MEXICAN CHICKEN MARINADE



Mexican Chicken Marinade image

This Mexican chicken marinade is easy to mix up and adds so much flavour to your chicken. Marinate and then grill or bake, or freeze for later!

4 skinless, boneless chicken breasts
1/4 cup olive oil
1 lime, juice
2 cloves garlic, minced
1/4 cup cilantro, chopped
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place the chicken breasts in a large ziplock bag. In a small bowl, whisk together the olive oil, lime juice, garlic, cilantro, chili powder, cumin, salt, and pepper.
  • Pour the marinade over the chicken and seal the bag, squeezing out all the air.
  • Move the chicken around in the marinade until it is all evenly coated.
  • Refrigerate and let it marinate for at least 30 minutes and up to 4 hours (see note).
  • You can freeze the chicken in the marinade immediately and let it marinate as it defrosts, or marinate and cook it immediately.
  • Either grill the chicken for 6-8 per side, pan fry for 6-8 minutes per side over medium heat, or bake at 375 degrees F for 20-30 minutes, or until an internal temperature of 165 degrees F has been reached.
  • Let the chicken rest, tented with foil, for 5 minutes before serving.

1/4 cup plus 2 tablespoons apple cider vinegar
2 tablespoons sugar
1 tablespoon chili powder
2 medium red onions, sliced into 1/4-inch-thick rounds
1 cup reduced-fat mayonnaise
1/3 cup chopped fresh cilantro
1/2 small head cabbage, shredded (about 4 cups)
2 jalapeno peppers, seeded and chopped
Kosher salt and freshly ground pepper

1 9-ounce bag low-sodium tortilla chips, finely crushed
Cooking spray
1 1/4 pounds skinless, boneless chicken breasts, cut into 1-inch strips

Steps:

  • Position a rack in the upper third of the oven and preheat to 450 degrees F. Whisk 1/4 cup vinegar, 1 tablespoon sugar and the chili powder in a shallow microwave-safe dish. Add the onions, separating them into rings. Cover with plastic wrap and microwave until crisp-tender, 3 to 5 minutes. Toss to coat the onions with the liquid, then let cool.
  • Meanwhile, whisk 1/3 cup mayonnaise, the cilantro and the remaining 2 tablespoons vinegar and 1 tablespoon sugar in a large bowl. Add the cabbage, jalapenos, 1 teaspoon salt, and pepper to taste and toss. Refrigerate the slaw until ready to serve.
  • Whisk the remaining 2/3 cup mayonnaise and 1 tablespoon liquid from the pickled onions in a shallow dish. Put the crushed chips in another dish. Coat a baking sheet with cooking spray. Dip the chicken in the mayonnaise mixture and then in the chips; place on the baking sheet. Mist the chicken with cooking spray. Bake until crisp and cooked through, 10 to 12 minutes. Serve with the slaw and onions.

  • Heat oven to 400°F. Spray large cookie sheet with cooking spray.
  • In large resealable food-storage plastic bag, place taco seasoning mix. In shallow bowl, beat egg. In another large resealable food-storage plastic bag, place bread crumbs. 2 pounds chicken breasts
1 tablespoon olive oil
1/2 cup mild salsa ((medium if you like spicy))
3-4 tablespoons brown sugar (**)
1 4 oz. can mild diced green chilies
1 14.5 oz. can fire roasted diced tomatoes, drained ((or regular))
1 tablespoon chili powder
1 1/2 teaspoons salt
1 tsp EACH ground cumin, garlic powder, onion powder
1/2 tsp EACH smoked paprika, dry oregano, pepper
1/2 teaspoon ground chipotle chili pepper ((optional for more heat))
1 teaspoon liquid smoke
Hot sauce to taste

Steps:

  • Rub chicken breasts with oil and place in the bottom of your slow cooker. Add all of the remaining ingredients except for the hot sauce. Cook on high for 2-4 hours or on low for 6-7 hours or until chicken is tender enough to shred.
  • Shred the chicken and let it cook on low for an additional 20 minutes to absorb some of the liquid/juices. Drain all excess liquid (see note***). Taste and add hot sauce to taste if desired.

1 teaspoon garlic powder
1 tablespoon chili powder

Steps:

  • Preheat your oven to 350 degrees.
  • Heat the cast iron skillet on high heat.
  • Season your chicken to taste with garlic powder, chili powder, cumin, oregano, paprika, kosher salt and cayenne pepper.
  • Add the chicken, skin side down and cook until browned, 4-5 minutes.
  • Flip and cook an additional 3-4 minutes.
  • Push the chicken to the side (or onto a plate).
  • Add the olive oil to your cast iron skillet and heat on medium-high.
  • Add in the onions and start to cook for 3-4 minutes.
  • Once the onions are mostly melted add in the garlic. Cook for 30 seconds while stirring.
  • Add in the uncooked rice, salsa and red bell pepper and cook for a minute until boiling.
  • Pour in the chicken stock and put the chicken back in skin side up.
  • Bake covered with foil for 35-40 minutes.

