Mexican Burgers With Avocado & Fried Eggs image

These are savory, spicy burgers that are made even tastier with spicy mayo, avocado slices, a fried egg and pico de gallo. Add cheese if you like, or maybe even bacon. I'm sure these would taste great if cooked on a grill, but I pan-fry them.

1 1/2 teaspoons ground cumin
1/2 teaspoon Mexican oregano
1/2 teaspoon chili powder
1/2 teaspoon ground coriander
1/2 teaspoon red pepper flakes
1/4 teaspoon black pepper
1 teaspoon salt
3 garlic cloves, peeled
1 serrano pepper, stem removed
1/2 onion
1 lb lean ground beef
2 tablespoons cilantro, finely chopped
1/2 cup mayonnaise (I use the light kind- works great)
1 1/2 tablespoons hot sauce (I like Cholula in this)
1 teaspoon lime juice
2 tablespoons olive oil (if pan-frying)
1 tablespoon butter
4 eggs
4 hamburger buns, sliced
1 avocado, pitted, peeled, and thinly sliced
pico de gallo

Steps:

  • Put the first 10 ingredients (cumin through onion) in a food processor and puree. Add half of the ground beef, and pulse to combine everything well.
  • Put the rest of the ground beef and one tablespoon of cilantro in a large bowl. Add the beef-spice mixture and stir to combine well. Form this mixture into four burger patties.
  • Mix the remaining cilantro with mayo, hot sauce, and lime juice. Add salt & pepper if desired- I usually don't. Set aside.
  • Heat oil in a skillet over medium-high heat. Cook patties, flipping once, for about 12-15 minutes, or until desired doneness.
  • Just before the meat is done, melt butter in a separate pan, then crack the eggs into it and cook until whites are firm and yolks are runny, about 3-5 minutes.
  • Spread the mayo on both inner sides of the buns, then place down avocado slices, meat, fried egg, and pico de gallo. Serve!

1 1/2 lbs lean ground beef
6 tablespoons panko breadcrumbs
1/4 cup red onion, finely chopped
2 tablespoons pickled jalapeno peppers, finely chopped
1 tablespoon chipotle chile in adobo (pureed)
1/2 tablespoon fresh cilantro, chopped
1/2 teaspoon ground cumin
1/2 teaspoon black pepper (to taste)
1/2 cup cheddar cheese, grated
4 hamburger buns

Steps:

  • In a large bowl, combine ground beef, panko, onion, jalapeño peppers, chipotle pepper, cilantro, cumin, freshly black pepper and cheese. Divide mixture into 4 equal portions and form 4 patties. Place them in a plate, cover with plastic wrap and transfer to the refrigerator for 1 hour.
  • The stuffed version: mix all the ingredients except cheese and form 6 balls but 3 bigger than the others. Create a well in the center of the biggest ones and add 2 tablespoons cheese per. Place the smaller patties on top and seal. Cover with plastic wrap and refrigerate for 1 hour.
  • AVOCADO SPREAD INGREDIENTS - 1 avocado, seeded & scooped - juice of 1/4 lime - 2 tablespoons crema or light sour cream - 1 small clove garlic, minced - couple dashes hot sauce such as Cholula®.
  • AVOCADO SPREAD - In a small bowl, scoop avocado and add lime juice; mashed with a fork until smooth. Add sour cream, garlic, hot sauce and freshly ground black pepper; stir until well blended. Transfer spread to the refrigerator until ready to serve.
  • Preheated BBQ. Grill burger at 500ºF for 7 minutes per side. If desired, about 3 minutes before the end of cooking, place 3 thin slices of cheese per burger. Spread avocado mixture to top buns and garnish to liking.

