Mexi Mac and Cheese image

Mac and cheese made festive with tasty Mexican flavors. An easy meal-in-one that the whole family will love!

Number Of Ingredients 13

1 pound large elbow macaroni
1 tablespoon olive oil
1 cup chopped bell pepper (red, green and/or yellow)
1/2 cup chopped red or white onion
1 (10 ounce) can chopped tomatoes with green chiles (I used Rotel)
1 pound lean ground turkey
1 (1 ounce) packet taco seasoning mix
1 (10 ounce) can red enchilada sauce
2 tablespoons butter
2 tablespoons flour
1 cup milk
2-1/2 cups shredded mexi-blend cheese
salt & pepper to taste

Steps:

  • If baking, preheat oven to 450°F. Spray a 9×13-inch baking dish with non-stick cooking spray and set aside.
  • In a large pot, cook the macaroni to al dente according to package directions and drain. Return to large pot.
  • Heat the olive oil over medium-high heat in a large skillet. Add the chopped bell pepper and onion and cook until onions become translucent. Stir in can of tomatoes with green chiles. Saute for another 3 minutes. Add pepper mixture to pot with cooked macaroni.
  • Add the ground turkey to the hot skillet and break up the meat with a spoon. Cook until meat is cooked all the way through, 4-5 minutes. Drain grease off meat, if necessary, and return to skillet. Add taco seasoning mix and stir until turkey is completely coated in seasoning. Add cooked turkey to pot with cooked macaroni and pepper mixture.
  • Pour enchilada sauce over everything in the pot and stir gently to coat.
  • Add butter to hot skillet. Once butter is melted, whisk in flour until a thick mixture forms. Turn heat to medium low and add milk, whisking constantly until mixture starts to thicken. Add 2 cups cheese and stir until cheese is melted. Season cheese sauce with salt and pepper to taste.
  • Pour cheese sauce over the macaroni mixture in the large pot. Serve immediately or transfer mixture to prepared baking dish. Sprinkle with remaining 1/2 cup shredded cheese. Bake in preheated oven for 10-15 minutes or until cheese is bubbling and starting to brown and crisp on top. Let set for about 5 minutes before serving.

4 tablespoons unsalted butter
1 cup frozen corn kernels, thawed
1 medium onion, cut into 1/4-inch dice
1 red pepper, seeded, cut into 1/4-inch dice
4 cloves garlic, peeled and minced
1 tablespoon plus 1 teaspoon kosher salt
2 teaspoons cumin
2 teaspoons chile powder
1/2 teaspoon cayenne pepper
1/4 all-purpose flour
4 cups milk, cold
2 cups shredded cheddar
1 cup shredded Monterey Jack
1/2 cup scallions, thinly sliced
1 teaspoon freshly ground black pepper
1 pound mini rigatoni, cooked al dente according to package directions
1/2 cup panko breadcrumbs
1/2 cup crumbled cotija cheese, for garnish
1/4 cup cilantro leaves, minced, for garnish
1/4 cup pickled jalapenos, drained, minced, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the butter, corn, onions, red peppers, garlic and 1 teaspoon of salt to a medium saucepot set over medium-high heat. Saute until the onions are translucent, 6 to 8 minutes. Add the cumin, chile powder, cayenne pepper and flour and cook, stirring frequently with a wooden spoon, to make a roux, 3 to 4 minutes. Pour in the cold milk in a steady stream, stirring vigorously until the mixture is smooth. Cook over medium heat, stirring often, until starting to thicken, 8 to 10 minutes. Reduce the heat to medium-low and stir in the cheddar and Monterey Jack. Cook until the sauce is smooth and creamy, 4 to 5 minutes. Add the scallions, pepper and rigatoni and mix well to combine.
  • Pour the into a 9-by-13-inch glass baking dish. Sprinkle the panko evenly over the top and cover with foil. Bake for 20 minutes, then uncover and bake for another 10 to 15 minutes, or until the crust is golden brown and the cheese is bubbling. Remove to a cooling rack and let rest for 8 to 10 minutes.
  • Garnish with the cotija, jalapeno and cilantro. Serve immediately.

