MEXICAN PIZZA

Mexican Pizza image

This fabulous and easy Mexican pizza recipe uses a pork, onion, and taco sauce mixture for great taste, and is topped with shredded cheeses.

Provided by Linda Larsen

Categories     Dinner     Entree

Time 55m

Number Of Ingredients 13

1 pound ground pork (or chorizo sausage , raw)
1 onion (chopped)
2 garlic cloves (minced)
1 tablespoon olive oil
1 (16-ounce) bottle taco sauce
1 (8-ounce) can tomato sauce
1 tablespoon chili powder
1/8 teaspoon cayenne pepper
1/4 teaspoon pepper
1 (4-ounce) can green chilies (drained)
2 (13.8-ounce) cans pizza dough (or enough pizza dough for 2 pizzas)
Cooking spray
4 cups Colby-Jack cheese (or Monterey Jack cheese, shredded)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F. Arrange the racks in the oven so they evenly divide the oven into thirds. You'll use both racks, rotating and moving the pizzas around as they cook.
  • In a large skillet, cook the pork with onion and garlic in olive oil over medium heat until the meat is browned, stirring to break up with a fork. Drain if necessary. If you are using chorizo, cook the onions until they are tender and then add the chorizo, cooking for a few minutes until the fat is rendered and the meat is well browned.
  • Add the taco sauce, tomato sauce, chili powder, cayenne pepper, and pepper to the onion mixture. Stir well, and simmer on low heat for 5 minutes to blend flavors.
  • Stir in drained green chiles.
  • Spray 2 cookie sheets with nonstick cooking spray and then spread the pizza crust dough onto the sheets.
  • Bake them for 5 to 8 minutes or until they are just set.
  • Spread the sauce evenly over both of the pizza crusts and top evenly with the shredded cheese.
  • Bake at 400 F for 20 to 25 minutes until cheese is melted, bubbly, and begins to brown. Halfway through the cooking time, swap the cookie sheets so they each have time on the upper and lower baking racks. This will help ensure an even bake on both pizzas. Make sure that the crusts are browned on the bottom and the pizzas have cooked evenly.
  • Slice, serve, and enjoy.

A crust of flour tortillas and a filling of refried beans, shredded rotisserie chicken and salsa. Top it off with a little enchilada sauce and cheese and you got yourself an incredible Mexican Pizza for dinner!

Provided by Jenn

Time 15m

Number Of Ingredients 9

1 16 oz can low-fat refried beans (you may not need the entire can)
2 cups shredded rotisserie chicken

vegetable oil (or cooking spray)
8 flour tortillas (fajita or taco size)
1 10 oz can red enchilada sauce (you will only need about half a can)

Steps:

  • Preheat oven to 350ºF.
  • Warm up beans in a small bowl in the microwave. Combine chicken and salsa in another bowl and warm it up in the microwave.

  • Cut into triangles and serve immediately. Enjoy!

MEXICAN PIZZA

Mexican Pizza image

I found this recipe online at www.mexicanfoodrecipes.org and posting for ZWT. The recipe says to use seasoned ground beef but doesn't give directions/ingredients for the seasoning. I suggest using Recipe #369923 or using a package of taco seasoning. Please feel free to serve this pizza with salsa, guacamole, lettuce or any topping of your choice. This is a recipe for two servings so feel free to double, triple etc. the amounts. This is also a great recipe to use up left-over taco meat.

MEXICAN PIZZA RECIPE

Mexican Pizza Recipe image

This easy Beef Mexican Pizza recipe serves up crispy tortillas, loaded with deliciously seasoned ground beef, refried beans, enchilada sauce and Mexican cheese. Simple and oh so tasty!

Provided by Becky Hardin - The Cookie Rookie

Categories     Main Course

Time 27m

Number Of Ingredients 10

1 lb. Ground Beef ((93% Lean))
1 ounce taco seasoning (click for homemade recipe)
1/4 cup water
1 Tablespoon oil
16 corn tortillas
16 ounces refried beans (click for homemade recipe)
10 ounces red enchilada sauce
4 Roma tomatoes (finely diced)
2 cups shredded Mexican blend cheese
3 green onions (finely chopped)

Steps:

  • Preheat oven to 350F.
  • Heat a medium non stick skillet over medium heat. Add the ground beef and use a wooden spoon to crumble while it cooks. When almost done, add the taco seasoning and water, stirring to combine. Cook for 8-10 minutes or until beef reaches an internal temperature of 160F. Transfer beef to a paper towel lined plate and set aside. Wipe out skillet to clean.
  • Return skillet to medium high heat and add the oil. Cook the tortillas in batches, flipping frequently to avoid burning (I used tongs to flip). Once browned to your liking and crisp, set aside. We like ours extra crispy, but feel free to make them as light or dark as your family likes.

  • Place four tortillas on a baking sheet sprayed with nonstick spray.
  • Spread a thin layer of refried beans onto each tortilla. Top each with 1-2 tablespoons beef.
  • Top each with another tortilla, making layers.
  • On each top layer, add 1 tablespoon enchilada sauce, tomatoes, and sprinkle generously with cheese, Finally, top with green onions to taste.
  • Bake for 6-7 minutes or until cheese is fully melted and bubbly. Cut and serve. Enjoy!

MEXICAN PIZZA (TACO BELL COPYCAT)

Mexican Pizza (Taco Bell Copycat) image

A Taco Bell Copycat made with fresh ingredients and takes less than 30 minutes to make!

Provided by EmilyFabulous

Categories     Appetizer     Main Course

Time 30m

Number Of Ingredients 11

1 can refried pinto beans
3-4 tablespoon milk ((optional))
8 flour tortillas
3-4 tablespoon butter ((or you can use non-stick spray))
2 cups cooked ground beef with taco seasoning ((follow directions on seasoning packet))
3-4 cups shredded cheddar cheese
1 can enchilada sauce
1 can sliced olives
1-2 small tomatoes, diced
3-4 stalks green onions, chopped
sour cream ((optional))

Steps:

  • Preheat the oven to 375°F and prepare baking sheets with tin foil. There are two ways to crisp the tortillas. One is in a skillet with butter, flipping to ensure both sides are brown and crispy. The other is in the oven at 375°F for 3-4 minutes on each side. The skillet method takes more time but the butter makes the tortilla nice and crisp. The oven method is easy but the tortilla can bubble up, and the tortillas burn easily so you have to keep an eye on them.
  • Place the beans in a small saucepan. Add the milk warm over low heat, stirring occasionally. The milk is optional but helps smooth out the beans and makes them easier to spread on the tortillas.
  • Cook the ground beef in a skillet so that it is fully cooked. Drain the grease and add the taco seasoning according to the packet. If your meat is already cooked, microwave it or reheat it in a pan.
  • Take one crispy flour tortilla and spread a layer of beans all over leaving about ½" around the edges. Add ⅓ of the meat on top of the beans.
  • Place another crispy flour tortilla on top of the first layer. Spoon out a thin layer of the enchilada sauce on top of the second tortilla. Sprinkle a layer of cheese and olives on top of the enchilada sauce. Repeat the assembly for the remaining 3 pizzas. Once the pizzas are ready to go, place them in the oven for 8-10 minutes until all the cheese has melted.
  • Remove the pizzas from the oven and sprinkle the top with green onions and tomatoes. Cut into pieces with a pizza cutter or knife and serve with a side of sour cream. Enjoy!
