MEXICAN CHICKEN SOUP



Mexican Chicken Soup image

4 split (2 whole) chicken breasts, bone in, skin on
Good olive oil
Kosher salt and freshly ground black pepper
2 cups chopped onions (2 onions)
1 cup chopped celery (2 stalks)
2 cups chopped carrots (4 carrots)
4 large cloves garlic, chopped
2 1/2 quarts chicken stock, preferably homemade
1 (28-ounce) can whole tomatoes in puree, crushed
2 to 4 jalapeno peppers, seeded and minced
1 teaspoon ground cumin
1 teaspoon ground coriander seed
1/4 to 1/2 cup chopped fresh cilantro leaves, optional
6 (6-inch) fresh white corn tortillas
For serving: sliced avocado, sour cream, grated Cheddar cheese, and tortilla chips

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken breasts skin side up on a sheet pan. Rub with olive oil, sprinkle with salt and pepper, and roast for 35 to 40 minutes, until done. When the chicken is cool enough to handle, discard the skin and bones, and shred the meat. Cover and set aside.
  • Meanwhile, heat 3 tablespoons of olive oil in a large pot or Dutch oven. Add the onions, celery, and carrots and cook over medium-low heat for 10 minutes, or until the onions start to brown. Add the garlic and cook for 30 seconds. Add the chicken stock, tomatoes with their puree, jalapenos, cumin, coriander, 1 tablespoon salt (depending on the saltiness of the chicken stock), 1 teaspoon pepper, and the cilantro, if using. Cut the tortillas in 1/2, then cut them crosswise into 1/2-inch strips and add to the soup. Bring the soup to a boil, then lower the heat and simmer for 25 minutes. Add the shredded chicken and season to taste. Serve the soup hot topped with sliced avocado, a dollop of sour cream, grated Cheddar cheese, and broken tortilla chips.

2 peppers dried guajillo chilies
2 peppers dried cascabel chiles
2 peppers dried chile de arbol pepper
1 dried California chile
2 (32 ounce) cartons Swanson® Unsalted Chicken Broth
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon unsweetened cocoa powder
1 teaspoon adobo sauce from chipotle peppers
1 pinch salt and pepper to taste
2 small sweetpotato, (5")s sweet potatoes, peeled and diced
2 cups corn kernels, frozen or fresh
2 cups chopped cooked chicken
1 (14 ounce) can diced tomatoes, undrained
1 (14 ounce) can black beans, drained and rinsed

Steps:

  • Place dried guajillo, cascabel, arbol, and California chiles and Swanson® Unsalted Chicken Broth in a large pot. Stir in chili powder, cumin, oregano, cocoa powder, adobo sauce, salt and pepper. Let mixture steep until the chiles soften, about 15 minutes. Discard the chiles.
  • Place pot over medium-high heat. Add diced sweet potatoes. Bring to a simmer; cook at a low simmer until potatoes are tender, 15 to 20 minutes. Add corn, chicken diced tomatoes, and black beans. Bring back to a simmer; cook until piping hot and flavors are blended, 10 to 15 minutes.

One 6 oz. pkg. Farmhouse® Mexican Rice
1 lb. lean ground beef
1/2 cup chopped onion
2 cloves garlic, minced
Two 14.5 oz. cans beef broth
1-3/4 cups water
One 16 oz. can tomatoes, undrained
1/2 teaspoon oregano leaves
1 cup frozen corn
1 cup sliced zucchini
1/2 cup sliced celery
1 cup grated jack or cheddar cheese
2-3 hot chilies, finely chopped*
3 Tablespoons chopped parsley or cilantro
Salt and pepper to taste

Steps:

  • In a Dutch oven, brown ground beef with onion and garlic until beef is no longer pink; drain off fat. Add broth, water, tomatoes and oregano; bring to a boil. Add corn, zucchini, celery, rice and contents of seasoning packet; reduce heat and cover, simmering for 20 minutes. Add salt and pepper to taste. Before serving, sprinkle with cheese, chilies and parsley or cilantro. *For a spicier dish, sauté hot chilies with onion and garlic.

In 2nd grade my teacher Mrs. Means gave the entire class this recipe. I think we ate this in class one day, but I don't recall. It is my favorite vegetable soup recipe to this day. I'm not sure where the soup got the name, but my guess is it was probably from a story we read. My Mom said the original recipe calls for a beef soup bone and beef, but I grew up without it in the recipe. Feel free to throw either or both in to suit your tastebuds or use your own fresh homemade vegetable stock.

1 onion, chopped
1 carrot, diced
1 cup green beans
1 cup corn
1 cup potato, sliced

salt and pepper

Steps:

  • Bring all ingredients to a boil in a large pot and simmer until potato is soft.
