. (Do not rinse the peppers themselves, as you will be washing away most of their flavor.) Be careful to not tear the chile while peeling it.
  • Remove the seeds by making a small slice into the side of each chile, about 2 to 3 inches long, just big enough to get a spoon into. (Don't hesitate to use an existing tear if there is one.) Delicately insert the spoon into the pepper and scrape the seeds and the white membrane out, trying as hard as you can to not tear the flesh, as it can tear easily.
  • Place 2 ounces of cheese into each pepper; work slowly, delicately, and without forcing. Don't over-stuff the chile, making sure the open edges of the pepper still come together.
  • Place the flour on a large plate. Put a chile on the flour and sprinkle the rest of the flour on top. Rub your finger around on the surface of the pepper to make sure that it is completely coated, then dust off any excess flour and set chile aside. Repeat this procedure with each of the peppers.
  • To prepare the batter, whip the egg whites in a chilled bowl until they are stiff.
  • Briefly beat the egg yolks in a separate bowl.
  • Then slowly and gently fold them into the beaten whites with the pinch of salt.
  • Heat the oil in a frying pan to 350 F. Test it with a drop of batter before putting a whole chile in; if the drop sizzles and floats to the top, it's the right temperature. If it sinks, the oil is not ready; let it heat a little more.
  • Once the oil is hot enough, hold the chiles one at a time by the stem and support the bottom with your fingers or a spoon. Dip the stuffed pepper into the batter and coat completely.
  • Carefully place it into the hot oil to fry. Repeat with more chiles if there is room in your pan (don't overcrowd the pan). Cook for 1 to 2 minutes, turning over halfway until the batter is a crisp golden brown on all sides. Fry in batches if necessary.
  • Remove the chiles from the oil and let them drain on paper towels until all the peppers have been fried.
  • Serve chiles rellenos immediately. Enjoy!

4 large Poblano Peppers
8 ounces queso blanco cheese ( (Mexican Manchego, sliced or shredded))
5 large eggs ((chilled and separated into whites and yolks))
pinch of kosher salt
1/4 cup all-purpose flour
vegetable oil ((for frying, enough to reach a depth of 2 inches in your frying pan))
Salsa Roja sauce, for serving
Spanish Rice, for serving

Steps:

  • Preheat the oven's broiler and set the rack at about 6 inches from the heat source. Line a baking sheet with aluminum foil. Place peppers on the baking sheet and bake for about 10-15 minutes, using tongs to turn them occasionally, roasting until the skins are blackened and charred.
  • Transfer the roasted peppers to a plastic bag or tightly sealed tupperware container for about 10 minutes, allowing them to steam as they cool.
  • Carefully peel the skin from the peppers using a pairing knife or your fingers, being careful not to tear the pepper (rinsing your fingers if they become sticky, but do not rinse the peppers, themselves.)
  • Cut a slit along the long side of each pepper, about 2 to 3 inches long, just big enough to get a spoon into (or use an existing tear.) Delicately insert the spoon into the pepper and scrape the seeds and the white membrane out, trying as hard as you can to not tear the flesh, as it can tear easily.
  • Stuff the peppers with some of the cheese; work slowly, delicately, and without forcing. If the piece of cheese is too large, trim it down until it fits inside. Don't over-stuff the pepper; make sure the open edges of the pepper can still be closed together (Use toothpicks if needed to close them, but don't forget to remove them!)
  • To prepare the batter, whisk the egg yolks in a bowl with a pinch of salt. In a separate bowl, beat the egg whites with an electric mixer until the whites form stiff peaks. Slowly and gently fold the egg whites into the egg yolks until combined and fluffy.
  • Place flour into a shallow bowl.
  • Heat oil in a large dutch oven or deep skillet until the oil is hot enough that a drop of batter sizzles and floats to the top.
  • Gently roll each stuffed pepper in flour, tap off excess flour.
  • Dip the stuffed peppers into the batter to coat both sides, then carefully place it into the hot oil to fry. Cook for 1 to 2 minutes, turning it over halfway until batter is a crisp golden brown. Fry in batches if necessary; do not overcrowd the pan.
  • Remove the peppers from the oil and let them drain on paper towels until all the peppers have been fried.
  • Put a few spoonfuls of enchilada sauce on a plate, topped with some Spanish rice, and a stuffed pepper on top.
  • Serve immediately and enjoy!

