1 lb halibut fillet (4 to 6 oz each)
1/3 cup lime juice
3 garlic cloves, minced
1 tablespoon oil
1/4 cup beer
1 tablespoon fresh parsley, chopped
1/2 teaspoon cumin
2 teaspoons Dijon mustard
1 cup salsa
1 cup shredded cheddar cheese

Steps:

  • Combine lime juice, garlic,oil, beer, parsley, cumin, and mustard. mix together.
  • Place halibut in marinate for 1 hour. Drain.
  • Place halibut fillets on a oiled cookies sheet. Bake at 350°F for 15 minutes.
  • Drain off liquid, and put salsa on top of halibut fillets and bake 10 more minutes.
  • Top with cheddar cheese and bake until cheese is melted.

Make this Mexican baked fish as hot or mild as you like. Serve with rice, black beans, warm tortillas and margaritas for a festive meal!

1 ½ pounds cod
1 cup salsa
1 cup shredded sharp Cheddar cheese
½ cup coarsely crushed corn chips
1 avocado - peeled, pitted and sliced
¼ cup sour cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease one 8x12 inch baking dish.
  • Rinse fish fillets under cold water, and pat dry with paper towels. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips.
  • Bake, uncovered, in the preheated oven for 15 minutes, or until fish is opaque and flakes with a fork. Serve topped with sliced avocado and sour cream.

This was a recipe that was given to my mother when we lived in Alaska. We caught our own fresh halibut and combined mayo and jalapenos to make a tasty dish.

4 halibut fillets
1/4 cup mayonnaise (or more if you like)
1/2 cup jalapeno (or more if you like)
2 cups monterey jack cheese
jalapeno juice, small amount

Steps:

  • Place halibut filets in a glass baking dish.
  • Spread mayonnaise evenly over halibut.
  • Sprinkle Monterey Jack Cheese over halibut.
  • Add jalapenos and pour a small amount of juice from jar to coat halibut.
  • Bake in oven at 350 degrees until halibut is done.

5 ripe tomatoes
1/2 cup finely chopped onion
1/4 cup vegetable oil, divided
2 garlic cloves, minced
1 1/2 teaspoons seeded and minced serrano chilies (more if wanted)
1/4 cup sliced Spanish olives (stuffed with pimentos)
2 tablespoons capers
1/4 teaspoon dried oregano
6 halibut fillets (6 oz each)
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
2 teaspoons unsalted butter

Steps:

  • Place tomatoes on a large rimmed baking sheet; bake at 450°F for 20 minutes.
  • Turn tomatoes; bake 20 more minutes or until skins are blistered and lightly browned.
  • Pulse tomatoes and pan juices in a food processor until roughly chopped.
  • Sauté onion in 2 tablespoons hot oil in a large skillet over medium-high heat 3 minutes or until tender.
  • Add garlic and serrano; sauté 15 seconds; adding olives, capers, and chopped tomatoes; bring to a boil.
  • Reduce heat, and simmer 5 minutes.
  • Remove from heat; stir in oregano.
  • Sprinkle halibut with salt and pepper.
  • Melt butter with remaining 2 tablespoons oil in a large skillet over medium-high heat.
  • Add halibut; cook 5 minutes on each side or until fish flakes easily with a fork.
  • Serve with sauce, fluffy white rice and a green vegetable.
