1 can (16 oz.) black beans, rinsed, drained
1 can (16 oz.) kidney beans, rinsed, drained
1 can (16 oz.) navy or great Northern beans, rinsed, drained
6 oz. KRAFT 2% Milk Cheddar Cheese, cubed
1 small red pepper, chopped
1/2 cup TACO BELL® Thick & Chunky Salsa
1/2 cup sliced green onions
1/4 cup chopped cilantro
1 Tbsp. lime juice
12 lettuce leaves

Steps:

  • Toss all ingredients except lettuce in large bowl. Refrigerate several hours or until chilled.
  • Serve on lettuce-lined plates.

4 eggs
2 avocados , peeled and stoned
2 x 400g cans of beans, (we used pinto bean and kidney beans, rinsed and drained
small red onion , finely sliced
large bunch coriander , leaves only, roughly chopped
250g punnet cherry tomato , halved
bottle bought good-quality dressing (we used English Provender Company Lime & Coriander dressing)
1 red chilli , deseeded and finely sliced
½ tsp cumin

Steps:

  • Lower the eggs into boiling water and boil for 6½ mins, then put into a bowl of cold water to cool. Slice the avocados and place in a large bowl with the beans, onion, coriander and tomatoes. Measure 3 tbsp of the dressing into a small bowl, then mix in the chilli and cumin. Once the eggs have cooled but are still warm, peel off the shells and cut into quarters. Toss the salad with the dressing and nestle in the eggs. Serve straight away - delicious with toasted tortillas.

1 (15 ounce) can kidney beans, drained
1 (15 ounce) can cannellini beans, drained and rinsed
1 green bell pepper, chopped
1 red bell pepper, chopped
1 (10 ounce) package frozen corn kernels
1 red onion, chopped
½ cup olive oil
½ cup red wine vinegar
2 tablespoons fresh lime juice
1 tablespoon lemon juice
2 tablespoons white sugar
1 tablespoon salt
1 clove crushed garlic
¼ cup chopped fresh cilantro
½ tablespoon ground cumin
½ tablespoon ground black pepper
1 dash hot pepper sauce
½ teaspoon chili powder

Steps:

  • In a large bowl, combine beans, bell peppers, frozen corn, and red onion.
  • In a small bowl, whisk together olive oil, red wine vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin, and black pepper. Season to taste with hot sauce and chili powder.
  • Pour olive oil dressing over vegetables; mix well. Chill thoroughly, and serve cold.

1/2 cup green onion, sliced

1/4 cup green onion
2 tablespoons chili sauce
2 teaspoons cider vinegar
1 teaspoon onion salt
1/2 teaspoon chili powder
4 drops Tabasco sauce
1 head iceberg lettuce, chopped
1 (14 1/2 ounce) can corn, rinsed & drained
1 (6 ounce) can black olives, sliced, rinsed & drained
1 (14 1/2 ounce) can kidney beans, rinsed & drained
1 (14 1/2 ounce) can black beans, rinsed & drained

Steps:

  • For the dressing: Combine mayo, green onion, chili sauce, cider vinegar, onion salt, chili powder and tabasco in a small bowl. Whisk to combine. Then refrigerate.
  • For the salad: Layer the lettuce, corn, black olives, kidney beans and black beans in a salad bowl.
  • To serve: Add dressing to salad and toss to combine.

1 can (19 oz.) red kidney beans, drained
1 jar (8 oz.) TACO BELL® Taco Sauce
1 can (4.25 oz.) chopped green chiles, drained
2 tsp. chili powder
1 tsp. salt
1 tsp. dried oregano leaves
2 cups milk
1/2 cup creamy rice hot cereal, uncooked
1 cup KRAFT Shredded Sharp Cheddar Cheese

Steps:
