My mom made up this dip and everyone seems to go nuts everytime its on the table! Its the easiest thing to put together so I always bring it to tailgate parties.

1 can(s) corn
1/2 jar(s) hot salsa

Steps:

  • 1. Drain the black beans and corn.
  • 2. Mix in with hot salsa.
  • 3. Salt and pepper to taste. *You can add hot sauce to kick up the heat as well. Ready to serve!

This recipe was given to me by my siser over 15 years ago, and I have many requests for it. When layered in a glass dish, it's very colorful for holiday parties. For a more casual get together with a festive look, such as a BBQ, layer it in a 10" iron skillet, and tie a bandana around the handle.

1 (15 ounce) can refried beans or 1 (15 ounce) can fat-free refried beans
1 package taco seasoning
1 (8 ounce) container single cream or 1 (8 ounce) container nonfat sour cream
1 medium onion, finely chopped
jalapeno pepper, sliced,from jar
shredded lettuce
1 large ripe tomatoes, , chopped in small chunks
sharp cheddar cheese, shredded
1 can black olives, sliced

Steps:

  • Mix taco seasoning with beans and spread in a 13x9 inch glass dish.
  • Layer sour cream, onion, peppers, lettuce, tomatoes, cheese& olives in that order.
  • Serve with tortilla chips or scooper size Fritos.

This recipe was given to me by my sister-in-law and always goes fast! Cream cheese at the base of the dip makes it extra thick and scoopable. Seasoned beef and vegetables make it extra filling and tasty! You may want to prepare two batches. Serve with tortilla chips and enjoy.

2 pounds lean ground beef
1 (16 ounce) jar taco sauce
1 (16 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
1 (1 ounce) package taco seasoning mix
1 (16 ounce) package shredded Cheddar cheese
1 cup shredded lettuce
1 tomato, cubed
2 green onions, sliced
1 (2 ounce) can sliced black olives, drained

Steps:

  • Crumble ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, mix in the taco sauce and set aside.
  • In a large bowl, mix the sour cream, cream cheese and taco seasoning mix. Spread the mixture into a medium serving dish.
  • Layer the sour cream mixture with beef mixture, Cheddar cheese and lettuce. Top with tomato, green onions and black olives.

This isn't very pretty. You can add another cup of cheese on top if you want and add veggies, guacamole and sour cream to make it more like nacho dip. I personally can eat the whole thing just like it is. Leftovers go well in a soft tortilla.

1 (16 ounce) can fat-free refried beans
1 cup salsa (I like medium)
4 ounces green chilies
1 cup cheese, shredded (I like a Mexican or taco blend)

Steps:

  • Spray a pie plate.
  • Mix all ingredients and place in pie plate.
  • Bake at 350 degrees for about 15 minutes or hot in the center.
  • Add extra cheese and anything else you want on top.

Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.

1 pound dried pinto beans, rinsed
2 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®)
½ pound bacon, cut into 1/2-inch pieces
1 yellow onion, chopped
1 tablespoon chili powder, or to taste
1 tablespoon ground cumin, or to taste
1 ½ teaspoons garlic powder, or to taste
½ bunch fresh cilantro, chopped
salt to taste

Steps:

  • Place pinto beans into a large pot and pour in enough water to cover by 2 to 3 inches. Let beans soak overnight.
  • Drain beans, return to pot, and pour in fresh water to cover; add diced tomatoes, bacon, onion, chili powder, cumin, and garlic powder. Bring to a boil, reduce heat to low, and simmer for 3 hours.
  • Stir cilantro and salt into bean mixture; simmer until beans are soft, about 1 more hour.

This is a Vegan recipe that came from www.rochestergoodfood.com. I use left-over Cranberry Beans instead of the canned ones. (Cranberry Beans are similar to Pinto Beans.) This is good served with chips, raw vegetables, or spread on tortillas.

1 teaspoon chili powder
1/4 cup onion, chopped

1 stalk celery, finely chopped

  • Blend all ingredients in a food processor or blender until almost smooth. Adjust seasonings to taste.

2 tablespoons vegetable oil or lard
1 large white onion, finely chopped
1 1/2 teaspoons kosher salt, divided
1/2 teaspoon ground fennel seeds
2 (15-ounce) cans black beans, drained

Steps:

  • Heat oil in a large skillet over medium-high. Add onion and 1/2 tsp. salt and cook, stirring occasionally, until caramelized, about 15 minutes. Stir in fennel and cook 30 seconds. Add beans, remaining 1 tsp. salt, and 2 Tbsp. water and heat through, stirring to combine. Transfer to a food processor or blender and purée until smooth.

  • Bean spread can be stored in an airtight container and chilled for up to 3 days. Bring to room temperature before serving.
