- The A&W Papa Burger: Mix the mayonnaise with the relish to make the "secret sauce". Set aside for now. Preparing the Papa Burger: 1. On waxed paper, form the 1/5 pound beef patty. It should be about 1/4 inch thick and 5 inches in diameter. Freeze at least an hour. 2. Fire up the indoor electric grill, or outdoor barbecue. Follow the manufacturer's instructions for pre-heating. 3. Toast the buns by laying them face down on the grill for 30-60 seconds. (About :30 for outdoor barbecue, :60 for indoor.) 4. Cook the frozen beef patty about 2 minutes per side, (outdoor barbecue) or 3 minutes per side (indoor barbecue grill). Salt and pepper liberally on both sides. 5. Dress your toasted top buns (crown) in the following order: special sauce, pickles, lettuce, cheese 6. Place the cooked beef patty on top of the dressed bun, and add the bottom. (heel) 7. Combine the tempura mix with the spices and liquid to make a batter, using a fork. There will be some small lumps.....don't worry about those. 3. Slice the onion, and separate all of the rings. 4. Dip the individual rings in the batter, and drop into the preheated oil. 5. Deep fry 3-5 minutes until golden brown. Remove to a paper towel lined plate, salt lightly, and serve hot! A&W Chili Dogs Making the Chili Dog Sauce: 1. In a 2 qt. saucepan, brown the ground chuck, breaking into very small pieces. Salt and pepper lightly while cooking. Do not drain the fat. 2. Add the remaining ingredients. Simmer, uncovered, 30-45 minutes until it thickens. Stir occasionally. 3. Allow to cool, cover, and refrigerate until "Dog-Time". You'll be microwaving what you need later. Cooking your A&W Chili Dog 1. Bring a 2 qt. saucepan of water to a rolling boil. 2. Remove the saucepan from the heat, and add the desired number of frankfurters to the water. Cover and let sit about 10 minutes. 3. After the franks are done, microwave the chili dog sauce until steaming. (Only microwave what you need, save the rest) Then microwave each hot dog roll 10 seconds....just enough to warm. 4. Remove the cooked franks with tongs, and place on the microwaved hot dog roll. 5. Add about 3 Tablespoons of your prepared A&W chili dog sauce, and the chopped onion. Grated cheddar cheese is optional.

- Flavour the meat: Put the meat in a mixing bowl, then sprinkle over the chilli powder and a little salt and pepper. Mix well with your hands or use a fork. The mild chilli powder gives the meat added flavour without making it too spicy.
- Shape into burgers: Divide the mixture into 4 equal pieces, then shape with your hands into round burgers about the width of the buns, or pack the mixture into large presentation rings (if you have them) placed on a chopping board. You need to press down on the meat to compact it, then carefully lift off the rings - a bit like making sandcastles.
- Now get cooking: Fry the burgers on a hot griddle or grill them outside on the barbecue for 5 mins on each side, turning them carefully with a metal spatula. Take care as hot fat from the meat may spit a little.
- Top with cheese and toast the buns: If you want to make cheeseburgers, put a slice of cheese on top of the burgers when you turn them over and let it melt while the other side cooks. When they are ready, cut the burger baps in half and warm them in the toaster or on the barbecue - take care that you don't burn them.
- Prepare the toppings: Meanwhile, prepare the toppings of your choice. Separate the lettuce into leaves. Then, using a sharp knife, thinly slice the tomato, cucumber and gherkin on a separate board to the one you prepared the burgers on. Peel and finely chop the red onion.
- Assemble and enjoy: Spread a little mayonnaise or ketchup - or both if you like - onto the toasted buns, then top with your burgers and salads of your choice, followed by the remaining half bun.

- Combine all the ingredients in a large bowl and mix well. Heat a large frying pan and add some oil.
- Fry a small amount of the burger mixture to check the seasoning. Adjust if necessary.

- Make burger seasoning by combining all spices in a bowl. Set aside.
- Divide ground chuck into 6 equal portions and gently from into 1/2 inch thick patties that are wider than the burger buns (as they will shrink). Use your thumb to press an indentation into the center of each patty. Cover and set aside.
- Preheat grill to medium high heat. Just before cooking, sprinkle seasoning over the patties, then place on hot grill, indent-side up. Close grill lid and cook for 3-4 minutes, until the bottom of the burger is seared and juices are accumulating on top of the burger. Flip and cook an additional 3-4 minutes or until the beef reaches 160 degrees F.
- Place cheese on burgers during the last minute of cooking. Remove to a plate and allow to rest for a few minutes before serving in a bun, with toppings.
