- If using pizza dough, press pizza dough out on a greased 14″ round pizza pan (or another suitable baking sheet). If using premade pizza crust, place crust on baking sheet.
- Spread refried beans on pizza dough/crust, almost to edge but leaving a 1/2-1″ edge uncovered, all the way around. Top evenly with shredded cheese. Top cheese with cooked chicken and tomato slices.
- Bake in a 425 degree F oven for 12-15 minutes or until cheese is melted and beginning to brown and crust is golden. Remove from oven and sprinkle with cilantro leaves. Cut into slices and serve.

- Prepare taco meat per package directions.
- Warm refried beans.
- Prepare a small amount of oil in pan to 375°F (do not put so much that it will cover the flour tortillas).
- Cook flour tortilla's at 375°F for 30-45 seconds or until just golden brown.
- Drain on paper towels.
- Top on tortilla with a thin layer of refried beans.
- Then top beans with a layer of taco meat.
- Put another tortilla on top of the taco meat.
- Put red sauce on top of the tortilla.
- Put a few diced tomatoes and green chiles on top of red sauce.
- Top with the Mexican blend cheese.
- Finally top with a few chopped green onions.
- Put finished Mexican pizzas on cookie sheet and broil in oven until cheese is melted.
- Cut into fourths and serve.

- First, prepare the dough using my Homemade Gluten-Free Pizza Crust Recipe (click for the recipe) or use a store-bought pizza crust. Check the recipe notes below for the tortilla version.
- Preheat oven to 400 degrees Fahrenheit (205 degrees Celsius) and line a large baking sheet with greased parchment paper.
- Transfer the Refried Beans to a bowl and add a splash of water to make the mixture spreadable. Add all spices (cumin, paprika, garlic powder, cayenne pepper).
- Chop/dice/slice the onion, pepper, and jalapeño.
- Transfer the pizza crust onto the lined baking sheet and add a thick layer of refried beans.
- Put the veggies, jalapeño, and corn on top.

- Make your pizza dough. You could use my recipe for a vegan pizza dough. Or use a store-bought one. Preheat the oven to 350 °F.
- Roll out your pizza dough and place it on a baking tray lined with parchment paper. In a small bowl, combine the pizza sauce with the spices. Spoon the pizza sauce on top and evenly spread it out.
- Now add the toppings. Start by adding the veggie ground meat, then the corn, the bell peppers, the red onion, and the kidney beans.
- Top the pizza with vegan cheese.

- In a skillet over medium heat, brown chorizo. Add salsa and simmer for 5 minutes. Lay pizza crusts on pizza pan or baking sheet covered in foil. Spread refried black beans over top of pizza crusts. Evenly spread chorizo mixture over beans. Cover in cheese and bake for 10 to 12 minutes. Remove from oven and top with lettuce, followed by tomatoes, and then tortilla chips. Place ranch dressing in a resealable plastic bag and snip corner off of bag; pipe over pizzas. Serve hot.
MEXICAN PIZZA

- Gather the ingredients.
- Preheat the oven to 400 F. Arrange the racks in the oven so they evenly divide the oven into thirds. You'll use both racks, rotating and moving the pizzas around as they cook.
- In a large skillet, cook the pork with onion and garlic in olive oil over medium heat until the meat is browned, stirring to break up with a fork. Drain if necessary. If you are using chorizo, cook the onions until they are tender and then add the chorizo, cooking for a few minutes until the fat is rendered and the meat is well browned.
- Add the taco sauce, tomato sauce, chili powder, cayenne pepper, and pepper to the onion mixture. Stir well, and simmer on low heat for 5 minutes to blend flavors.
- Stir in drained green chiles.
- Spray 2 cookie sheets with nonstick cooking spray and then spread the pizza crust dough onto the sheets.
- Bake them for 5 to 8 minutes or until they are just set.
- Spread the sauce evenly over both of the pizza crusts and top evenly with the shredded cheese.
- Bake at 400 F for 20 to 25 minutes until cheese is melted, bubbly, and begins to brown. Halfway through the cooking time, swap the cookie sheets so they each have time on the upper and lower baking racks. This will help ensure an even bake on both pizzas. Make sure that the crusts are browned on the bottom and the pizzas have cooked evenly.

- Preheat oven to 350ºF.
- Warm up beans in a small bowl in the microwave. Combine chicken and salsa in another bowl and warm it up in the microwave.
- To toast the tortillas, either heat oil in a skillet and fry both sides of the tortilla, or spray both sides of tortilla with cooking spray and heat on skillet (my preferred method).
- Lay four of the toasted tortillas on a large baking sheet. Spread with about 2 tablespoons of refried beans on each tortilla. Top with the salsa/chicken mixture, evenly dividing it among the four tortillas. Top with another toasted tortilla.

MEXICAN PIZZA
I found this recipe online at www.mexicanfoodrecipes.org and posting for ZWT. The recipe says to use seasoned ground beef but doesn't give directions/ingredients for the seasoning. I suggest using Recipe #369923 or using a package of taco seasoning. Please feel free to serve this pizza with salsa, guacamole, lettuce or any topping of your choice. This is a recipe for two servings so feel free to double, triple etc. the amounts. This is also a great recipe to use up left-over taco meat.

- Heat a medium non stick skillet over medium heat. Add the ground beef and use a wooden spoon to crumble while it cooks. When almost done, add the taco seasoning and water, stirring to combine. Cook for 8-10 minutes or until beef reaches an internal temperature of 160F. Transfer beef to a paper towel lined plate and set aside. Wipe out skillet to clean.

- Preheat the oven to 375°F and prepare baking sheets with tin foil. There are two ways to crisp the tortillas. One is in a skillet with butter, flipping to ensure both sides are brown and crispy. The other is in the oven at 375°F for 3-4 minutes on each side. The skillet method takes more time but the butter makes the tortilla nice and crisp. The oven method is easy but the tortilla can bubble up, and the tortillas burn easily so you have to keep an eye on them.
- Place the beans in a small saucepan. Add the milk warm over low heat, stirring occasionally. The milk is optional but helps smooth out the beans and makes them easier to spread on the tortillas.
- Cook the ground beef in a skillet so that it is fully cooked. Drain the grease and add the taco seasoning according to the packet. If your meat is already cooked, microwave it or reheat it in a pan.
- Take one crispy flour tortilla and spread a layer of beans all over leaving about ½" around the edges. Add ⅓ of the meat on top of the beans.
- Place another crispy flour tortilla on top of the first layer. Spoon out a thin layer of the enchilada sauce on top of the second tortilla. Sprinkle a layer of cheese and olives on top of the enchilada sauce. Repeat the assembly for the remaining 3 pizzas. Once the pizzas are ready to go, place them in the oven for 8-10 minutes until all the cheese has melted.

- Place meat, onion and garlic in a skillet over medium heat. Cook until beef is evenly browned. Drain off grease. Season the meat with chili powder, cumin, paprika, salt, and pepper.
- Coat 2 pie plates with non-stick cooking spray. Place one tortilla in each pie plate and cover with a layer of refried beans. Spread half of the seasoned meat over each tortilla and then cover with a second tortilla. Bake for 10 minutes in the preheated oven. Remove from the oven and allow to cool slightly.
- Spread half of the salsa over the top tortillas. Top each pizza with half of the cheese, tomatoes, green onions, and olives. Return the pizzas to the oven, bake until the cheese is melted, about 5 to 10 minutes. Remove from the oven and allow to cool slightly. Slice each pizza into 4 pieces and serve.
