2 cans (4 ounces each) chopped green chilies
2 eggs, lightly beaten
1/3 cup salsa
1/4 cup finely chopped onion
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon pepper
2 pounds ground beef
3/4 cup finely crushed corn chips
8 flour tortillas (10 inches), warmed
TOPPING:
Chopped tomatoes
Chopped ripe olives
Shredded cheddar cheese
Shredded lettuce
Salsa
Sour cream

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble beef and chips over mixture; mix well. Shape into eight patties. , Grill, covered, over medium heat or broil 4 in. from the heat for 6-9 minutes on each side or until no longer pink. Wrap burgers and desired toppings in tortillas.

Mexi-Mac Burgers and Waffle Fries with Taco Sauce image

I call my version of a Big Mac a "Big S'mack." This is my "Spicy Mexi-Mac." The patties are half beef, half chorizo. It's burger and fries with a south of the border twist. The secret to this flavorful burger is the mix of chorizo and ground beef, and just a few spices turn these frozen waffle fries into a zesty, spiced side.

1 bag frozen waffle cut fries
Salt and pepper
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon ground coriander
1/2 teaspoon granulated garlic
3 to 4 scallions
1 cup sour cream
1/2 cup ketchup, Sir Kensington's preferred brand
1/2 cup drained pickled jalapeno peppers, mild, hot or a mix
3 cloves garlic
1 small white onion
1/2 pound Mexican beef chorizo or Mexican pork chorizo
1 pound ground beef
Salt and pepper
About 1 tablespoon Worcestershire, Lea and Perrins preferred brand
1 tablespoon neutral oil
Gem romaine or iceberg lettuce
4 slices yellow cheddar or American cheese
4 slices Pepper Jack cheese
4 sesame seed rolls, Big Marty's preferred brand
Sliced pickle chips, spicy Italian by Grillo's preferred brand
1 bottle mild or hot taco sauce
Mezcal Sour, for serving, recipe follows
Ice
1 1/2 ounces mezcal
1 lemon, juiced
1 lime, juiced
2 tablespoons simple syrup
Seltzer, for topping

Steps:

  • Preheat oven to 450 degrees F with rack above center.
  • Gather your ingredients.
  • For the waffle fries: Line a baking sheet with parchment, scatter the waffle fries and place in oven to cook 25 minutes. Give the pan a shake or the fries a flip once, midway. In a small ramekin, combine about 1 teaspoon salt, 1/2 teaspoon pepper, the cumin, chili powder, coriander and granulated garlic. Thinly slice the scallions. To serve, toss fries with spices.
  • For the special sauce: In a small bowl, combine sour cream and ketchup. Remove the jalapenos from brine, place on cutting board and add a small splash of brine to sauce. Finely chop peppers and stir into sauce.
  • For the burgers: Preheat large cast-iron skillet or griddle over medium-high heat.
  • Peel and grate garlic and a quarter of the onion -- save the remaining onion for topping. Cut casing off from fresh chorizo and place in bowl. Add beef and season with salt, pepper, grated garlic and onion and Worcestershire sauce. Combine the sausage and beef. Score the meat into 4 sections. Form 4 meat patties thinner at center than the edges for even cooking. Drizzle the patties with oil.
  • Chop the remaining onion and chop some lettuce, about 2 cups.
  • Crisp the patties and cook 4 to 5 minutes. Flip the patties and top with a slice of both cheeses and cook another 2 to 3 minutes.
  • To build burgers: bun bottom, onions, pickles, lettuce, patties, special sauce, bun top. Pile the fries alongside and top with taco sauce and reserved scallions.
  • Add ice, mezcal, juices and simple syrup to a cocktail shaker. Shake or stir then drain into a highball full of ice. Top with a splash of seltzer.

1 chicken breast
1 tsp chipotle paste
1 lime, juiced
1-2 slices cheese
1 brioche bun, split
½ avocado
2 cherry tomatoes, chopped
3-4 pickled jalapeño slices, chopped
½ small garlic clove, finely grated

Steps:

  • Put the chicken breast between two pieces of cling film and bash with a rolling pin or pan to about 1cm thick. Mix the chipotle paste with half the lime juice and spread over the chicken.
  • Heat a griddle pan over a high heat. Once hot, cook the chicken for 3 mins each side until cooked through, adding the cheese for the final 2 mins of cooking. Add the bun, cut-side down, to the griddle pan to toast lightly. Season the chicken.
  • Meanwhile, mash the avocado with the remaining lime juice. Stir in the cherry tomatoes, jalapeño and garlic, and season with a little salt. Spread over the base of the bun, then add the chicken followed by the top of the bun.