2 lbs chicken
¼ cup lime juice (approx 2 limes)
6 fl oz pineapple juice
¼ cup cilantro (diced)
2 cloves garlic (minced)
1 tbsp worcestershire sauce
2 tbsp apple cider vinegar
1 tbsp oil (avocado, extra virgin olive oil, vegetable oil,)
1 tbsp chili powder
1 tsp ground cumin
1 tsp ground black pepper
1 tsp salt

Steps:

  • In a medium size mixing bowl combine the ingredients for the marinade. Whisk together.
  • Add the chicken and submerge in the marinade. Cover and place in refrigerator to marinate 2-4 hours (over marinating can cause mushy chicken).
  • Preheat grill to 425℉.
  • Remove chicken from the marinade and pat dry.
  • Place the chicken over direct heat on the grill and cook for 3 minutes then flip the chicken. Cook an additional 3 minutes.
  • Move the chicken to more indirect heat on the grill, cover and cook for an additional 5-7 minutes until the chicken reaches an internal temperature of 160°F in the thickest part.
  • Allow the chicken to rest (the internal temperature will continue to rise to 165°F). After resting the chicken can be sliced and served.

8 ounces cheddar cheese or Mexican cheese blend, shredded
Garnish with your favorite toppings: cilantro leaves, avocado, guacamole, green onions, jalapeños, sour cream, salsa or salsa verde

Steps:

  • Preheat oven to 350F.
  • In a small bowl, combine all ingredients for homemade taco seasoning then set aside.
  • Spray cooking spray in the bottom of a 9x13 pan.
  • Add black beans, cover with a can of Rotel, then layer the chicken tenders on top, spaced evenly.
  • Sprinkle on half of the taco seasoning, followed by the peppers and onions, and then sprinkle on the rest of the taco seasoning. Cover evenly with shredded cheese.

These chicken breasts are full of Mexican flavor and oven-baked to tender juicy perfection. This is a quick and delicious way to prepare chicken for your next family meal.

4 boneless skinless chicken breasts
¼ cup extra virgin olive oil (or other vegetable oil)
4 tbsps taco seasoning

Steps:

  • Prepare Chicken Breasts: Trim any fat from the chicken breasts, place each breast on top of a sheet of plastic wrap, and then place another sheet of plastic wrap over the breast1 (see Notes section). Flatten the chicken breasts to an even thickness by using a rolling pin or meat mallet. Starting at the middle of the breast, gently pound down and out toward the edges until there is no longer a hump and the breast is an even thickness throughout.
  • Brine Chicken Breasts: Fill a large bowl with one quart of warm water. Add ¼ cup of kosher salt to the water and mix until the salt is fully dissolved. Add the chicken breasts to the water and allow to sit for 15 to 20 minutes. Remove the chicken breasts from the brine, and then pat dry with paper towels.
  • Preheat oven to 450°
  • Season Chicken Breasts: Place the breasts on a baking sheet or in a baking dish. Brush both sides of each chicken breast with olive oil and evenly coat each side with my Homemade Taco Seasoning mix. Alternatively, season with your own favorite taco seasoning.
  • Bake Chicken Breasts: Place the baking sheet on the middle rack of the oven and bake until the breasts reach an internal temperature of 165°F, this can take anywhere from 10 to 20 minutes2 (see Notes section) depending on the thickness of the breasts and your oven's settings. For instance, when I set my oven to the traditional Bake setting, the breasts usually cook to 165°F in 12 to 14 minutes. If I set my oven on Single Rack Convection Bake, they usually cook to 165°F in 8 to 10 minutes. I highly recommend using a probe or meat thermometer to get the best results.
  • After removing the chicken from the oven, allow it to rest for 8 to 10 minutes before serving.

Steps:

  • Brown the chicken pieces in the butter, turning each piece to color evenly. When nearly browned, add 2 tablespoons chopped onion and cook gently until onion and chicken are brown and blended. Add salt to taste, garlic, and chilis. Pour over this mixture 2/3 cup white wine and simmer gently until chicken is tender. Remove chicken to a hot platter, pour pan juices over it and garnish with chopped toasted almonds. Serve with polenta.
