DELICIOUS ANGEL HAIR PASTA
Angel hair pasta cooked and served with essentially a hot pasta salad dressing and cheese. I came up with this recipe as I could not find anything to eat, so I went through my spice cabinet and refrigerator, found these ingredients and threw them together. Serve with fresh chopped tomato.

- Bring a pot of lightly salted water to a rolling boil; cook the angel hair pasta in boiling water until the pasta has cooked through yet firm to the bite, 4 to 5 minutes. Drain.
- Heat the olive oil in a skillet over medium-high heat. Add the pimentos, lemon juice, vinegar, sugar, 1 tablespoon parsley, basil, oregano, garlic powder, and onion powder to the oil and stir; cook until the herbs are heated and fragrant. Stir the Parmesan cheese into the mixture. Add the pasta to the skillet and toss to evenly coat with the seasonings. Season with salt and pepper, garnish with remaining parsley, and serve hot.

MEXICAN ANGEL HAIR (PASTA)

- Pinch the Chorizo sausage into a hot pan with cooking oil. Add diced green pepper. Brown Chorizo sausage. Add water, tomato soup, and all spices/salt. Add angel hair pasta and cook until it is nearly done. Add Rotel tomatoes with lime and cilantro (in the can). Add fat free half & half. Stir in can of refried beans until it dissolves into sauce. Taste and conduct final seasoning. Cook to desired tenderness. Adjust consistency by stirring in water. (Note: You could top this with "queso fresco", but the stuff is, in my experience, flavorless, and this recipe tastes fine to me without the added fat. If you go the "queso fresco" route, you'll want to drizzle some "Mexican Creme" on top of it. You can make "Mexican Creme" by mixing 1 cup sour cream, 1 cup heavy cream, and 1 teaspoon of salt together, and letting it sit for a while before refrigerating. Watch out for bacteria, or you'll have a cheap restaurant, guacamole too long at room temperature, intestinal experience... For the "little different" experience, take a dab of Miracle Whip and liquefy it to a creamy, pour-able texture with some hot water, then drizzle the resulting dressing lightly over the top of the hot pasta, like a hot, Mexican, pasta salad with some spicy and sweet flavor. No harm crumbling "queso fresco" over the pasta before drizzling the Miracle Whip dressing if you're okay with the additional fat.)

- Combine the crema (or sour cream), 3 tablespoons of the lime juice, 1/2 teaspoon of the ground cumin and a pinch of salt and pepper in a small bowl. Stir in 2 to 3 tablespoons of the chopped cilantro and set aside.
- Drain the liquid from the tomatoes into a 2-cup measure and add enough chicken broth to equal 1-1/4 cups. Set both the tomatoes and the broth mixture aside.

- Begin by preparing all of the ingredients: Peel and finely dice the carrots, yellow and green onions, mince the garlic, and open the can of diced tomatoes. Measure out all the seasonings into a bowl: the chicken bouillon, cumin, coriander, cayenne pepper, and 3/4 teaspoon cracked pepper (hold off on the salt for now). Dice the cilantro and juice the lime. Now we're ready to start!
- Heat 2 tablespoons olive oil to a large pot that has a lid. Add the carrot and cook for 3-4 minutes. Add in both onions and garlic and cook until the veggies are fork-tender. Next, add in all of the spices. Toast the spices for 1-2 minutes or until fragrant. Stir constantly (or reduce heat as needed) so nothing burns. - Add the remaining 2 tablespoons olive oil to the pot. Reduce heat to medium- low. Break the angel hair pasta in half and add to the pot. Cook the dry noodles while constantly stirring for 3-5 minutes. (I use tongs to flip/stir the noodles since they're still quite long.) Cook until the noodles have turned golden brown and are slightly blistered. Turn off the heat; add in the entire can of diced tomatoes (undrained), cilantro, lime juice, cooked veggies and spices (from step 1), and 6 cups of chicken broth; stir. Turn heat on to medium-high and bring the mixture to a boil. Cover the pot, reduce the heat to a rapid simmer, and cook until the noodles are soft and have soaked up most of the broth. Remove from the heat. Stir in the remaining 2 cups of chicken broth and it's ready to serve!
- While the noodles are cooking, prepare the toppings. Finely shred Monterrey jack and Cheddar cheese. Set out tortilla strips and sour cream. Chop some cherry tomatoes or make a quick pico de gallo. Set out additional lime wedges and/or cilantro. Prepare the steak or chicken topping - see the last two paragraphs in the post for directions.

- Soak the white rice in hot water for 5 minutes. Drain, rinse with cold water and drain again. In a cooking pot, heat the oil over medium heat until hot but not smoking. Add the angel hair and fry for about 2 minutes, stirring constantly. It should be browned but not burnt.
- Incorporate the drained rice, cook for 3 to 4 minutes, stirring occasionally, until the rice achieves a milky white color and it feels and sounds heavier when you move it.
- Add the chopped onion and garlic, stir and cook for another 2 minutes. Pour the water or broth over the rice, add the salt and lime juice, and once it comes to a boil, reduce the heat to low, cover with the lid, and cook for about 20 minutes.
- The rice is ready when the water has been absorbed and the rice is tender and cooked. Turn off the heat and keep it covered for at least 5 minutes. Fluff with a fork and serve.