1 1/4 lb lean ground beef (I use 90%)
1 large egg
1/4 cup cornmeal
1/2 cup chunky (not runny salsa)
1/4 cup grated sharp cheddar cheese
3 TB canned diced green chilies (drained)
1/4 cup chopped fresh cilantro
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp cumin
1/2 tsp table salt
1/4 tsp freshly ground black pepper
Toppings: Fresh guacamole

Steps:

  • In a large bowl, using wooden spatula, mix all ingredients together (take care not to over handle.)

1/2 cup bread crumbs
1 egg

cracked black pepper
4-6 slices of cheese
4-6 fresh (hamburger buns)
2 large (ripe avocados)
juice of 1/2 lemon

1 large red onion (peeled and finely chopped)
1/2 cup fresh parsley (finely chopped)
1/2 red chilli (finely chopped (remove the seeds if you don't like it hot))
salt & pepper to taste

Steps:

  • Combine all the ingredients in a large bowl and mix well. Heat a large frying pan and add some oil.
  • Fry a small amount of the burger mixture to check the seasoning. Adjust if necessary.
  • Form the mince mixture into burgers and fry for +- 4 minutes per side until browned and cooked through. When you've flipped the burger the first time, place a slice of cheese on the patty and allow to melt while the patty is cooking.
  • Serve on a fresh bread roll with home-made salsa and guacamole.
  • Remove the avocado flesh from the skin and mash with the lemon juice, salt & pepper.
  • Set aside until you're ready to use it.
  • Combine all the ingredients and mix through.
  • Set aside until you're ready to use it.

¾ cup shredded Mexican cheese blend
½ green poblano pepper, diced
1 tablespoon seasoned salt (such as Santa Maria-style)

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix together ground turkey, shredded cheese, poblano pepper, seasoned salt, and granulated onion in a bowl until thoroughly combined. Divide mixture into 4 portions. Roll each portion into a ball and press into a burger shape.

I normally use homemade Mexican chorizo and home ground venison for this, but store-bought ground beef, bison, turkey or pork will work, as will store-bought chorizo.

3 tablespoons vegetable oil
2 large onions, minced
4 to 8 roasted green chiles, (Hatch, Anaheim or poblano)
4 burger buns
4 slices pepper jack cheese
Lettuce leaves
1 pound ground venison, (or beef, turkey, bison, etc.)
1/3 pound chorizo, (only 1/4 pound if it's the stuff in a tube)
Salt
1 tablespoon vegetable oil
2 cups mayonnaise
1/2 cup chopped cilantro
2 roasted green chiles
Salt to taste

Steps:

  • Start by heating the 3 tablespoons of vegetable oil in a pan over medium-high heat. Add the minced onion and let this cook, stirring often, until the onion has nicely browned. Turn off the heat and set aside when it's ready.
  • If you are starting from fresh peppers, you will need to roast, peel and deseed them. This is a good tutorial on that, or you can use canned or pre-frozen roasted chiles.
  • Add all the ingredients for the mayo and puree. Add salt to taste. You will have some left over, so keep it in a container in the fridge, where it will last a couple weeks.
  • Mix the ground meats together and knead well so they combine cohesively. Form into balls and slightly flatten them. If you are grilling, just form normal patties and grill. What follows is for a smashburger.
  • Get a comal or griddle or large frying pan hot. Add the 1 tablespoon of vegetable oil. Set one of the balls of meat in the center of the oil, and use it to spread the oil around a little. Slick the underside of a bacon press or other pan with some oil. Press the meat into a patty of about 1/2 inch thick, more or less. Hold the pressure for about 30 seconds, then slide the bacon press off the patty to the side. Don't lift straight up or the patty will break. Salt the patty as it cooks.
  • Let the meat cook for about 90 seconds more, then flip. Salt the other side. Add some onions to the middle of the patty and top with a slice of cheese. I like to put a metal bowl over the burger now to melt the cheese. Let this sit for another minute to 2 minutes, depending on how well cooked you like your burgers. While this is happening, lay the lettuce leaves on your buns and top with a little of the mayo.
  • To build the burger, set the patty on the bun, then top with some of the roasted chiles and some more mayo. Serve at once. You can also layer like this: patty, onions, green chiles, then cheese. The greenery always touches the bun, and the mayo or other sauce goes on between lettuce and burger. °