1 (16 ounce) package elbow macaroni
2 pounds lean ground beef
½ cup chopped onion
2 (8 ounce) cans tomato sauce
1 (14.5 ounce) can diced tomatoes
1 (14 ounce) can whole kernel corn, drained
1 (15 ounce) can kidney beans, rinsed and drained
1 (1.25 ounce) package taco seasoning mix
1 (1.25 ounce) package chili seasoning mix
1 (10.75 ounce) can condensed cheddar cheese soup
1 (10.75 ounce) can milk
1 cup shredded Cheddar cheese
½ cup sour cream
1 ½ teaspoons garlic powder
½ teaspoon salt
½ teaspoon black pepper
1 cup shredded Cheddar cheese
1 cup crushed tortilla chips
½ cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • In a large skillet over medium heat, cook and stir the ground beef with onion until the meat is browned, about 10 minutes. Break the meat up into crumbles as it cooks; drain excess grease. Mix in the tomato sauce, diced tomatoes, corn, kidney beans, taco seasoning, and chili seasoning; bring to a boil, reduce heat to a simmer, and cook, stirring occasionally, for about 20 minutes.
  • Whisk the Cheddar cheese soup and milk in a saucepan until smooth, and bring to a simmer over medium-low heat. Whisk in 1 cup of shredded Cheddar cheese, 1/2 cup of sour cream, and garlic powder; season to taste with salt and black pepper.
  • Arrange the cooked macaroni into the bottom of a 10x15-inch baking dish, and mix with the soup mixture. Pour the ground beef chili over the macaroni, and sprinkle with 1 more cup shredded Cheddar cheese and crushed tortilla chips.
  • Bake in the preheated oven until the casserole is hot and bubbling and the cheese topping has melted, 20 to 30 minutes. Serve topped with dollops of sour cream.

Sausage meat can be used in place of the ground beef, and any small pasta can be substituted for the macaroni. If you like more chili flavor then add in a couple tablespoons of chili powder. I have even added in some red kidney beans and sliced green olives to this casserole, but that is optional. This casserole can be completely prepared up to 24 hours in advance, cover the casserole dish tightly with plastic wrap, then refrigerate until ready to bake, increase the cooking time slightly. 1 lb ground beef
2 tablespoons minced fresh garlic
1 onion, chopped
1 green bell pepper, chopped
1 -2 teaspoon dried chili pepper flakes (optional or to taste, add in if you like spicy!)
2 (1 ounce) packages taco seasoning mix (you can use 1 package if desired, or use a single or double recipe of my Kittencal's Taco Seasoning Mix)
1/3 cup grated parmesan cheese (optional)
8 slices bacon (cooked till very crisp and chopped)
1 (8 ounce) can tomato sauce
2 (10 ounce) cans tomato soup
1 -2 tablespoon brown sugar (optional)
seasoning salt (can use white salt)
pepper
3 cups cooked macaroni (can use less, cook the macaroni to JUST firm-tender)
4 cups shredded tex-mex cheese, divided (or to taste or cheddar cheese or mozzarella cheese)

Steps:

  • In a large skillet brown the beef with dried chili flakes, onion, garlic and the green pepper until the beef is no longer pink (about 10-12 minutes, make sure the beef is well browned) drain any fat.
  • Add in taco seasoning mix with Parmesan cheese; mix to combine and cook 1 minute.
  • Add in the cooked chopped bacon, tomato sauce, 2 cans tomato soup and brown sugar (if using); simmer for 30-40 minutes, stirring occasionally.
  • Season with seasoning salt and pepper and mix in 2 cups shredded Tex-Mex or cheddar cheese.
  • Add in the cooked macaroni pasta; mix to combine.
  • Set oven to 350 degrees F.
  • Grease a 13 x 9-inch casserole dish (or larger).
  • Transfer the mixture to the casserole dish.
  • Sprinkle with grated Parmesan cheese, then about 2 cups (or more)grated Tex-Mex or cheddar cheese.
  • Bake uncovered for about 20 minutes, or until bubbly and the cheese has melted.
  • Delicious!

1 pkg. (12 oz.) VELVEETA Shells & Cheese Dinner
1 large tomato, chopped
1 can (4.5 oz.) chopped green chiles
1 can (15.5 oz) pinto beans, drained and rinsed
1 cup KRAFT Mexican Style Finely Shredded Four Cheese
2 egg whites or 1/3 cup egg substitute
1 cup TACO BELL® Thick & Chunky Salsa, divided
2 Tbsp. chopped fresh cilantro
2 Tbsp. chopped green onions

Steps:

  • Brown ground beef and add taco seasoning mix, following package directions. Set aside.
  • Prepare dinner as directed on package; mix in egg whites or egg substitute with the prepared shells & cheese. Set aside.
  • Preheat oven to 350 degrees.
  • Spray a 9x9-in square baking pan with cooking spray. Put a third of the prepared shells and cheese on bottom of pan, then sprinkle ¼ cup cheese. Top with all of the ground beef mixture. Then add layers of 4 Tbsp salsa, ½ the chopped chiles, a third of the shells and cheese, all pinto beans, ¼ cup cheese, remaining chopped green chiles and final third of shells and cheese.