1 lb ground beef
1 large avocado
1 tablespoon green chili pepper, diced
1 egg, slightly beaten
1/4 cup green onion, chopped
1 teaspoon fresh lemon juice
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
4 slices monterey jack cheese
hamburger bun with sesame seeds
4 -6 teaspoons butter, melted
tomatoes
lettuce (optional)
onion (optional)
mayonnaise

Steps:

  • Take the avocado and slice in half, remove the pit and peel each half.
  • Sprinkle fresh lemon juice over each half of avocados. Slice one half of avocado and set aside.
  • In a medium bowl, take other half of the avocado and mash with a fork.
  • Add chili peppers, egg, onions, minced garlic and salt and pepper. Stir to combine.
  • Add ground beef to the mixture and combine well.
  • Shape into 4 beef patties.
  • Chill in ref. for 10 minutes.
  • Heat a outdoor grill on medium heat or a skillet.
  • Grill or pan fry hamburger patties until no longer pink inside. (10-15 minutes per side ).
  • Add monterey jack cheese and let melt.
  • Butter each hamburger bun and toast on the top shelf of a grill or in the oven on broil.
  • Mayonnaise each hamburger bun and top with hamburger, tomato, slice of avocado, onion (opt) and lettuce (opt).
  • Serve with french fries , or potato chips or one of your favorite snacks.

I have recently discovered the glory that is Spam. People say if you're not introduced to it as a kid, you will hate it as an adult. LIES! I tried it at 28 and am in love. So versatile, and the way it just melts in your mouth like some sort of creamy meatcake is out of this world. Here is a burger recipe I came up with, and I like it more than a regular burger. I used Turkey Spam, which is just as good as the original and has 1/3 of the fat and calories. Regular Spam or Light Spam would work well too, I'm sure.

1 avocado, peeled & pitted
1/2 lime, juice of
1 garlic clove, crushed
1 green onion, finely sliced
2 tablespoons cilantro, finely chopped
1 (12 ounce) can Spam, sliced lengthwise into four equal-sized slices
2 tablespoons butter, divided
1/2 teaspoon cumin
1/2 teaspoon oregano
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper
4 eggs
4 hamburger buns, sliced
8 -12 pickled jalapeno peppers
1 tomatoes, sliced

Steps:

  • Make your guac: Place avocado and lime juice in a small bowl and mash with a potato masher until smooth. Fold in garlic, green onion and cilantro until incorporated. Set aside.
  • Melt one tablespoon of butter in a skillet over medium-high heat. Sprinkle cumin, oregano & both peppers over both sides of your Spam slices; place Spam slices in skillet and fry for 8-10 minutes, flipping halfway through, until crispy.
  • While spam is cooking, melt the other tablespoon of butter in a separate pan, then crack the eggs into it and cook until whites are firm and yolks are runny, about 3-5 minutes.
  • Spread guacamole on bottom of hamburger buns. Place the sliced tomato and pickled jalapenos on the guac, then top with a Spam slice. Finally, top with a fried egg & serve.

3 tablespoons salted butter, softened
4 hamburger buns, split
8 slices thick-cut bacon
1 ½ pounds lean ground beef
2 tablespoons Worcestershire sauce
1 tablespoon steak seasoning
4 slices Cheddar cheese
4 large eggs
4 large lettuce leaves
½ red onion, thinly sliced
2 avocados - peeled, pitted, and thinly sliced

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Butter each half of hamburger buns.
  • Place bacon in a heavy skillet and cook over medium-high heat, turning occasionally, until crisp, 10 to 12 minutes. Drain bacon slices on paper towels. Set the skillet aside, reserving grease.
  • Mix ground beef, Worcestershire sauce, and steak seasoning together in a large bowl; do not overmix. Form into 4 patties. Make a thumbprint in the middle of each patty to keep it from shrinking as it cooks.
  • Grill patties on the preheated grill until preferred doneness, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Top each burger with 2 slices bacon and a Cheddar cheese slice; close the grill lid until cheese is melted, about 1 minute. Remove patties from the grill.
  • Place buns on the grill, buttered-side down, and cook until browned, about 1 minute. Remove from the grill. Place 1 patty on the bottom half of each bun.
  • Reheat the bacon grease in the skillet over medium-high heat. Crack eggs into the hot skillet and fry until whites are cooked but yolk is still runny, about 4 minutes. Immediately place 1 egg on top of each patty. Top with lettuce, onion, avocado, and remaining buns.
