CHARRED MEXICAN STREET CORN RECIPE

8 ears fresh (sweet corn on the cob, husked)
10 ounce package cotija cheese (crumbled)
mayonnaise (I used Hellman's Light)
chopped cilantro
chili powder
2-3 fresh limes (cut in wedges)

Steps:

  • Leave corn cobs whole or snap in half before cooking for more manageable eating.
  • Grill corn on the cob on a hot grill 8-10 minutes, turning often.
  • Corn should have char marks.
  • (It's more authentic to grill the corn, but you can steam it if you don't have access to a grill.)
  • While still hot, use a butter knife to spread mayonnaise thickly on corn.
  • Quickly roll in crumbled cotija cheese.
  • Sprinkle with chili powder and chopped cilantro.
  • Spritz with lime wedges.
  • Serve immediately!

2 cups corn
2 teaspoons vegetable oil
2 scallions
Salt and pepper
2 tablespoons mayonnaise
2 teaspoons lime juice
4 cooked hot dogs
4 buns
Crumbled Cotija or feta
Chili powder

Steps:

  • In a skillet, cook corn until browned. Add vegetable oil and sliced scallion whites and cook until scallion is tender. Season with salt and pepper. Combine mayonnaise and lime juice. Place hot dogs in buns and top with corn mixture, lime mayonnaise, crumbled Cotija or feta, and sliced scallion greens. Sprinkle with chili powder.

My Mexican friend gave me this recipe for corn on the cob. Street vendors there sell their corn made this way. Cotija cheese can be found in most grocery stores.

4 ears corn, shucked
¼ cup melted butter
¼ cup mayonnaise
½ cup grated cotija cheese
4 wedges lime

Steps:

  • Preheat an outdoor grill for medium-high heat.
  • Grill corn until hot and lightly charred all over, 7 to 10 minutes, depending on the temperature of the grill. Roll the ears in melted butter, then spread evenly with mayonnaise. Sprinkle with cotija cheese and serve with a lime wedge.

  • Carefully lay the coated corn dog into the hot oil. Cook about two at a time so you don't overcrowd the pot. Fry until golden brown all around, about 3 to 5 minutes, turning halfway.
