BIG OL' MESS (SMOKED SAUSAGE IN SPICY SWEET SAUCE)
This is a grilling recipe, and one that easily transfers to the campfire when camping. You can make it up ahead of time, put it into a cooler of ice and skip the mess at the campsite. A great dish from Marlboro.

Steps:
- Make an aluminum foil bag. Use 2 12" x 18" sheets of heavy-duty foil (or double regular foil) and, (after the ingredients are in the bottom half), crimp the top half on.
- Put the sausage, green pepper and onions in the bottom half of the foil bag.
- Mix the Tabasco up with the sweet and sour sauce and pour it over the sausage mix. Seal the foil bag with the top half. Make sure it is "leak-proof".
- Place on the grill (gas or charcoal) and cook for a total of 45 minutes, turning after each 15 minutes.
- You can slit the bag open when done and serve from it at the campsite.
- If you are cooking this in the hot coals of a campfire, reduce the total cooking time by about 15 minutes and turn every 5 minutes.

MAMA'S BARBECUE SAUCE
There has seldom been a time in my life when a mason jar of this sauce wasn't in a corner of my mother or grandmother's refrigerator. The truth of the matter is, once you have had homemade you will go off the store-bought kind for good.
Yield makes about 6 1/2 cups

Steps:
- In a saucepan, melt the butter over medium heat; add the onions and simmer until soft and melted, 5 to 7 minutes. Add the ketchup, vinegar, Worcestershire sauce, mustard, brown sugar, lemon juice, and pepper.
- Bring to a boil, decrease the heat to low, and simmer until the flavors have smoothed and mellowed, at least 10 and up to 30 minutes. Taste and adjust for seasoning with salt and pepper. Store in an airtight container in the refrigerator. It will last for months.

- 1. Place sausage, peppers and onion in foil bag.
- 2. In a small bowl, mix the Tabasco and sweet & sour sauce and pour over mixture in foil bag.
- 3. Fold the edge tightly to seal.
- 4. Place the foil bag on the grill and cook for 45 minutes. Turn every 15 minutes to ensure even cooking.
- 5. Slit open and serve out of the bag.
MOM'S MEXICAN MESS
It may look a mess, but it's a very useful mess of food. You can eat this as is, spooned over cornbread and topped with olives and sour cream. Or spoon it over a pile of tortilla chips with the same toppings and eat like nachos. You may serve in a bowl as a dip or spoon onto flour tortilllas and roll for a burrito. - Brown the beef in a large skillet over medium heat; add the chopped onion, green pepper and garlic. Cook until the onion is transparent; drain.
- Add the tomatoes and chilies, the taco seasoning mix and velveeta cheese. Continue cooking until the cheese is melted.
- Stir well. Serve as desired, using suggestions above or other ideas.

MESS O' MAMA'S BARBECUE
This recipe is sooooo good and surprisingly easy to do. You can do these wonderful ribs right in the oven and people just rave about them. The sauce for this recipe is very easy to make and you can use it over pork chops, shoulder, or most any other pork cut and it is absolutely delicious. I rarely buy bottled sauce anymore. I hope you enjoy this recipe!

- Preheat oven to 350 degrees. Line a large roasting pan with enough foil to wrap ribs. Place ribs in foil and generously sprinkle with salt and pepper on both side. Wrap tightly in foil and bake for about for about 30 minutes, then reduce heat to 275 and bake for 5 to 6 hours.
- Remove ribs from oven and turn back foil. If ribs have an excessive amount of broth, pour off excess. Brush generously with homemade barbecue sauce (instructions to follow) and return to oven and broil on high for about 5 minutes or until ribs are well browned.
- HOMEMADE BARBECUE SAUCE: In a medium saucepan, whisk all ingredients together until sugar is dissolved. Heat to boiling and then reduce heat to medium and cook until reduced by about one third. Serve over ribs, roasts, chops or use as a dip for chicken tenders or nuggets. Makes about 2 cups of barbecue sauce.