6 fresh Anaheim chile peppers
1 (8 ounce) package queso asadero (white Mexican cheese), cut into 3/4-inch thick strips
2 eggs, separated
1 teaspoon baking powder
¾ cup all-purpose flour
1 cup vegetable shortening for frying

Steps:

  • Preheat the oven's broiler and set the oven rack at about 6 inches from the heat source. Line a baking sheet with aluminum foil. Place peppers onto the prepared baking sheet, and cook under the preheated broiler until the skin of the peppers has blackened and blistered, about 10 minutes. Turn the peppers often to blacken all sides. Place the blackened peppers into a bowl, and tightly seal with plastic wrap. Allow the peppers to steam as they cool, about 15 minutes.
  • Rinse cooled peppers under cold water to peel off the skins, and cut a slit along the long side of each pepper to remove the seeds and core. Rinse the peppers inside and out, and pat dry with paper towels. Stuff the peppers with strips of the cheese.
  • Whisk the egg yolks in a bowl with the baking powder. In a second metal bowl, beat the egg whites with an electric mixer until the whites form stiff peaks. Gently fold the beaten egg whites into the yolk mixture. Place flour into a shallow bowl.
  • Heat the vegetable shortening in a skillet over medium heat. Roll each stuffed pepper in flour, tap off excess flour, and dip the peppers into the egg mixture to coat both sides. Gently lay the coated peppers into the hot shortening. Fry peppers until lightly golden brown and the cheese has melted, about 5 minutes per side.

We used to order these from our local Mexican place and finally one night I asked the chef how they were made. I couldn't believe how easy they are! And tasty, you can spice them as hot as you like, enjoy!

6 medium poblano peppers
1 lb seasoned ground beef
1 lb chihuahua cheese
2 c flour
1/2 c chicken coating
2 medium eggs
1/2 c milk

Steps:

  • 1. Pre-Heat oil in fryer to 320F. Wash peppers, cut off top, remove seeds and ribs. Wrap peppers in damp cloth and microwave for 5 minutes to soften pepper. (you can skip this step if you like your peppers crunchy)
  • 2. Brown ground beef with some taco seasoning to your liking. Slice the Chihuahua cheese.
  • 3. Taking turns, stuff the peppers with the meat and then cheese, alternating until full.
  • 4. Combine Flour, Chicken Coating and Eggs to create a thick pancake like batter. Liberally coat the peppers in the batter, making sure to seal the top.
  • 5. In deep fryer, cook until golden brown, approx 5 minutes.
  • 6. Serve with Guacamole, Sour Cream, Salsa, Enchilada Sauce! The options are endless and DELICIOUS!!!

  • 1. Preheat the broiler and arrange peppers in a single layer on a baking sheet. Broil until blackened, about 2–5 minutes, then use tongs to flip and broil the other side, about 2–5 more minutes. Cover the peppers with a clean kitchen towel to lightly steam them. Alternatively, place the peppers inside a sealed plastic bag or lidded dish to steam. Once the peppers have softened, about 10–15 minutes, use a paring knife to peel the skins off. Make a slit from the stem end of the pepper about halfway down, creating an opening just large enough to remove the core and seeds and to stuff the peppers. Use the paring knife to carefully remove the core, membranes, and seeds.

Place them immediately in a plastic bag, close it tightly and let them sweat for 10 to 20 minutes. Lastly, under a thin stream of cold water, remove the charred skin, which should come right off. Make a slit down one side of the pepper and remove the cluster of seeds and veins. Once cleaned, pat them dry.
  • In a stand mixer, beat the egg whites until they hold stiff peaks. Gently, on low speed, fold in the egg yolks and only beat enough so that they are incorporated, a few seconds.
  • In a large casserole, heat about 1/2-inch of oil over medium to medium-high heat. Dip each of the stuffed and floured chiles into the egg batter, making sure that they are entirely covered in batter.
