Yummy!! This is something a little different and very tasty! Next time I'm planning on Making a HUGE batch, frying them and flash freezing them on cookie sheets so my husband and kids can heat them up when they want too, or so I have a ready made appetizer for unexpected guests!!

2 cups grilled boneless skinless chicken breasts (I marinade mine in 1 T oil, 2 cloves garlic, 1 t cumin, and the juice of one lime)
2 cups monterey jack cheese or 2 cups Mexican blend cheese, shredded
1 (15 ounce) can drained black beans
2 cups frozen sweet corn (unthawed and drained of liquid)
1/2 chopped sweet red pepper
4 -5 diced green onions
2 minced fresh garlic cloves
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chili powder
1 teaspoon cumin (can put 1/2 t more if desired)
1 (16 ounce) package egg roll wraps
oil (for frying)

Steps:

  • Chop the chicken into small dices.
  • Mix all ingredients together.
  • Moisten the edges of an eggroll wrap and put approx 2 tablespoons of filling in the middle.
  • Fold like you would an eggroll (directions and picture are usually on the eggroll wrapper container).
  • Make sure the flap is sealed to keep the filling inside.
  • Heat oil to 350°F and cook just until golden browned (approximately 3-5 minutes).
  • Cut diagonally and serve with guacamole and sour cream.

These Chicken Enchilada Roll Ups are a great appetizer recipe for parties! Easy to make ahead and easy to serve.

2 (8-oz) packages cream cheese, softened
1 1/2 cups shredded Mexican cheese
2 tablespoons Old El Paso taco seasoning
2 cups shredded chicken ((rotisserie chicken works well))
1 (10-oz) can drained diced tomatoes with green chilies, well
1 teaspoon minced garlic
4 green onions sliced
1/2 cup chopped cilantro
8 burrito sized tortillas

Steps:

  • In a large bowl, combine all of the ingredients (except tortillas) until well blended.
  • Spread about ½ cup of the mixture over the entire surface of a tortilla. Roll up tightly. Repeat with remaining tortillas.
  • Refrigerate until firm, at least 30 minutes. Also, if you chill longer they will be easier to cut.
  • Slice into 1/2 inch slices with a serrated knife to prevent crushing and serve.

These Mexican spring rolls are so scrumptious you should make a double batch! Made healthier by baking, and stuffed full of the flavours of Mexico. I made this using Mexican Pulled Pork Carnitas because this recipe is part of a series using leftovers. But you can substitute with shredded or diced chicken or beef.

12 spring roll wrappers or 16 egg roll wrappers (, defrosted (Note 2))
Olive oil spray
Enchilada sauce - for dipping ((Note 3))
1 packed cup leftover pulled pork ((Note 1))
3/4 cup grated cheese ((cheddar, tasty or any other good melting cheese))
1/2 cup corn kernels ((canned))
3/4 cup black beans ((canned))
1/2 cup red bell peppers ((capsicum), diced)
1/4 cup coriander leaves
1/4 tsp paprika
1/4 tsp cumin
1/2 tsp onion powder
1/2 tsp salt

Steps:

  • Preheat the oven to 350F/180C.
  • Combine the filling ingredients and mix well.
  • Place a wrapper diagonally in front of you. Place 1/4 cup of the filling on the bottom half of the wrapper and shape into a log. If you are using egg roll wrappers, use 3 tablespoons per wrapper.
  • Roll up the wrapper to halfway, then fold in the left and right sides, then roll to the end, using a little water to seal.
  • Spray the spring rolls lightly, then turn each spring roll and lightly spray the other side.
  • Bake for 30 minutes, turning once, until golden.
  • Serve with Enchilada Sauce as the dipping sauce.

1/2 green bell pepper (finely diced)

2 Tablespoons green onion (chopped)

2 1/2 c cubed cooked chicken
1 1/2 c (12-ozs) sour cream, divided
1 can(s) (10.75-ozs) condensed cream of mushroom soup, undiluted, divided
3 tsp taco seasoning, divided
1 1/2 c (6-ozs) shredded cheddar cheese, divided
1 small onion, chopped
1/2 c salsa (your choice)
1/4 c sliced ripe olives (black ones)
10 flour tortillas (7")
shredded lettuce
chopped tomatoes
additional olives and salsa, optional

Steps:

  • 1. In a bowl, combine chicken, 1/2 cup sour cream, half of the soup, 1-1/2 teaspoons taco seasoning, 1 cup of cheese, onion, salsa and olives.
  • 2. Spoon 1/3 cup onto each tortilla. Roll up and place seam side down in a greased 13"x9"2" baking dish.
  • 3. Combine remaining sour cream, soup, and taco seasoning; pour over tortillas. Cover and bake at 350 degrees for 30 minutes or until completely heated through.
